Steps:
- In a large pot or dutch oven, bring the water to a boil. Stir in the grits. Reduce the heat to low, cover the pot, and cook let cook, stirring occasionally to prevent the grits from sticking to the bottom of the pot. Cook until the grits are tender and the liquid has been absorbed, 20-30 minutes. Remove from the heat, add the salt, cheese, and butter and stir until melted. Cover and keep warm.
- Melt 1 tablespoon of the butter in a large skillet or braising pan over medium heat. Add half of the mushrooms and cook for 5 minutes or until golden on the bottom. Flip the mushrooms over and brown on the second side, about 5 minutes more. Remove the mushrooms to a large plate. Add another tablespoon of butter to the pan and repeat with the remaining mushrooms.
- Melt the remaining 2 tablespoons butter in the now empty pan over medium heat and add the onion, bell pepper, and garlic. Cook, stirring occasionally, until softened, 3-5 minutes. Add the seared mushrooms and any juices that have accumulated. Add the tomatoes, their juices, and the thyme and bring to a simmer.
- In a small cup, stir together the cornstarch and 1 or 2 tablespoons of cool water to make a slurry. Add this to the pot along with 1/2 cup vegetable stock. Cook for 2 or 3 minutes more. Add the tomato paste and stir until blended. Stir in the cream, Worcestershire, Tabasco, and more stock if needed to make a spoonable sauce that generously coats the mushrooms. Heat thoroughly, being careful not to let it come to a boil. Taste, adding salt if you like.
- Serve the grits in shallow bowls topped with the mushrooms, sauce, and a sprinkle of chives.

- Add flour to the pan with the bacon grease and cook over medium heat, stirring constantly, for several minutes to create a roux. Scrape up any bits of bacon that may have stuck to the bottom of the pan.
- Whisk in chicken broth and tomato juice, stirring constantly until fully incorporated. Stir in smoked paprika and simmer until thickened. Add salt and pepper to taste.
- Serve spooned over grits or biscuits with the bacon sprinkled on top.

CREAMY GRITS WITH TOMATO GRAVY AND GREENS
Steps:
- For the grits: Bring the milk and salt to a boil in a medium saucepan over medium heat. Add the grits, stirring with a fork to prevent any lumps from forming. Once the grits have started to thicken, reduce the heat to low and cook, stirring constantly, until thick and smooth, about 5 minutes. Remove from the heat and cover to keep warm.
- For the tomato gravy: Meanwhile, in a large skillet over medium heat, heat the oil until it shimmers. Add the grape tomatoes, sugar and garlic and cook until the tomatoes start to soften, 3 to 5 minutes. Add 2 tablespoons of the butter; let melt. Stir in flour and cook until starting to brown, 1 to 2 minutes. Whisk in the broth, tomato paste, salt and pepper until smooth. Continue cooking until the mixture comes to a boil; it will thicken as it heats. When thick like a gravy, remove from the heat and stir in the remaining 2 tablespoons butter.
- Serve the warm grits in shallow bowls, topped with tomato gravy and collard greens.
- Prepare the collards for cooking by cutting the large stems from the center of the leaves. Stack the leaves and cut them crosswise into 1-inch strips
- Put 2 inches of water in a saucepan large enough to hold the raw collards (the leaves can be pushed down tightly and will wilt to about one-quarter volume as they cook). Add the ham hock or pork and bring the water to a boil. Add the collards and toss with tongs until the water returns to a boil and the leaves wilt down into the pan. Reduce the heat, cover and simmer over low heat for 1 hour, or until tender. Stir occasionally, checking to be sure there is enough liquid to prevent scorching. Taste the liquid and add salt if needed. Serve with buttermilk cornbread and hot sauce.

- Put the shrimp peels in the 3-quart pot and cover with 3 cups of water. Bring to a boil over medium heat, then cover and simmer for about 15 minutes. Strain well and reserve the broth.
- While the shrimp broth simmers, cook the bacon in the 6-quart pot over medium high heat until the fat render and the bacon becomes tender, about 5 minutes. Stir in the onions, celery, and bell pepper and sauté until the vegetables soften, about 8 minutes. Stir in the diced Roma tomatoes, 2 cups of the shrimp broth, Creole seasoning, kosher salt, and pepper. Bring to a boil, then continue to cook covered over medium low heat until the tomatoes fall apart and make broth, about 1 hour or more as desired. About 10 minutes before you are ready to serve, add the peeled shrimp and cook until the shrimp are pink and cooked through, about 10 minutes.
- While the shrimp gravy cooks, heat the the chicken broth, low-fat or fat-free lactose-free milk, salt, and pepper in the 4-quart pot just until it boils. Whisk in the grits, continually stirring to break up any lumps. As soon as it comes to a boil, reduce heat to low and cover. Cook, stirring occasionally, until the grits soften and soak up the liquids. Add a little more milk as necessary if the mixture becomes too thick. Stir in the Parmesan cheese just before serving.
