½ cup butter
1 ½ cups white sugar
2 tablespoons all-purpose flour
2 eggs
1 cup milk
1 cup flaked coconut
1 teaspoon vanilla extract
1 recipe pastry for a 9 inch single crust pie
1 tablespoon flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, beat together butter or margarine, sugar, and eggs with an electric mixer on low speed. Blend in flour. Mix in 1/2 cup of milk at a time. Add 1 cup coconut and vanilla, and mix well.
  • Pour filling into unbaked pie shell. Sprinkle top with additional coconut before baking, just enough to lightly cover the top. Bake for 40 to 50 minutes, or until set.

Steps:

  • Combine eggs, salt and sugar.
  • Add milk and vanilla slowly.
  • Line pie pan with prepared pastry and pour in filling.
  • Sprinkle with nutmeg and coconut.
  • Bake at 450 degrees for 10 minutes, then reduce heat to 325 degrees and bake 30-40 minutes or until knife inserted in center of pie comes out clean.

1 c grated coconut
1 c milk
1 c sugar
2 Tbsp all-purpose flour
1 pinch salt
2 large eggs
1 large egg, separated
1 tsp vanilla extract
2 Tbsp melted butter
1 unbaked 8 or 9 inch pie shell
nutmeg, optional

Steps:

  • 1. Soak coconut in milk for several hours to make coconut very moist. Set in refrigerator until ready to use.
  • 2. Stir together sugar, flour, and salt. Set aside.
  • 3. Beat the 2 whole eggs plus the additional egg yolk slightly. Add coconut/milk mixture and vanilla to these eggs.
  • 4. Combine dry ingredients with milk mixture. Mix well. Add butter. Mix.
  • 5. Beat remaining egg white until frothy. Brush this on unbaked pie shell. (This keeps the pie crust from becoming soggy.)
  • 6. Then carefully pour the custard into an unbaked pie shell. If you like shake a bit of nutmeg on top of the custard. Bake at 375 degrees for 25-30 minutes.
  • 7. If you like you can cover edges of pie crust with aluminum foil to prevent them from becoming too dark.

2 c half and half
1 Tbsp cornstarch
3 large eggs
1/2 c sugar
1/2 stick butter, melted
pinch sea salt
1 tsp vanilla
1-1/4 c coconut, flaked or shredded
9 inch deep dish pie crust

  • 1. Preheat oven to 350 degrees.
  • 2. Mix eggs and sugar well with hand mixer.
  • 3. Dissolve cornstarch in 1/4 cup of the half and half; add back to remaining half and half, and stir until well combined.
  • 4. Add half and half mixture slowly to the egg/sugar mix, while continuing to beat on low speed; add salt. Stir in the melted butter by hand. Add vanilla and coconut.
  • 5. Pour into pie crust; bake for 45-60 minutes, depending on your oven.

TOASTED COCONUT
1 Tbsp butter

  • 1. Mix sugar and cornstarch together.
  • 2. Mix eggs into sugar mixture.
  • 3. Melt butter and mix with the remainder of the ingredients into the sugar and eggs.
  • 4. Pour into pie crusts. This makes two pies. Bake in a 350 degree oven for 45 minutes to 1 hour or until the middle is slightly jiggly.
  • 5. To toast the coconut melt butter into a skillet. Add the remainder of the coconut from the bag. Stir and watch it until it is toasted to your satisfaction.

Sweet Dough, for a 1 crust pie, above
1 large, fresh coconut, about 1 1/2 pounds
2 cups milk
3/4 cup sugar
1 teaspoon vanilla extract
4 large eggs
Tiny pinch freshly grated nutmeg
1 1/4 cups all-purpose bleached flour
1/4 cup sugar
1/4 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons (1/2 stick) cold unsalted butter
1 large egg
Two-crust pie, about 1 1/4 pounds dough:
2 1/2 cups all-purpose bleached flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) cold unsalted butter
2 large eggs

Steps:

  • Prepare and chill the dough.
  • Set a rack at the middle level of the oven and preheat to 350 degrees.
  • Use a large nail or an ice pick to puncture one of the three eyes on the coconut (only one can be punctured so you will need to try each until you find it). Drain the coconut milk out over a bowl. Strain it to remove any flecks of shell and reserve it.
  • Place the coconut on the oven rack and bake it until it cracks, about 10 to 15 minutes.
  • Remove the coconut from the oven and let it cool slightly. Remove shell (it will come away easily), then cut the coconut meat into 8 or 10 pieces. With a vegetable peeler, remove brown skin. Coarsely grate 1 cup coconut, either by hand or in the food processor, and reserve it for the filling. Process the remaining coconut until it is very fine.
  • In a large saucepan over low heat, scald the milk until there are bubbles around the edges. Add the finely processed coconut. Remove from the heat and allow the mixture to cool completely. Pour it through a fine strainer into a bowl; press coconut to extract as much moisture as possible.
  • In 3 or 4 batches, place coconut in the corner of a clean dish towel and wring out over bowl to extract all remaining liquid. (If you wish, you can toast the wrung out coconut, though it will have very little flavor remaining after soaking in the milk.) Measure the coconut flavored milk and add more milk, if necessary, to make 2 cups. (This may be done earlier in the day or even the day before and set aside tightly covered in the refrigerator.) Pour into a bowl and whisk in sugar, eggs, vanilla and nutmeg and the reserved coconut milk. Stir in the reserved coarsely grated coconut.
  • Set a rack in the lowest level of the oven and preheat to 350 degrees. Roll out the dough for the bottom crust and arrange in pan.
  • Pour filling into pie crust. Bake the pie for about 45 minutes, until the crust is baked through and the filling is set, but not over-cooked. After the pie has baked for 30 minutes, check it frequently so it does not over-cook. Once the pie is wobbly textured when the pan is gently shaken, remove it from the oven; it will continue to cook for a few minutes longer after it is removed from the oven. If the pie is over baked, it will be heavy and watery. Cool the pie on a rack.
  • To mix the dough by hand, combine flour, sugar, salt and baking powder in a medium mixing bowl and stir well to mix. Cut butter into 1-tablespoon pieces and add to dry ingredients. Toss once or twice to coat pieces of butter. Then using your hands or a pastry blender, break the butter into tiny pieces and pinch and squeeze it into the dry ingredients. Occasionally reach down to the bottom of the bowl and mix all the ingredients evenly together. Continue rubbing the butter into the dry ingredients until the mixture resembles a coarse-ground cornmeal and no large pieces of butter remain visible. Beat the egg(s) in a small bowl and pour over the flour and butter mixture. Stir in with a fork until the dough begins to hold together, but still appears somewhat dry. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform.
  • To mix the dough in the food processor, combine flour, sugar, salt and baking powder in work bowl fitted with metal blade. Pulse 3 times at 1-second intervals to mix. Cut butter into 1 tablespoon pieces and add to work bowl. Process, pulsing repeatedly at 1-second intervals, until the mixture is fine and powdery, resembles a coarse-ground cornmeal and no large pieces of butter remain visible, about 15 pulses in all. Add the egg(s) to the work bowl and pulse ten times or so, until the dough forms a ball. Scatter a teaspoon of flour on the work surface and scrape the dough out onto it. Press and knead the dough quickly 3 or 4 times, until it is smooth and uniform. Press the dough into a disk (two equal disks for the larger amount of dough). Sandwich the disk(s) of dough between two pieces of plastic wrap and press it into a 6-inch circle. Refrigerate the dough until firm, or until you are ready to use it, at least 1 hour.
  • Storage: Keep the dough in the refrigerator up to two days, or freeze it double-wrapped in plastic. Because the dough is thin, it will defrost quickly at room temperature when you intend to use it.

1 egg white
2 1/2 cups scalded whole milk
1/4 teaspoon ground nutmeg
3 drops yellow food coloring (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add a few drops yellow food coloring.
  • Brush inside bottom and sides of pie crust with egg white to help prevent a soggy crust. Pour custard mixture into piecrust. Sprinkle with nutmeg.
  • Bake for 40 to 50 minutes or until a knife inserted near center comes out clean. (Please adjust according to your oven) Cool on rack.

Of course I could never ever make this like I remembered until I finally asked her for the recipe. One thing I cannot replicate is the use of fresh whole milk, but have come up with a pretty close substitution. THIS is comfort food at its' finest.

1/2 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees F.
  • Scald milk (I use 1 cup half and half mixed with 1-1/2 cups whole milk). Set aside.
  • In large mixing bowl slightly beat eggs, blend in sugar, salt, vanilla and almond extract.
  • Gradually stir in scalded milk. Do not overbeat as this will create an unwanted foam. Pour into prepared pie shell and lightly sprinkle freshly grated nutmeg over the top.
  • Bake 30-35 minutes or until knife inserted in center of pie comes out clean. Remove from oven and let cool 30-60 minutes before slicing and serving.

1/2 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
1 cup whole milk
1 can (14 ounces) coconut milk
4 large egg yolks
1/2 cup sweetened shredded coconut, toasted

Steps:

  • Preheat oven to 400 degrees. Press a sheet of aluminum foil onto crust, draping over rim of pie plate. To blind-bake: Fill with dried beans or pie weights. Bake until crust is lightly browned, about 45 minutes. Remove beans and foil; let crust cool completely, and set aside.
  • While crust is baking, place a fine-mesh sieve over a large bowl; set aside. In a medium saucepan (off heat), whisk together sugar, cornstarch, and salt. Gradually whisk in whole milk, making sure to dissolve cornstarch. Whisk in coconut milk and egg yolks.
  • Whisking constantly, cook over medium heat until the first large bubble sputters, about 5 minutes. Reduce heat to low; cook, whisking constantly, 1 minute. Remove pan from heat; immediately pour custard through sieve into bowl.
  • Pour custard from bowl into cooled crust; smooth top with a rubber spatula. Refrigerate until chilled, at least 4 hours (or loosely covered, up to 1 day). To serve, let stand at room temperature 30 minutes, then sprinkle with coconut.

2 frozen pie crusts (deep dish-thawed)
1 cup milk
2 1/2 cups flaked coconut (1 7oz bag)
2 cups sugar
2 teaspoons vanilla
6 eggs
1/2 cup butter

Steps:

  • Put coconut in a bowl. Pour milk over and set aside.
  • Cream butter and sugar, add eggs one at a time till mixed well. Add vanilla.
  • Stir in coconut and milk.
  • Poke thawed crusts well with a fork. Pour batter evenly into the two crusts.
  • Bake at 350 for 30 to 40 mins or till center is almost set and pie is golden brown.
