CLASSIC VANILLA CAKE

Classic Vanilla Cake image

The name says it all: This is the one to serve at birthdays and other celebrations that call for the perfect version of a traditional American layer cake. The oil in the batter keeps the cake moist, and the simple American buttercream is sweet and fluffy.

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 12 servings

Number Of Ingredients 14

1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pans
2 3/4 cups all-purpose flour, spooned and leveled, plus more for the pans
1 teaspoon baking powder
1 teaspoon fine salt
2 cups granulated sugar
1/2 cup vegetable oil
5 large eggs, at room temperature
1 tablespoon pure vanilla extract
1 cup milk
3 sticks (1 1/2 cups) unsalted butter, at room temperature
Pinch fine salt
3 1/4 cups confectioners' sugar
2 teaspoons pure vanilla extract
1/4 cup milk

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter the bottoms and sides of two 9-inch round cake pans; dust with flour, and tap out the excess.
  • Whisk together the flour, baking powder and salt in a medium bowl; set aside.
  • Beat the butter, sugar and oil in a large bowl with an electric mixer on medium-high speed until light in color and fluffy, about 5 minutes. Beat in the eggs, one at a time, and then the vanilla until combined.
  • Alternate folding the flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth. Divide the batter evenly between the prepared pans.
  • Bake the cakes on the same oven rack until golden on top and the centers spring back to the touch, 35 to 40 minutes. Rotate the pans about halfway through if they seem to be browning unevenly. Let cool in the pans about 10 minutes, then turn out onto cooling racks and let cool completely.
  • For the frosting: While the cakes cool, beat the butter and salt in a large bowl with an electric mixer on medium speed until smooth. Gradually beat in the confectioners' sugar. Once it's all been added, increase the speed to medium-high, and beat until white and fluffy. Add 2 tablespoons of the milk, and beat to incorporate. Beat in the remaining milk, one tablespoon at a time (the frosting will be spreadable but not runny).
  • To assemble: Place 1 cake layer right-side up on a cake plate or stand, and spread with 1 cup of the frosting. Top with the second cake layer. Frost the top and sides of the cake with the remaining frosting.

Traditional, rich, soft and fluffy butter cake. This is the best butter cake recipe. This easy recipe yields sweet and buttery cake with simple ingredients!

Provided by Rasa Malaysia

Categories     Baking Recipes

Time 1h

Number Of Ingredients 8

7 oz. (200 g) cake flour or all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 sticks (225 g) unsalted butter, at room temperature
7 oz. (200 g) sugar
4 large eggs
1 teaspoon vanilla extract
4 tablespoons plain yogurt (preferred) or full milk

Steps:

  • Preheat the oven to 375°F (190°C).
  • Lightly grease the pan (loaf pan, mini loaf pan, 8x8-inch or 9x9-inch square pan, round pan) with some butter. Mix the flour and the baking powder together and sieve. Add in the salt and mix well. Set aside.
  • Use an electronic hand mixer or stand mixer to beat the butter and sugar until well combined or pale yellow in color, about 3 minutes.
  • Add in the first egg. Beat well after each addition of egg until creamy, about 1 to 2 minutes after adding each egg.
  • Scrape down the sides for even mixing. Add in the vanilla extract and mix well. Fold in the flour and mix well. Add in the plain yogurt or whole milk
  • Pour the batter into the greased baking pan. Shake it lightly to distribute the cake batter evenly. Bake until golden brown and cooked, about 40 - 50 minutes. To prevent the top of the cake from over browning, cover the top of the baking pan with a sheet of aluminum foil once the cake top is set. Use a cake tester to test doneness.
  • Remove it from the oven and let cool on the wire rack for 5 minutes. Cut into pieces and serve warm.

  • Assemble your supplies. Along with your ingredients for the cake recipe, you'll also need some utensils and equipment, including: A hand mixer or stand mixer Cake pans: one 9-by-13-inch pan, two nine-inch pans, or one Bundt pan Grease or parchment paper A large mixing bowl A large spoon or paddle
  • Preheat your oven and prepare your pan. For this butter cake recipe, you will want your oven preheated to 350 F (177 C). While you're waiting, grease your cake pans with butter, baking spray, or vegetable shortening. On top of the greased pan, sprinkle a pinch of flour to create a light dusting. If you'd rather not used greased pans, you can instead line your cake pan with parchment paper.
  • Cream together the butter and sugar. Add the butter and sugar to your mixing bowl. Beat the ingredients together with your mixer on low speed. Continue beating for five to 10 minutes. As the butter and sugar incorporate, increase the speed to medium, and finally to high for the last minute or two. Creaming the butter and sugar together in this way will create a light and fluffy cake that has plenty of volume, because the process whips air bubbles into the butter.
  • Beat in the eggs. Crack each egg separately into a small bowl and beat it a little before adding it to the flour and sugar mixture. This will give you time to remove any shell pieces, and will prevent the mixture from curdling. Turn the beaters on low and have them running as you add each egg. You want the eggs at room temperature because a warm egg won’t decrease the final volume of the cake. Continue beating the mixture until all the eggs have been incorporated and the mixture is smooth and yellow.

  • Cream the butter and sugar. I start the process by mixing the sugar and butter together. Textbooks and cookbooks refer to this as the creaming process because the combination looks like cream.
  • Prepare the dry ingredients (flour, salt, baking powder) I mix the flour, baking powder, and salt together while waiting for the butter to soften.
  • Measure the wet ingredients (eggs, milk) I use a digital kitchen scale to measure the ingredients. I have converted all the measurements from cups and liters to grams.
  • Add the eggs and milk to the batter of butter and sugar. Creaming is the most important part of the cake making process. I fumbled before because I was impatient.
  • Add the dry ingredients. It is time to add the dry ingredients when the batter becomes homogenous, light, fluffy, curd-like and pale yellow, Gluten forms when the flour mixed with liquid can toughen the cake.
  • Scaling and panning. Fill up the baking pans and start baking is nothing technical, but I have a list of tips and tricks for you to make it super easy and efficient.
  • Baking temperatures and the duration. I usually preheat the oven until the internal temperature became stable. I have used both domestic and commercial oven.
  • How to keep butter cakes fresh. The flavor of a freshly baked butter cake is irresistible, and that is why we say ‘sell like hot cakes.’ However, there will be situations you need to keep it for a few days or even weeks.
