Steps:
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, vanilla and bananas. Combine the flour, baking powder, salt, baking soda, cinnamon, cloves and nutmeg; add to the creamed mixture just until combined. , Fill paper-lined muffin cups two-thirds full. Bake at 375° for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.

BANANA CUPCAKES WITH CREAM CHEESE FROSTING

- Preheat the oven to 350°F. Line two muffins pans with paper cups.
- In a small bowl, combine the mashed bananas with the lemon juice. Set aside.
- In a separate large bowl, whisk together the flour, baking soda and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes, then beat in the eggs one at a time, beating between each addition.
- Beat in the vanilla extract.
- Beat in the flour mixture alternately with the buttermilk.
- Fold in the mashed bananas then portion out the batter into the muffin cups so that they are 3/4 full. (This recipe yields about 30 cupcakes.)
- Bake the cupcakes for 18 to 22 minutes until a toothpick inserted comes out clean.
- Remove the cupcakes from the oven and set them aside to cool while you make the frosting.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese until smooth.
- Add the butter and beat until smooth, scraping down the sides as needed.
- Sift the confectioners' sugar into the bowl, then add the vanilla extract and beat until light and fluffy, about 2 minutes.
- Slather the frosting atop the completely cooled cupcakes and top with dried banana chips (optional). (See Kelly's Note.)
- If you prefer to pipe the frosting, chill it in the fridge for at least 20 minutes before transferring it to a piping bag or sealed plastic bag fitted with your choice of piping tip.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 10 inch Bundt pan with non-stick cooking spray.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the sliced bananas, sour cream and baking soda. Beat in the flour. Pour batter into prepared pan.
- Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

- Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
- Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
- Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
- Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
- Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
- While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
- Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
- Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
- Spread frosting on cooled cookies.

- Preheat oven to 350 degrees.
- Grease well a 9 by 5 by 3 inch loaf pan.
- Sift flour, baking powder, soda, and salt.
- In large bowl with electrix mixer at high speed, beat butter, granulated sugar, eggs, and vanilla, occasionally scraping side of bowl with scraper, until light and fluffy- about 3 minutes.
- In small bowl, combine banana and buttermilk.
- At low speed, beat in flour mixture (in fourths) alternately with banana mixture in 3rds- about 1 minute.
- Stir in dates and nuts.
- Bake 1 hour and 10 or 15 minutes.
- Cool on rack 15 minutes in pan, then turn out on rack until cool.
- Dust with confectioner's sugar.

- 1. Preheat oven to 350 degrees; grease and flour a 9 x 11 inch cake pan.
- 2. Cream together butter and sugar.
- 3. Add eggs, one at a time, mixing after each egg.
- 4. Sift together flour, nutmeg OR mace, and salt. Add to wet mixture and mix well.
- 5. Dissolve baking soda in sour milk. (You can add a 1/4 teaspoon of white vinegar to the milk to sour it if you don't have sour milk on hand.) Add to batter.
- 6. Mix in mashed bananas and vanilla.
- 7. Bake in 350 degree oven in a 9 x 11 inch cake pan for 45 minutes. Frost with cream cheese frosting.

- Preheat the oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Line a second pan with 6 liners as this recipe yields about 18 cupcakes.
- Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and both sugars together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs, yogurt, and vanilla, then beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl as needed. Beat in the mashed banana. With the mixer on low speed, add the dry ingredients until just incorporated. With the mixer still running on low, slowly pour in the buttermilk until combined. Do not overmix. You may need to whisk it all by hand to make sure there are no flour pockets at the bottom of the bowl.
- Pour/spoon the batter into the liners – fill only 2/3 full to avoid spilling over the sides. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. For around 30 mini cupcakes, bake for about 11-13 minutes, same oven temperature. Allow the cupcakes to cool completely before frosting.
