This recipe was from our great-grandmother. Always a family favorite and a holiday must. Thin but flavorful.

1 cup white sugar
1 ½ tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 pinch salt
1 egg, beaten
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 ½ cups milk
1 (10 inch) unbaked pie crust

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • In a large bowl, combine the sugar, flour, cinnamon and salt. Add the beaten egg, butter, and vanilla. Mix well and add the milk.
  • Pour mixture into an unbaked 10 inch pie crust (glass pie plate is best).
  • Bake at 400 degrees for 15 minutes, then reduce heat to 350 degrees F (175 degrees C) and bake for an additional 45 minutes. Let cool and serve. Refrigerate any leftovers.

These rolls stay very moist due to the sour cream. It is also a good way to use up that last cup of sour cream.

1 package active dry yeast
1/2 cup water
1 teaspoon sugar
3 cups flour (add more or less to make a soft dough)
1 cup sour cream
1 teaspoon vanilla
3 tablespoons sugar
1/4 teaspoon baking soda
2 tablespoons butter, melted
1 tablespoon cinnamon
1/2 cup brown sugar

Steps:

  • Mix sugar and water together.
  • Sprinkle with yeast.
  • Let stand 10-15 minutes or until dissolved.
  • Add flour, salt, sour cream, vanilla, and 3 tablespoons sugar.
  • Make into soft dough.
  • Roll out on floured surface, to within 3/8 to 1/2 inch thick.
  • Brush dough with melted butter.
  • Sprinkle with cinnamon and sugar (that has been stirred together).
  • Roll up, jelly roll fashion, cut into 12 slices.
  • Place in greased 9x13 pan.
  • Let rise until doubled.
  • Bake 350 degrees until lightly browned.
  • Ice while warm with 3 tablespoons evaporated milk, 1/4 tsp vanilla, 1 c icing sugar, that has been stirred together well.

This is a favorite with all the men in our family. This was my great grand-mothers recipe that she made often. Simple to make - when cut you will see 3 different layer colors. *Note - due to several reviews I am updating to strongly suggest the following: You need to use at least a 9" deep dish pan for this recipe. A normal 9" will not work. This recipe does not set up if you halve it. The batter is very thin.

2 tablespoons ground cinnamon
2 cups sugar
4 eggs
2 tablespoons butter
2 tablespoons flour
2 cups water
1 pastry dough, for single crust pie (either store-bought or your own recipe)

Steps:

  • Preheat oven to 375°F.
  • Mix first six ingredients together with wire whisk- batter will be slightly lumpy.
  • The batter is very thin.
  • Pour into unbaked 10" or 11" pie crust. If you do use a 9" make sure it is a deep dish. This fills the shell completely and this is normal.
  • Bake approximately 45 minutes or until set. If you see that it is not setting up properly, cover crust with foil or crust protector and bake an additional 10-15 minutes until set.
  • Let cool before cutting.

I got this recipe from All About Apples.com (http://www.allaboutapples.com/cooking/miscellaneous/000186.htm) I looked it up when we had a bumper crop of apples in the backyard last year. I'm posting it now so I can refer to it in my mini apple pie recipe! This jam is also fabulous in plain or vanilla yogurt for your own fruit on the bottom treat!

4 1/2 cups granulated sugar
1 cup light brown sugar, firmly packed
1 lb tart green apple, such as Granny Smith
1 cup water
1/3 cup lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (1 3/4 ounce) box dry pectin

Steps:

  • Wash 5 or 6 half-pint jars and fill with hot water until needed. Prepare lids as manufacturer directs.
  • Measure sugars into a medium bowl and set aside.
  • Peel, core and finely chop enough apples to measure 2 cups. Place in large saucepan with water, lemon juice, cinnamon and nutmeg. Stir in pectin.
  • Place pan over high heat and stir until it comes to a full boil. Boil hard for 1 minute, stirring constantly. Remove from heat and immediately stir in sugars.
  • Return to full rolling boil and boil hard for 1 minute more, stirring constantly. Remove from heat. Skim foam from surface and stir jam for about 5 minutes to prevent fruit from floating.
  • Ladle hot jam into 1 hot jar at a time, leaving 1/4-inch head space. Wipe jar rim with a clean, damp cloth. Attach lid. Fill and close remaining jars. Process in a boiling-water canner for 10 minutes (15 minutes at 1,000 to 6,000 feet; 20 minutes above 6,000 feet).

Steps:

  • Combine topping ingredients until crumbly. Set aside.
  • Combine dry cake ingredients. Add wet cake ingredients. Stir together mixing well.
  • Pour cake batter into greased 8 or 9 inch square pan. Sprinkle topping mixture over top.
  • Bake 25 minutes at 375 degrees or until cake tests done. Cut and serve. Best warm.

Pastry for a double-crust pie (9 inches)
6 to 7 cups thinly sliced peeled tart apples (about 2-1/2 pounds)
1 tablespoon lemon juice
1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
Dash ground nutmeg
2 tablespoons butter
2% milk
Additional sugar

Steps:

  • Line a 9-in. pie plate with bottom crust; trim crust even with edge of plate. Set aside. , In a large bowl, toss apples with lemon juice. Combine the sugar, flour, cinnamon and nutmeg. Arrange half of the apples in pastry shell; sprinkle with half of the sugar mixture. Repeat layers. Dot with butter. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry. Brush with milk and sprinkle with additional sugar. , Cover edges loosely with foil. Bake at 425° for 20 minutes. Remove foil; bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Serve warm if desired or cool on a wire rack.

This is one of my Grandmothers pies that she made for us when we were very young. She would use all of her leftovers to make this pie. It was always a treat to have this pie. It is very simple to make and you can use either a graham cracker crust or a butter crust. Make sure you use only "WHOLE MILK" for this pie. I think this Cinnamon pie is one of My grandmother's experiments, But this is the one dessert I remember watching her make as a young child in her kitchen. I never forgot the taste. My cousin Matt asked me If I was going to make a Cinnamon Pie for the Family Reunion. I actually made 3 Cinnamon pies,1 pie just for Matt and the rest for everyone else. They went faster then the rest of the desserts.

1 (9 inch) unbaked pie shells
2 1/2 cups whole milk
1/2 cup sugar
1/2 cup flour
2 tablespoons cinnamon
2 tablespoons butter, melted

Steps:

  • Scald milk, do not boil.
  • Mix together the cinnamon, sugar, flour & melted butter.
  • Then very slowly add only 2/3 of the milk into the mixture while you are constantly stirring with a whisk.
  • Do this until the mixture thickens.
  • Filling will appear a little watery but it will thicken up.
  • Then slowly pour in the rest of the milk.
  • Keep stirring mixture then slowly pour into the pie shell.
  • Bake @ 375 degrees F for 40-45 minutes or until crust is done.
  • Set aside to cool before cutting in order for the pie to firm up.
  • Note: You can also use a grahamn cracker pie crust instead of a regular pie crust.
