My grandmother's easy Baked Eggplant Parmesan is a delicious vegetarian dinner with just 15 minutes of prep!

3 tablespoons melted butter
½ cup Corn Flakes cereal crumbs
¼ cup grated Parmesan cheese
½ teaspoon salt
Dash of pepper
1 small eggplant
1 egg, beaten
1 cup marinara sauce
2 ounces (½ cup) shredded mozzarella cheese

Steps:

  • Preheat oven to 400°F (200°C).
  • Pour melted butter into an 11 x 7-inch baking dish. Set aside.
  • Place egg in a shallow dish. Set aside.
  • In a separate shallow dish, combine Corn Flakes crumbs, Parmesan cheese, salt, and pepper. Set aside.
  • Peel eggplant and cut into ¾-inch thick slices. Dip each slice in egg and coat with crumb mixture. Place in a single layer in the prepared baking dish.
  • Bake for 20 minutes; flip the slices over, and bake for an additional 15 minutes.
  • Pour marinara sauce over eggplant and top with mozzarella cheese. Bake for 3-5 more minutes, or until cheese is melts.

The real-deal, pan fried, layered with marinara and mozzarella, and baked.

1 large eggplant
1 1/2 tablespoons kosher salt
1 cup all-purpose flour
3 eggs, whisked
2 cups plain breadcrumbs (I prefer panko)
3 cups marinara or other tomato sauce (recipe linked below)
1 1/2 cups freshly-shredded low-moisture mozzarella
fresh black pepper
neutral oil, such as canola, for frying
2 large pinches grated Parmigiano-Reggiano or Pecorino-Romano cheese
2 tablespoons chopped fresh Italian parsley, optional

Steps:

  • Peel the eggplant and slice it horizontally into slices no more than 1/4" thick.
  • Line a half-sheet pan or large baking pan with paper towels. Lay the eggplant in a single layer and salt generously, front and back. Do another layer of paper towels if necessary. Let the eggplant sit for about 30 minutes. This is a good time to make your marinara and get your mise en place set up for the frying.
  • Make your marinara. Preheat the oven to 350°F.
  • Set up three flat-bottomed bowls (wide soup or salad bowls work great): one with flour, one with whisked eggs, and one with breadcrumbs.
  • Pat the eggplant dry of excess moisture. The salt should have dissolved and mostly absorbed into the eggplant. This is why you don't need extra salt in the recipe. Reserve the sheet pan and line it with fresh paper towels.
  • Working one at a time, dredge the eggplant slices in flour, then egg, then breadcrumbs, coating fully and shaking off the excess.
  • Heat enough oil in a large skillet to be about 1/8" high in the pan, or slightly less, over medium heat. When the oil is hot, add a few eggplant slices and cook them until golden brown on each side, about three minutes per side. Watch the temperature of the oil. You may need to adjust the heat a little as you go. Drain the cooked eggplant on the paper towel-lined sheet pan.PRO TIP: How do you know the oil is ready? It should be about 350°F. But I don't use a thermometer. I look to see if the oil is shimmering, and drop a pinch of breadcrumbs into the oil. They should sizzle. If the oil is smoking, it is way too hot.
  • Spoon a thin layer of marinara into the bottom of a lightly-greased casserole pan. Layer fried eggplant slices to cover the bottom. Do another ladle of marinara over the eggplant. You do not have to fully coat the eggplant. Dollops are fine. Sprinkle a generous amount of the mozzarella. Repeat, layering the eggplant, marinara, and finishing with the mozzarella. Add the large pinches grated Parmigiano-Reggiano or Pecorino-Romano cheese.
  • Bake 20 to 25 minutes, until the cheese is melted and bubbly. Serve hot, preferably with a side of pasta, a sprinkle of chopped Italian parsley, and additional grated cheese.

This heirloom Italian family recipe came stateside with my grandmother when she immigrated from Italy. Growing up in a house that had Italian sauce being made every Sunday, this eggplant was always a favorite. Using good quality ingredients is critical for this recipe. It is very time consuming and laborious. It would be a shame to invest all of this time and effort with inferior ingredients only to be let down when you eat it later.

2 medium Italian eggplants, peeled and cut into 1/4-inch slices
2 cups all-purpose flour, sifted
3 tablespoons sea salt, or to taste
1 tablespoon ground black pepper, or to taste
5 eggs, room temperature
3 tablespoons water, room temperature
½ cup extra-virgin olive oil, or as needed
2 cups freshly grated Pecorino-Romano cheese, divided
40 ounces Italian-style tomato sauce
2 cups freshly grated Parmesan cheese
30 ounces freshly grated mozzarella cheese

Steps:

  • Lay eggplant slices on top of paper towels and sprinkle with sea salt to draw out moisture. Cover with additional paper towels. Let sit, 8 hours to overnight.
  • Place flour into a 1-gallon plastic zip-top bag. Sprinkle salt and pepper into the flour and shake the bag to mix. Place 6 eggplant slices into the bag, seal, and shake to coat.
  • Beat eggs and water together using a fork in a small bowl. Season with salt and pepper.
  • Heat 2 inches of oil over medium-high heat in a 10-inch cast iron skillet. Line baking sheets with paper towels to drain eggplants after frying.
  • Shake excess flour from eggplant slices and place into egg mixture, turning to ensure both sides are coated. Allow excess egg mixture to drip off before placing slices into the hot oil. Fry until slightly golden, 2 to 3 minutes per side. Transfer to the paper towel-lined baking sheets. Sprinkle with 1 tablespoon Pecorino Romano cheese. Repeat process until all eggplant slices are fried. Let cool slightly, about 5 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pour a small amount of tomato sauce into the bottom of a 9x13-inch baking pan to cover. Place 1/3 of the eggplant slices over sauce, slightly overlapping them. Sprinkle 1/3 of the remaining Pecorino-Romano cheese and Parmesan cheese evenly over the slices. Cover with a light layer of sauce. Sprinkle 1/3 of the mozzarella cheese over sauce. Repeat for a total of 3 layers.
  • Bake in the preheated oven until bubbly, about 40 minutes. Remove from the oven and let cool for 10 minutes to set.

2 1/2 pounds eggplant, unpeeled, halved lengthwise, and sliced 1/4 to 1/3 inch thick
3/4 cup good olive oil
1 tablespoon dried oregano
Kosher salt and freshly ground black pepper
1 (24-ounce) jar marinara sauce, such as Rao's
1/2 cup julienned fresh basil leaves
1 pound fresh buffalo mozzarella, thinly sliced
8 ounces garlic and herb goat cheese, such as Montrachet
1½ cups freshly grated Italian Parmesan cheese
1 1/3 cups fresh bread crumbs from a country loaf
4 garlic cloves, minced
1/4 cup chopped fresh basil or parsley leaves
1/4 cup good olive oil

Steps:

  • Preheat the oven to 400 degrees F and arrange three racks evenly spaced.
  • Lay the eggplant in one layer on three sheet pans and brush both sides with olive oil, using all the oil. Sprinkle with the oregano, crushing it lightly in your hands, then sprinkle with 1 1/2 tablespoons salt and 1 1/2 teaspoons pepper. Bake for 15 minutes. Turn the slices and rotate the pans in the oven and bake for another 10 minutes, until tender. Leave the oven at 400 degrees F.
  • In a 10 by 14 by 2-inch ceramic baking dish, spread a third of the marinara sauce. Arrange a third of the eggplant on top in one layer. Scatter a third of the basil, a third of the mozzarella, a third of the goat cheese, and a third of the Parmesan on top. Repeat twice, starting with the marinara and ending with the Parmesan, making sure each layer is evenly distributed.
  • For the topping, place the bread crumbs, garlic, and basil in a food processor and pulse to combine. Add the 1/4 cup olive oil and 1 teaspoon salt and pulse to moisten the crumbs. Sprinkle the mixture evenly over the dish.
  • Bake for 45 to 50 minutes, until bubbling and golden brown. Allow to sit at room temperature for 10 minutes before serving.

Eggplant slices are coated with bread crumbs and Parmesan cheese and baked between layers of tomato sauce and mozzarella cheese for a filling Italian-inspired meal. Add fresh garlic and basil to taste. I use 2 to 4 cloves fresh garlic and 5 to 10 leaves of freshly harvested basil in the sauce. Fresh basil layered in one of the layers adds lots of 'fresh' flavor!

  • Cover the bottom of a 9x13-inch casserole dish with a layer of spaghetti sauce; top with a layer of eggplant slices. Sprinkle with about 1 tablespoon of the remaining Parmesan cheese and 1/3 the mozzarella cheese. Repeat layers with remaining ingredients, ending with a cheese layer. Sprinkle with basil.
  • Bake in the preheated oven until cheese is bubbling and golden brown, about 35 minutes.

2 large eggplants, peeled and sliced into 1/2-inch rounds (2 1/2 pounds total)
6 cups chunky tomato sauce
1 1/2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees. Brush 2 baking sheets with oil; set aside. In a wide, shallow bowl, whisk together eggs and 2 tablespoons water. In another bowl, combine breadcrumbs, 3/4 cup Parmesan, oregano, and basil; season with salt and pepper.
  • Dip eggplant slices in egg mixture, letting excess drip off, then dredge in breadcrumb mixture, coating well; place on baking sheets. Bake until golden brown on bottom, 20 to 25 minutes. Turn slices; continue baking until browned on other side, 20 to 25 minutes more. Remove from oven; raise oven heat to 400 degrees.
  • Spread 2 cups sauce in a 9-by-13-inch baking dish. Arrange half the eggplant in dish; cover with 2 cups sauce, then 1/2 cup mozzarella. Repeat with remaining eggplant, sauce, and mozzarella; sprinkle with remaining 2 tablespoons Parmesan. Bake until sauce is bubbling and cheese is melted, 15 to 20 minutes. Let stand 5 minutes before serving.

4 eggs, beaten
4 tablespoons half & half
5 tablespoons olive oil
2 tablespoons olive oil

Steps:

  • With the skin on, cut one inch, circular slices of Eggplant from each eggplant, discarding the stems and bottoms..
  • Once cut, individually dip each slice into a mixture of beaten eggs and half-and-half.
  • Then, dip each slice into the dry ingredient breadcrumb mixture until fully coated.
  • Finally, place breaded eggplant slices on a baking sheet that has been greased with 2 tbsp of olive oil.
  • Brush the top of each coated eggplant slice with the additional 3 tbsp of olive oil.
  • Place in an oven at 375°F for 10-15 Minutes.
  • After 10-15 Minutes, flip each eggplant slice over and bake for another 10-15 minutes.
  • In a new baking dish that has been greased with 2 tbsp olive oil, layer as follows:
  • Marinara sauce
  • Baked eggplant slices
  • A drizzle of olive oil
  • A light coating of ricotta cheese on each eggplant slice
  • Sprinkle of parmesan cheese
  • Sprinkle of freshly cut basil leaves
  • Sprinkle of shredded mozzarella
  • A light sprinkling of breadcrumbs
  • Repeat until you have 4-5 layers similar to the above-described layer.
  • Place Layered Dish back into a 375°F oven for 10-15 minutes.
  • After 10-15 Minutes, broil the top layer on low for 5-6 Minutes.
  • Once out of the oven, let cool for 10-15 Minutes. Serve.
