TACO-SEASONED SALMON
This is a recipe I created. I wanted Mexican food, but only had the seasoning and fish. I made this to cure my craving, and it was a success. Even my extremely picky daughter-in-law liked it!

Steps:
- Heat vegetable oil in a skillet over medium heat.
- Mix bread crumbs and taco seasoning mix together in a shallow bowl. Press salmon into bread crumbs mixture until evenly coated. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded salmon onto a plate while breading the rest; do not stack.
- Cook salmon in the hot oil until it flakes easily with a fork, about 4 minutes per side.

DELICIOUS SALMON
This salmon is so easy, you won't believe how delicious it is. I serve it with rice prepared with chicken broth and a little onion instead of plain water and buttery steamed broccoli with sliced almonds.

Steps:
- Whisk together the soy sauce, olive oil, brown sugar, lemon pepper, and garlic in a shallow dish; lay the salmon fillets into the mixture with the skin side facing up. Allow to marinate in the refrigerator 4 to 8 hours or overnight.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Remove salmon from the marinade and arrange on a baking sheet. Discard the marinade.
- Cook the salmon under the broiler until lightly browned and the flesh flakes easily with a fork, 7 to 10 minutes. Allow the salmon to rest 5 minutes before slicing and serving.

- Place the first five ingredients in a food processor; cover and process until finely chopped. Add the lime juice, sugar, tomato sauce and lime zest; cover and process until blended., Transfer to a large bowl. Add the salmon; turn to coat. Cover and refrigerate for 30 minutes., Drain and discard marinade. Lightly oil the grill rack. Place salmon skin side down; grill, covered, over medium heat for 10-14 minutes or until fish flakes easily with a fork. Serve with salsa and lime slices if desired.

- Heat oven to 200C/fan 180C/gas 6. Cut the tortillas into triangles using scissors, toss in 1 tbsp of the oil and the ground coriander, season, then tip onto a lined baking sheet. Bake for 8-10 mins, turning halfway, until crisp. Set aside to cool. Heat the grill to high.
- Mix the yogurt with the smoked paprika and some seasoning, then spoon the yogurt mixture over the salmon. Place fillets on the same baking sheet, lined with parchment, and put under the grill for 8-10 mins until the fish is blackening in places, and flakes into big chunks.
- While the salmon is cooking, whisk the remaining olive oil with the lime zest and juice to make a dressing, season, then toss the remaining salad ingredients in the dressing. Tip onto a plate, top with the salmon chunks and tortilla chips and serve.

Serve in bowls over couscous or basmati rice to soak up the tasty juices."

- Preheat oven to 400°F.
- Combine first 10 ingredients in a large bowl. Add salmon, turning to coat. Cover and let stand 15 minutes. Remove salmon, reserving marinade. Place salmon in a 13x9 inch baking dish coated with cooking spray.
- Cut lemon in half lengthwise; cut 1 lemon half crosswise into 1/8 inch thick slices. Reserve remaining lemon half for another use.
- Add the lemon slices, red and green bell pepper slices, 2 Tbsp of water and tomato slices to marinade; stir gently to coat. Arrange lemon mixture in an even layer over salmon; cover with foil.
- Bake at 400°F oven for 20 minutes or until fish flakes easily when tested with a fork.
- Place 1 fillet on each of 4 plates over rice. Top each serving with about 1/2 cup lemon mixture and drizzle each serving with about 2 1/2 Tbsp pan juices.

Steps:
- Grate peel from limes & place in a bowl.
- Squeeze out 1/2 cup juice from limes.
- Add to bowl along with tequila & oil.
- Finely chop peppers and stir into lime mixture along with sugar, chili powder & salt.
- Place salmon into large resealable plastic bag.
- To support the bag, place in a large bowl.
- Pour marinade over fish and seal bag.
- Let marinade for at least an hour--but preferably 4 hours.
- Lightly oil grill and turn BBQ to medium.
- Remove salmon from marinade & place directly on hot grill.
- BBQ, with lid closed, for about 7- 8 minutes per side or until a knife point inserted into the center of the salmon feels warm.
- While salmon is grilling, pour remaining marinade into a saucepan.
- Boil vigorously, uncovered, stirring often, until sauce is reduced by half--about 3 minutes.
- If you want a thicker sauce, add butter & whisk constantly for about another minute.

- Sprinkle 1 tablespoon of the spice mix evenly over each salmon fillet. Then use your hands to gently press it down so that it adheres to the fish.
- Coat the bottom of a medium-sized sauté pan with grapeseed oil and place it over high heat. Once it's very hot, sprinkle the coated fillets with salt and place them in the pan, skin side up. (If you don't hear a sizzling sound, wait another moment. The pan must be super hot!)
- Let the salmon sauté until you can see that the spices have formed a crust, 1 to 2 minutes. Carefully use a flat-bottomed metal spatula to flip the fillets over. Turn the heat to the lowest setting, cover the pan, and cook just about 2 more minutes. It should still look uncooked in the very center. (You can cook it more/longer if desired.)

- Preheat the oven to 200°C, fan 220°C, gas 7. Toss the potatoes in the oil and half the paprika. Season and spread out in a single layer on a large nonstick baking tray. Bake in the oven for 20 minutes, turning halfway.
- Lay the salmon fillets on top of the potatoes, sprinkle with the remaining paprika; season. Bake together for 10 minutes.
- Meanwhile, make the salsa. Mix the tomatoes, red onion, avocado, chilli, coriander and the juice of 1 lime in a bowl. Season.
