- Preheat oven to 350 degrees. Grease and flour 13x9 inch baking pan.
- In a small bowl, pour boiling water over oats, mix well and leave soaking until cooled.
- In a large bowl, combine butter, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt.
- Fold in cooled oatmeal mixture until just combined.
- Pour batter into pan and bake for 35 minutes. Prepare frosting while cake is baking.

- Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.
- Add the oatmeal and butter to a bowl and pour boiling water on top. Set aside.
- In a mixing bowl combine the eggs, brown sugar, and white sugar and mix well.
- In a separate bowl sift together the flour, cinnamon, baking soda, nutmeg, and salt.
- Add to the bowl with eggs and sugars and stir to combine.
- Add the oatmeal mixture and stir to combine.
- Bake for about 35 minutes or until a toothpick inserted in the center of the cake comes out clean.
- While the cake is baking, make the topping by combining all the ingredients in a bowl.
- Remove the cake from the oven and turn the oven to high broil.
- Spread the topping evenly over the warm cake and place under the broiler for 2-4 minutes or until the coconut is golden brown.

- In a shallow bowl soak oats in boiling water for 20 minutes.
- Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
- Beat in eggs and vanilla.
- Sift and measure flour, sifting again with the soda and spices.
- By this time the oats will be soaked and cool.
- Remove beaters from creamed mixture and fold in soaked oats.
- Sift flour mixture over and fold in.
- Turn in a buttered 9x9" pan and bake at 350°F for 40-50 minutes .
- Mix all the topping ingredients.
- Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
- Watch carefully.

- Pour hot water over oatmeal; set aside.
- Cream together sugars and shortening, then add eggs.
- Sift together dry ingredients and add to the wet.
- Stir in oatmeal and vanilla.

- Bring the 2 1/2 cups water to a boil.
- Then add the salt.
- While stirring constantly, gradually add the oatmeal.
- Continue to stir the oatmeal and add the sugar and cinnamon.

- Pour water over oats, let stand.
- Cream 1/2 cup butter or margarine and sugars. Add eggs and blend in a large mixing bowl. Sift the flour, baking soda, salt, cinnamon and nutmeg together. Add to sugars and egg mixture. Add vanilla and oats mixture, blend well.

- Combine the buttermilk and rolled oats in a bowl and set aside for 15-20 minutes until the oats have softened.
- While the buttermilk and oats are standing, pre-heat your oven to 350°f and line a standard baking tin with greaseproof paper.

- If using honey add to wet ingredients.
