CABBAGE BURGERS

Cabbage Burgers image

This is a recipe created by Russian German immigrants. It is very popular in the Nebraska, South Dakota region where I am from. Cabbage and ground beef are encased in a neat little bread package.

Provided by AARONNE2004

Categories     Main Dish Recipes     Sandwich Recipes     Beef

Time 21m

Yield 18

Number Of Ingredients 8

3 (1 pound) loaves frozen bread dough, thawed
5 pounds ground beef
¼ cup water
1 large head cabbage, chopped
1 large onion, chopped
2 cloves garlic, chopped
salt and freshly ground black pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Divide each loaf of frozen bread dough into 6 pieces, and roll into balls. Set aside.
  • Crumble the ground beef into a large pot over medium heat. Cook and stir until evenly browned. Drain off grease. Add the water, cabbage, onion, and garlic. Cook over medium-low heat, stirring as needed, until the cabbage is soft. Season with salt and pepper to taste. I like to use more pepper than salt. Drain off any excess liquids, and set aside.
  • On a lightly floured surface, roll the dough balls into 5 inch (approximate) squares. Place about 3/4 cup of the cabbage burger into the center, fold the dough over, and pinch to seal. Place on a baking sheet with the seam side down.
  • Bake for 15 to 18 minutes in the preheated oven, or until golden brown. Remove from the oven, and brush with melted butter. Serve hot.

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 9

2 tablespoons butter
1 yellow onion, sliced with the grain
1/2 head large or 1 small red cabbage, quartered, thinly sliced (core removed)
1 tart apple, peeled and grated
1 tablespoon brown sugar
1/4 cup red wine
1/4 cup apple cider vinegar, plus a splash
1/4 cup water
Salt and freshly ground pepper

Steps:

  • In a medium pot or Dutch oven, cook the onions in the butter over medium heat until softened, about 5 minutes. Add the cabbage and cook, stirring, for a few minutes. Add the apple, brown sugar, wine, vinegar, and water, and bring up to a simmer, stirring. Cover and braise for 30 minutes, stirring once and checking on the texture. Cook a little less for a firmer cabbage; a little more for softer cabbage.
  • Add a small splash of cider vinegar just before serving.

GRANDMA'S CABBAGE BURGERS!

Grandma's Cabbage Burgers! image

Imagine soft buttery yeast rolls stuffed with savory cabbage and beef. That's what these cabbage burgers are. The bread is sweet and fluffy. Perfect on its own. We opted to use ground beef, but you can use any type of meat you like. The beef is browned with onion and garlic so it's very flavorful. Adding cabbage and letting it...

Time 2h35m

Number Of Ingredients 19

FILLING
6 lb hamburger (I use deer or elk)
salt and pepper, to taste
garlic salt, to taste
5 Tbsp minced garlic
2 large onions
4 medium cabbage heads
5 loaves of bread dough
I have one person try these that stated they added cubes of potatoes to the filling as well!
BREAD DOUGH
1 c water, warm
1 Tbsp active dry yeast
1 Tbsp sugar
1/4 c sugar
1/3 c powdered milk
1 tsp salt
1 large egg
1/4 c oil or butter (melted)
3 c flour

Steps:

  • 1. I use my bread machines to make the bread. Add 1 Tbsp yeast and 1 Tbsp sugar to 1 cup warm water and mix until dissolved. Place in the bread machine.
  • 2. Add beaten egg and butter.
  • 3. Add all of the dry ingredients.
  • 4. Set the bread maker to the dough setting and start the dough process. I have it set up so when I take one batch of bread dough out I start the next loaf right away. Then by the time the cabbage burgers come out of the oven and cool I can be working on the next batch.
  • 5. While dough in the bread machine, cook the ground meat, onions, garlic, garlic salt, salt, and pepper. Drain the meat and set aside.
  • 6. While you are browning the meat you should chop up the cabbage. I like medium-sized chunks of cabbage.
  • 7. Add cabbage to the meat mixture and check seasonings to taste. Add about a half cup of water.
  • 8. Let simmer on low until the cabbage is tender.
  • 9. As soon as everything is ready to go, roll out dough on a floured surface. Cut dough into 12 squares large enough for a heaping 1/2 cup of the cabbage mixture.
  • 10. Place 1/2 cup of filling in the center of one square of dough.
  • 11. Fold up the corners and "just a pinch" to seal them.
  • 12. Place them on a large cookie sheet. Bake at 350 degrees for 30 to 35 minutes, till nice and golden brown.
  • 13. Lightly brush tops of rolls with butter.
  • 14. Serve right from the oven and freeze the rest if there is any. Enjoy!!!
  • 15. You can cut this down. I only do the majority of my baking in the winter so I do it this way and freeze them.

Hearty and heartwarming, these traditional cabbage rolls are nothing short of delicious. Toasted rye bread and polenta make lovely accompaniments.

Crumble beef over mixture and mix well. Place 1/3 cup meat mixture on a cabbage leaf; overlap cut ends of leaf. Fold in sides. Beginning from the cut end, roll up. Repeat with remaining cabbage leaves and filling., Combine the sauerkraut, tomatoes and bacon. Spoon half into a 6-qt. slow cooker. Arrange six cabbage rolls, seam side down, over sauerkraut mixture. Top with remaining sauerkraut mixture and rolls. Add broth to slow cooker. Cover and cook on low for 6-8 hours or until a thermometer inserted in rolls reads 160°.

Number Of Ingredients 11

1 tablespoon butter
½ head cabbage, chopped
1 cup chicken broth
¾ cup heavy whipping cream
1 teaspoon salt, or to taste
1 teaspoon ground black pepper, or to taste
1 pound ground beef
1 onion, chopped

Cook until slightly reduced, about 10 minutes more. Stir in the cream, and season with salt and pepper. Keep the cabbage hot over low heat while preparing the ground beef.
  • Heat a Dutch oven or large skillet over medium-high heat and stir in the ground beef. Cook and stir until the beef is crumbly and no longer pink. Add the onion, and cook until tender, about 5 minutes. Stir in the smoked paprika and mustard. Stir in the cabbage mixture and egg noodles; season to taste with salt and pepper. Cover, and cook over low heat until the noodles are tender, about 10 minutes. Pour in water as needed so the noodles do not become dry.

cabbage soup with hamburger - grandma's recipe 2021-12-28 · When I become a child, my grandmother used to make hamburger soup, handiest she known as it “terrible man’s soup.” I wager this pot of simmering goodness were given it’s moniker due to the fact hamburger is a great deal less expensive to shop for than different cuts of red meat like stew meat.
