GRANDMA'S APPLE PIE

1 1/2 pounds short crust pastry, recipe follows
7 cups Royal Gala apples, cored and quartered (about 5 apples)
1/2 cup sugar
1 tablespoon lemon juice
2 teaspoons lemon zest, finely chopped
1/4 teaspoon grated nutmeg
Pinch salt
1 egg yolk
2 tablespoons water
2 tablespoons unsalted butter, cold
3 cups all-purpose flour
1/4 teaspoon salt
4 ounces unsalted butter, cold
8 ounces shortening, cold
1/2 cup ice cold water

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
  • Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
  • Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
  • Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
  • With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.

5 Courtland apples, peeled cored and thinly sliced
1 (12-ounce) can citrus soda
1 1/2 cups water
1 stick unsalted butter
1/3 cup light brown sugar
1/3 cup molasses
3/4 cup maple syrup
1/2 teaspoon ground cinnamon
1 pinch salt
1/2 cup apple brandy
1/2 cup chopped pecans
1/2 cup raisins
1 (10-inch) store-bought angel food cake

Steps:

  • Place apples in large bowl with 1 can soda and 1 1/2 cups water. Let sit for 5 minutes.
  • In a large skillet over medium heat melt butter. Add brown sugar, molasses, maple syrup, cinnamon and salt. Stir until sugar has dissolved and starts to simmer. Add apple brandy, pecans, raisins and apples. Reduce heat to low and let simmer for about 15 minutes or until apples are tender and liquid has reduced to a syrupy consistency.
  • Slice angle food cake into wedges and top each slice with apple mixture.

2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 teaspoon cinnamon, plus 1 tablespoon cinnamon
1 tablespoon sugar
1/3 cup butter
1/2 cup sugar, plus 1 tablespoon
1 tablespoon brown sugar
1 egg
1/2 cup milk
1 cup flour
1/2 tablespoon baking powder
1 vanilla bean
2 cups milk scalded
6 yolks
1/2 cup sugar

Steps:

  • Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. Stir in flour, baking powder and remaining 1 teaspoon cinnamon. Pour into the mold. Put the sliced apples on top and bake in a preheated 350-degree oven for 40 minutes.;
  • Scrape the vanilla bean into scalded milk. Whisk yolks and sugar. Add a little hot milk to the yolk and sugar mixture. Pour back into the hot milk. Stir continuously with a wooden spoon over a low heat until it starts to thicken. Make sure it does not boil. Strain and let cool down.

4 to 6 dried figs
1/4 cup chopped almonds, toasted
1 cup sugar
1/3 cup plus 2 tablespoons butter
1 tablespoon heavy cream or creme fraiche
Juice of 1 lemon
Serving suggestion: cinnamon whipped cream or creme fraiche

Steps:

  • Preheat the oven to 350 degrees F.
  • Core the apples. Using a paring knife, score a ring around the midriff of each apple, just cutting through the skin to prevent the apples from bursting during baking. Stuff the apples with the figs and almonds. Set on a baking sheet, and bake until puffed up and soft all the way through, about 30 minutes.
  • Meanwhile, put the sugar in a saucepan with a spoonful of water, and boil to a golden caramel, about 5 minutes, depending on how much water you've added. Do not stir the sugar with a spoon, gently swirl the saucepan over the heat until the desired color. You want a nice rich caramel color, but don't let it get too dark.
  • Serve the baked apples warm from the oven with the sauce poured over and with a generous slump of cinnamon whipped cream or creme fraiche on the side.

Pastry for a double-crust pie (9 inches)
6 to 7 cups thinly sliced peeled tart apples (about 2-1/2 pounds)
1 tablespoon lemon juice
1 cup sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
Dash ground nutmeg
2 tablespoons butter
2% milk
Additional sugar

Steps:
