FIG PINWHEELS
These slice-and-bake chewy cookies are perfect for the holidays.

- Make dough: Sift together flour, salt, and baking soda into a large bowl, set aside. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth, about 3 minutes. Mix in eggs. Reduce speed to low; gradually mix in flour mixture. Divide dough in half, and wrap each half in plastic. Refrigerate until firm, about 1 hour or overnight.
- Transfer one of the dough halves to a lightly floured piece of parchment paper. Roll out to a 10-by-12-inch rectangle, trim edges with a knife. Repeat with remaining dough half. Transfer each rectangle on parchment to a baking sheet. Refrigerate 30 minutes.
- Make filling: Bring figs, raisins, and juices to a simmer in a medium saucepan over medium-high heat. Reduce heat to medium. Cook, stirring often, until fruit has softened and only a few tablespoons of liquid remain, about 25 minutes. Let cool completely. Transfer fig mixture to a food processor, and puree until smooth.
- Spread half the filling over each rectangle. Starting with a long side, roll dough into a log. Wrap each log in plastic; refrigerate until firm, about 1 hour or overnight.
- Preheat oven to 350 degrees. Cut logs into 1/4-inch-thick slices using a sharp knife, transferring to baking sheets lined with parchment paper (and reshaping into rounds, if needed) as you work. Bake cookies, rotating sheets halfway through, until edges turn golden brown, about 15 minutes. Let cool on sheets on wire racks.
FIG PINWHEELS
Steps:
- Trim store-bought pie dough into an 8-inch square. Pulse 1 cup dried figs, 1/2 cup pitted dates, a pinch of cinnamon, 1/2 teaspoon orange zest, 1 1/2 teaspoons orange juice and 1 tablespoon butter in a food processor. Spread over the dough and roll into a log; chill 30 minutes. Cut into 1/2-inch-thick slices and bake 12 to 15 minutes at 375 degrees.
CHRISTMAS PINWHEEL COOKIES
I played around with 2 recipes and created this one. We think these are delicious. You could put two together with a filling between them if you dare! Please know that prep time doesn't include the time to chill the cookies. You will notice there are 2 chilling times. These are a must have for your cookie exchange or cookie plate! Santa surely will appreciate these coookies! Excellent with a glass of milk! If you like more of a peppermint flavor, I suppose you could add some peppermint extract to the dough mixture. I didn't and we really enjoy them with just the crushed candies.

- In a mixing bowl, beat butter at medium speed until creamy.
- Gradually add sugar, beating until fluffy and light.
- In smaller bowl, combine flour, baking soda, baking powder, and salt;
- Slowly add flour mixture to the butter mixture and beat at low speed until well incorporated.
- Divide the dough into 2 equal portions making 2 rolls.
- Take 1 roll and place in a small bowl. Add the red food coloring and mix well with a large spoon. If the color isn't red enough, add more red food coloring.
- Add the crushed peppermint candy to this red dough. Mix well with the large spoon and form into a log.
- Now, wrap each log with Saran wrap and chill for 45 minutes or until firm.
- At this point instead of chilling dough, if you plan on baking these later, you may freeze the dough for up to 6 weeks.
- Creating the pinwheels:.
- Lightly flour your rolling surface.
- Take the plain dough and roll into a 12 x 8-inch rectangle.
- Place a large piece of wax paper and and roll the red dough into a 12 x 8-inch rectangle by placing another piece of wax paper or Seran Wrap on top of the red dough so the rolling pin doesn't touch and stick to the dough.
- Now, lift the wax paper or Seran Wrap off the red dough. Invert the plain dough on top of the red dough.
- Cut dough in half so you have 2 (12 x 4-inch) rectangles.
- Roll up each rectangle in jelly-roll fashion and as you do so, remove the wax paper or Seran Wrap that is on the bottom of the red dough. Start at the long side. Wrap each log in Seran Wrap.
- Chill about an hour.
- Preheat oven to 350 degrees. If using dark pan, preheat oven to 325 degrees.
- Remove dough from refrigerator and unwrap.
- Cut dough into 1/4 inch slices.
- Bake for 6-7 minutes or until set; cool slightly on pans, then remove to racks to cool completely. Note: 6 minutes will give you a chewier cookie.

FIG DROP COOKIES
This is what I ended up with from playing with a recipe from a library book. I think they ended up pretty good. Sweet and chewy with texture from the fig and pecans. I plan to play with it more to see if applesauce can replace some of the butter and if less sugar can be added or if Splenda can be used. Feel free to try them how you like.

- Preheat oven to 350. Grease cookie sheets.
- Place figs in a small saucepan and cover with water. Bring to a boil and boil for 10 minutes. Drain and chop finely.
- In a large mixing bowl; cream butter, gradually beat in sugar, beating until light and fluffy. Add egg, molasses and vanilla; beat well.
- In a medium mixing bowl; sift together flour, baking soda, salt, cinnamon, and ginger. Stir in pecans and figs until well coated.
- Stir flour mixture into creamed mixture in increments until well blended.
- Drop dough by tablespoonfuls 1-2 inches apart onto greased cookie sheets. Bake for 10-12 minutes until lightly browned.
- Cool slightly on cookie sheets; remove to wire racks or flattened paper bags to cool completely.

ICEBOX PINWHEEL COOKIES
Notes about the recipe: To make these even fancier, you can roll the whole roll in coarse sugar before chilling. These keep in the freezer up to three weeks.

- Sift the flour, baking powder, and salt together and set aside.
- In a mixer with a paddle attachment cream the butter well; then add the sugar and continue creaming until light and fluffy. Add the eggs 1 at a time and then the vanilla.
- On the low setting, add the dry ingredients and mix just until combined. Divide the dough in half and return half the dough to the mixer. Add the warm melted chocolate and mix to combine. Shape both pieces of dough into 4 by 4-inch square, and wrap them in plastic wrap and chill for 30 minutes.
- Cut each square into 4 strips then place them on a sheet pan and keep chilled while you roll out the dough. Between pieces of parchment paper, roll out a piece of chocolate dough into a rectangle 6 by 7 inches (have a ruler nearby). Roll a piece of vanilla dough out into a 6 by 6-inch square. Peel off the top pieces of parchment from both doughs and flip the vanilla dough onto the chocolate, allowing 1/2-inch border of chocolate dough around the top and bottom. Press the 2 doughs together lightly with a cake pan or other flat pan. Peel off the top piece of parchment and fold the 1/2-inch of over hanging chocolate dough up and over the vanilla dough. Use the parchment to roll up the dough into a tight pinwheel. Wrap in plastic wrap and chill 4 to 5 hours (roll the dough a couple times the first hour so it doesn't develop a flat side). Repeat with the remaining pieces of dough.
- Preheat the oven to 350 degrees F.
- Butter a sheet pan. Unwrap the roll and cut into 1/4-inch slices. Place them 1 1/2 inches apart on the sheet pan and bake for 9 to 11 minutes.

- Now, once the cookie dough is chilled, it’ll be easier to work with. Unwrap the dough on floured surface and roll into 14x11in (35x28cm) rectangle. Spread half of the fruit filling evenly over the dough and roll it from the short end into tight log. Do the same thing with the other half of dough and filling. Wrap the logs with plastic wrap again and chill for another 30 minutes, or overnight.
- Preheat the oven to 350°F (175°C). Then cut the log into ¼-inch-thick (0.5cm) disks and place the cookies at least an inch apart on a baking sheet lined with parchment paper, or silicone mat. If the rolls are flattened on one side, just gently squash it to form into a round. Bake for 15 minutes. Cool the cookies on the sheets for 3-5 minutes and transfer them to a wire rack to cool completely.
