Swedish meatballs in a light cream sauce are delicious on their own or served over noodles.

Yield About 50 mini meatballs (serves 4-6 for a main course, 10-12 as an appetizer)

Number Of Ingredients 19

2 large eggs
½ cup heavy cream
1½ cups cubed white sandwich bread, crusts removed (you'll need about 4 slices)
1 pound ground pork
2 garlic cloves, minced
¼ teaspoon ground allspice
¼ teaspoon ground black pepper
1½ teaspoons salt
2 teaspoons baking powder
1 pound ground beef (85% lean)
2 tablespoons unsalted butter
2 tablespoons all purpose flour
3 cups low sodium chicken broth
2 tablespoons packed light brown sugar (see note below recipe)
1 cup heavy cream
1¼ teaspoons soy sauce
¼ teaspoon ground black pepper
1 tablespoon lemon juice, from one lemon
2 tablespoons finely chopped fresh parsley, for serving

Steps:

  • Preheat the oven to 325. Line a baking sheet with aluminum foil for easy clean-up and place an ovenproof baking/cooling rack over top; spray the rack very generously with nonstick cooking spray.
  • Whisk the eggs and cream together in a medium bowl. Stir in the bread and mash until no large bread chunks remain. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the pork, garlic, allspice, pepper, salt, and baking powder on high speed until smooth and pale, about 2 minutes, scraping bowl as necessary. Add the bread mixture to the mixing bowl and beat on low speed until combined (so it doesn't splatter), then increase the speed to high and beat until smooth and homogeneous, about 1 minute, scraping the bowl as necessary. Add the beef and mix on medium-low speed until just incorporated, about 20 seconds, scraping the bowl as necessary. Using wet hands, form the meat mixture into 1½-inch round meatballs and place on the prepared rack. (The mixture is very sticky and wet hands help; keep wetting your hands as you go). Bake for about 20 minutes, until just done.
  • Note: You'll notice that the rack will leave little marks on the meatballs but they will not be too noticeable once the meatballs are covered with sauce.
  • While the meatballs are cooking, make the sauce. In a large sauté pan over medium-high heat, melt the butter. Add the flour and cook, whisking constantly, until flour is golden and fragrant, about 1 minute. (Careful not to burn; it goes from golden to burnt quickly.) Whisk in the chicken broth, getting rid of any lumps. Add the brown sugar and bring back to a boil. Reduce the heat to medium and cook, whisking and scraping down the sides of the pan occasionally, until sauce is slightly thickened and reduced, about 10 minutes. Add the cream, soy sauce and pepper and bring to a boil. Reduce the heat to medium and cook, whisking and scraping down the sides occasionally, until the sauce is thick enough to coat a spoon, about 10 minutes. Add the cooked meatballs to the sauce and simmer, turning occasionally to coat with the sauce, until heated through. Stir in the lemon juice, then taste and adjust seasoning if necessary. Transfer the meatballs to a serving platter, sprinkle with parsley, and serve.
  • Note: The cream sauce is a touch sweet. For a less sweet sauce, you can reduce or omit the brown sugar.
  • Freezer-Friendly Instructions: The meatballs (without the sauce) can be frozen for up to 3 months. When ready to serve, prepare the sauce and reheat the meatballs in the sauce until hot in the center.

1/4 cup brown mustard
1 tablespoon Worcestershire sauce
2 1/4 cups beef broth
Pinch ground allspice
1 tablespoon cornstarch
1/4 cup heavy cream
One 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
Buttered noodles, for serving
Chopped fresh parsley, for serving
5 pounds ground beef
1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • In a large skillet over medium-high heat, add the mustard, Worcestershire and 2 cups of the beef broth and bring to a boil. Add the allspice.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup broth, whisking to get out all the lumps. Whisk the slurry into the skillet and when the mixture starts to boil again, slowly add the cream, whisking constantly. Add the All-Purpose Meatballs, cover and cook until the sauce thickens and the meatballs are heated through, 8 to 10 minutes.
  • Serve over buttered noodles and garnish with fresh parsley.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock (from a cube is fine)

Steps:

  • In a bowl, mix the mince with the egg, onion, breadcrumbs, dill and seasoning. Form into small meatballs about the size of walnuts - you should get about 20.
  • Heat the olive oil in a large non-stick frying pan and brown the meatballs. You may have to do this in 2 batches. Remove from pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 mins, then slowly whisk in the stock. Keep whisking until it is a thick gravy, then return the meatballs to the pan and heat through. Sprinkle with dill and serve with cranberry jelly, greens and mash.

Sweet and delicious! This recipe came from a good family friend. We have made these many times over the years. These are often requested for me to make. I have taken these to many potlucks by placing them in the crock pot once they are done to keep warm.

2 lbs ground chuck
24 saltine crackers, -crushed (individual crackers, not the 4 square)
3 eggs, -slightly beaten
1/2 medium onion, chopped
1 cup ketchup
1/2 cup packed brown sugar
3 tablespoons Worcestershire sauce
3 tablespoons vinegar

Steps:

  • Mix ground chuck, crackers, eggs, and onion. Make into meatballs.
  • Place in pan.
  • Bake at 350°F for 30 minutes.
  • While meatballs are cooking during this 30 minutes is a good time to mix up your sauce by mixing the ketchup, brown sugar, Worcestershire sauce, and vinegar.
  • Remove from oven and drain excess grease.
  • Return to pan.
  • Pour sauce over meatballs, and stir to coat all the meatballs.
  • Bake another 30 minutes at 350°F until meatballs are cooked through.

1 cup panko bread crumbs
1/2 cup warm milk
4 tablespoons unsalted butter
1 large onion, diced
2 teaspoons kosher salt, more as needed
1 tablespoon brandy
1 1/2 tablespoons all-purpose flour
1 cup beef or chicken broth, low sodium or homemade
1/2 cup heavy cream
1 teaspoon Dijon mustard, optional
1 pound ground beef
1 pound ground pork
2 large eggs
2 garlic cloves, grated on a Microplane or minced
1/2 teaspoon freshly ground black pepper
1/2 teaspoon allspice
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg

Steps:

  • In a medium bowl, soak bread crumbs in warm milk while you prepare the onions.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Stir in onions and a pinch of salt and cook until pale golden, about 3 to 4 minutes. Transfer half the onions to a large bowl and set aside.
  • Prepare sauce: Add brandy to skillet with onions and ignite with a long match or igniter (or if you're using a gas stove, just swirl pan, brandy should catch fire).   • Heat broiler. Drizzle meatballs with oil. Broil meatballs, switching pans' positions if using more than one so they both get close to the broiler, until well browned all over, 5 to 10 minutes. Serve with gravy, garnished with herbs.

  • In a large mixing bowl, combine ground beef, ground pork, minced onion, breadcrumbs, seasonings, eggs, and heavy cream. Using your hands, combine ingredients completely until thoroughly mixed.
  • Roll mixture into 1-inch sized meatballs, packing tightly. Set aside until all the mixture is used. You should be able to make about 75 meatballs.
  • Heat a large cast iron skillet on medium high heat. Add meatballs in a single layer with a little bit of space between each one. Cook several minutes then rotate the meatballs to cook evenly on all sides. Once cooked, remove meatballs onto a serving plate, and add more (I had to do about 3 rounds).
  • Once all the meatballs are cooked, remove them all from the pan and add the butter for the sauce. Using a whisk, melt butter with the drippings in the pan. Sprinkle the flour over the melted butter and whisk over medium heat for about 1 minute. Add in the beef stock, salt, pepper, and allspice. Whisk until no lumps (except the possible meatball pieces from the pan). Turn heat down to low, add in the heavy cream, and simmer for another 15-20 minutes, stirring occasionally. Once the sauce is thickened, return the meatballs to the skillet and simmer until heated (only takes a couple minutes).
