Steps:
- In a large, heavy saucepan, saute bacon in olive oil until lightly browned. Add onion, green pepper, and garlic. Saute until soft.
- Add beans, bay leaf, ketchup, Worcestershire sauce, salt, pepper and sausage. Simmer uncovered for 15-30 minutes.
- Stir in vinegar and sugar for last few minutes.
- Serve over cooked rice.

- Melt butter in the pressure cooker (without top.) Add peppers, onion, garlic and saute until translucent. Add 3 cups of stock, kidney beans and remainder of ingredients. Pressure cook according to manufacturer's directions. Cook rice separately, according to package directions. Serve beans on hot, cooked rice.;

- Soak beans in water to cover overnight.
- Heat oil in heavy large pot over medium heat. Add onion and garlic and sauté until tender, about 6 minutes. Stir in pork chops, sausage, thyme and cayenne; sauté 2 minutes. Add beans and 3 1/2 cups water. Simmer over low heat until beans are creamy, about 1 1/2 hours. Serve with steamed rice.

- Cut smoked sausage into 1/4 inch thick slices. Cook in a large Dutch oven over medium-high heat 8 to 10 minutes or until browned.
- Remove sausage and drain on paper towels. Reserve 1 teaspoon drippings in pan.
- Saute onion and celery in hot drippings over medium-high heat 4 to 5 minutes.
- Stir in garlic, 1/2 teaspoon Cajun seasoning, and rice. Saute 3 minutes.
- Stir in broth, next 3 ingredients and remaining 1 1/2 teaspoons Cajun seasoning. Bring to boil; cover, reduce heat and simmer 15 to 20 minutes.
- Remove from heat; stir in sausage and parsley; let stand, covered for 10 minutes or until rice is tender.
- Serve with hot sauce if desired.

BLACK BEANS AND KIELBASA WITH RICE
I got this from a Taste of Home recipe that was actually for chili. It looked good, but it took a lot of time to prepare. I had black beans on hand and not a lot of time, so I revised it and came up with this quick and simple meal. My husband loved it!

Steps:
- Drain and rinse beans. Place in pan. Add the garlic salt, Worcestershire and the chili powder; set aside.
- In a large skillet, sauté the kielbasa until lightly browned. Remove and add to the bean mixture. Sauté the onion and garlic in drippings until tender; add the bean mixture back into the skillet. Stir in tomato sauce.
- Cover and simmer for 15-20 minutes.
- Stir in parsley, salt and pepper. Serve over hot cooked rice. You can cook your rice while your bean mixture is simmering.

- Sort beans and rinse with cold water. Place in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1-4 hours or until beans are softened. , Drain and rinse beans, discarding liquid; set beans aside. In the same pan, saute the kielbasa, celery, onion and green pepper in oil until vegetables are crisp-tender. Add garlic; saute 2 minutes longer. , Stir in the beans, water, bay leaves, thyme and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 2 hours or until beans are tender, stirring occasionally., Uncover and simmer 10-15 minutes longer or until beans reach desired consistency. Discard bay leaves. - 1. In large pot, heat oil over medium heat, add sliced kielbasa & chorizo (both cut length wise down the middle and then sliced 1/4" thick slices) and cook, stirring occasionally for about 5 minutes. With slotted spoon, remove meat to a bowl and set aside. 2. Add onion and cook until tender. Add pepper and salt and cook for about 3 minutes stirring occasionally. 3. Add garlic and creole seasoning and cook stirring for 1 minute. 4. Return meat to pot along with chicken broth and 1 cup water and simmer 5 minutes. 5. Drain 1 can of beans and rinse. With fork, mash beans. 6. Add mashed beans, and other can of beans (drained), along with rice. 7. Continue to cook, covered until rice is tender (add more broth is getting too thick) 8. Add okra at this point. If you add too soon, they will cook down and yu will only have the little white seeds. 9. Add spinach and simmer till tender. This soup should be thick but should have liquid. So if getting to thick please add either water or broth to make a soup like dish.

This is probably the best Red Beans and Rice you will ever have. Everytime i make it my family just devours. It's really great with hot sauce and corn bread.

Steps:
- Brown hamburger and onions.
- Pour in chicken broth.
- Then mix in the red kidney beans, kielbasa, garlic, Cajun seasoning and cayenne pepper.
- Bring to boil and let simmer for 60 minutes.
- Cook one cup of rice and when done mix into pot.
- Mix the flour and cold water to make a slurry and pour into pot to thicken sauce.
- Serve and enjoy.
