Grandma Smith makes the best baked beans ever. She is not good about sharing her recipes, however. She gave me these ingredients but no proportions. So here is my best guess.

56 ounces pork and beans (van camp's)
1/2 cup brown sugar
1/3 cup ketchup
1/2 lb bacon

Steps:

  • Mix the beans, brown sugar and ketchup in a baking dish.
  • Pull the bacon apart and place on top of the beans.
  • Bake at 350 degrees until bacon is done and beans are bubbly. About 1 hour.

Grandma Brown's canned baked beans are available in the northeast USA but not common elsewhere. They are very simple with only 6 ingredients named on the can. This is a process to recreate them faithfully. Note that these beans are not tomato based, they are thick not saucy, and they are only mildly sweet. The final product either from the can or from the recipe is easily modified to your taste by adding bacon, tomato ketchup, brown sugar, spices. But they are great the way they are. They taste like beans!

1 lb navy beans
1 teaspoon baking soda
water, to cover
1 teaspoon salt
3 ounces ham or 3 ounces cooked bacon
1/4 cup dark brown sugar
1 medium onion, chopped (optional)
1 bay leaf (optional)

Steps:

  • add 1 teaspoon baking soda to 6 cups water.
  • bring water to a boil.
  • sort through beans for debris.
  • add navy beans to water.
  • boil 10 minutes.
  • turn off heat.
  • cover pot.
  • let sit overnight.
  • rinse beans well.
  • add beans and all other ingredients to oven proof pot with tight fitting lid.
  • stir well.
  • add water until beans are just covered.
  • cover pot with lid.
  • bake 5 to 6 hours at 300°F.
  • every hour stir and add water to cover if beans are drying out.
  • final product should be a thick and not runny.

Two 15-ounce cans pork and beans
One 15-ounce can black beans
One 15-ounce can red kidney beans
One 15-ounce can butter beans
1/2 pound ground beef
3/4 pound diced bacon
1 cup ketchup
1/2 cup brown sugar
3 tablespoons apple cider vinegar
1 cup chopped yellow onion
2 jalapeños, stemmed, seeded and diced
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Heat a smoker for cooking at 225 degrees F.
  • Add pork and beans, black beans, kidney beans and butter beans to a foil pan and set aside.
  • Brown the beef in a large skillet, then drain the grease and add the beef to the beans. Cook the bacon in the same skillet, then add the bacon to the beans. Add the ketchup, brown sugar, vinegar, onion, jalapeños, salt and pepper to the beans.
  • Place the foil pan in the smoker and let smoke until there is a nice bark covering the top of the beans, 4 to 5 hours.

5 cloves garlic
2 medium carrots
1 serrano chile
1 large white onion
3 tablespoons vegetable oil
2 teaspoons ground cumin, or more as desired
2 cups dried pinto beans, soaked overnight
1 orange, halved
1 tablespoon salt, or more as desired

Steps:

  • Rough chop the garlic, carrot, serrano and onion into small pieces. Heat the oil in a medium pot over medium-high heat. Add the chopped vegetables and 1 teaspoon cumin to the pot and cook until the onion starts to brown.
  • Strain the beans and add them to the pot. Pour in enough water to just cover the beans. Cover and bring them to a boil. Stir, then cover again and lower to a simmer. Simmer the beans until they start to burst, around 1 hour.
  • Uncover the pot and add the orange, squeezing the juice into the pot and then dropping the halves in. Stir in the remaining teaspoon cumin and the salt. Continue to simmer to allow the beans to thicken, about 45 minutes more. Add more cumin and salt to taste.
  • Serve as a side dish, over rice, or on their own on a taco.

1/2 cup ketchup
1/3 cup brown sugar
2 Tablespoons mustard

  • Combine all ingredients in your crockpot, cook on low 4 hours. It can be cooked in the oven in a casserole dish with a lid for 30 minutes at 350 degrees.

1 pound dry great Northern beans
8 cups water
4 ounces diced salt pork
1 cup chopped onion
½ cup molasses
⅓ cup packed brown sugar
1 teaspoon dry mustard
⅛ teaspoon ground black pepper

Steps:

  • The night before, combine the Great Northern Beans and water in a large saucepan. Bring to a boil, and cook for 1 1/2 hours. Pour beans and their liquid into a bowl, cover and refrigerate overnight.
  • In the morning, drain off liquid, reserving 1 cup. Pour beans and the reserved liquid into the crock of a slow cooker. Stir in the salt pork, onion, molasses, brown sugar, mustard and pepper. Cover, and cook on Low for 12 to 14 hours. Stir before serving.

5 slices thick-cut bacon
1 red onion, sliced thin
1 jalapeño, seeded and diced small
1 1/2 pounds green beans, trimmed
1 cup chicken stock
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1/4 cup fried onions

Steps:

  • Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  • Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  • Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

1 lb hamburger
1/2 lb bacon (sliced in bite size pieces)
1 medium green pepper (diced)
1 medium onion (diced)
1 (28 ounce) can pork and beans
1/2 cup dark brown sugar (packed)
1/4 cup white corn syrup
1/4 cup ketchup
1 teaspoon yellow mustard
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • In a large pan combine hamburger, sliced bacon, diced green peppers and onions, and cook until hamburger is done.
  • Drain any grease that is in the pan.
  • Return meat mixture back to the pan.
  • Add pork& beans, dark brown sugar, white corn syrup, ketchup, mustard, and salt/pepper to the meat mixture.
  • Mix well.
  • Pour into a casserole dish and bake for 30 minutes.
