3 pounds boneless beef chuck-eye roast, trimmed and cut into 1 1/2-inch cubes
Salt and pepper
2 tablespoons vegetable oil
2 onions, minced
3 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1/4 teaspoon cayenne pepper
4 garlic cloves, minced
2 (15-ounce) cans tomato sauce
1/4 cup red wine
2 cups shredded cheddar cheese
12 (6-inch) corn tortillas

Steps:

  • 1. BROWN BEEF Adjust oven rack to lower-middle position and heat oven to 300 degrees. Pat beef dry with paper towels and season with salt and pepper. Heat 1 tablespoon oil in large Dutch oven over medium-high heat until just smoking. Cook half of beef, turning occasionally, until well browned all over, about 8 minutes. Transfer to large bowl. Repeat with remaining oil and beef. 2. COOK AROMATICS Pour off all but 1 tablespoon fat from pot. Add onions and ½ teaspoon salt and cook over medium heat until softened, about 8 minutes. Stir in chili powder, cumin, coriander, cayenne, and ¼ teaspoon pepper and cook until spices darken, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in tomato sauce and wine and bring to boil. 3. BRAISE BEEF Add browned beef, along with any accumulated juices, to pot. Transfer pot to oven and cook, covered, until meat is fork-tender, 2 to 2½ hours. Transfer beef to large bowl. Strain sauce through fine-mesh strainer, discarding solids, and set aside. (You should have about 2 cups sauce.) 4. MAKE FILLING Increase oven temperature to 375 degrees. Spread ¾ cup sauce over bottom of 13- by 9-inch baking dish; set aside. When beef is cool enough to handle, shred into bite-sized pieces. Add 1 cup cheese and additional ¼ cup sauce and toss to combine. 5. ASSEMBLE Spray tortillas on both sides with cooking spray and arrange on rimmed baking sheet. Bake until they are warm and pliable, about 1 minute. Arrange warm tortillas on work surface. Place 1/3 cup beef mixture in center of each tortilla. Roll tightly and arrange, seam-side down, in prepared baking dish. 6. BAKE Pour remaining sauce evenly over enchiladas and sprinkle with remaining cheese. Cover with foil and bake until cheese is melted and enchiladas are heated through, 20 to 25 minutes. Serve. ASSEMBLING ENCHILADAS Sandwiching the filled, rolled tortillas between layers of sauce is a key to an integrated, well-seasoned dish. 1. Spread 3/4 cup of sauce evenly over bottom of dish. 2. Fill tortillas, roll tightly, and place seam-side down over sauce in baking dish. 3. Pour remaining 1 cup sauce over enchiladas to coat evenly. 4. Sprinkle enchiladas with cheese and cover dish tightly with foil before baking.

if you like mexican food you'll love this dish! i learned how to make enchilladas this way from my mom who learned from my grandma. i usually make a whole tray & then my boyfriend takes leftovers to work & brags to everyone about how good it is!! another traditional way to serve this is for breakfast with a fried egg on top (omg, heaven!) i usually make the full fat version but see the note at the bottom for a low fat version that still tastes great!

2 lbs chicken breasts
1 tablespoon sea salt
1 tablespoon garlic powder
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon sage
1 tablespoon lemon juice
2 bay leaves
2 cups white onions, diced
18 corn tortillas
1 cup vegetable oil, divided
3 cups red chili sauce (i use Red Chili Sauce or la victoria enchillada sauce)
1 lb sharp cheddar cheese, shredded
lettuce (optional)
tomatoes (optional)

Steps:

  • Cut chicken into small pieces and add enough water (or chicken broth) to cover.
  • Season water with sea salt, garlic powder, chili powder, cumin, oregano, sage, lemon juice & bay leaves.
  • Some of the seasonings might seem like a lot but when you're boiling you have to make the water strong so the flavor gets into the chicken.
  • Bring to a boil & cover, you don't want to boil too hard or all your water will evaporate.
  • Let boil for 60 minutes or until chicken falls apart easily.
  • While chicken is boiling, sauté onion in a small skillet, remove from skillet & set aside.
  • Using the same skillet, add ½ cup oil & heat to medium/high, sprinkle with some salt.
  • fry corn tortillas until lightly browned but not crispy (about 10 seconds per side), add more oil if needed until all tortillas are cooked.
  • Once chicken is done reserve 2 cups chicken broth and shred chicken.
  • Preheat oven to 350.
  • Put chili sauce in a wide bowl or sauce pan.
  • Using tongs, dip cooked tortillas in chili sauce and layer the bottom of a 6x9 size casserole dish (should fit 2 across & 3 down).
  • Add a layer of chicken, cheese, onions and sprinkle with chicken broth (I usually use a turkey baster).
  • Repeat until the dish is full...this size dish should fit 3 layers. (tortilla, chicken, cheese, onion & broth).
  • Sprinkle top of dish with more chili sauce and bake at 350 for 20-25 minutes. usually i turn the broiler on for a minute or two at the end to get the top crispy.
  • Let stand 5 minutes before serving.
  • i serve with shredded lettuce & diced tomato topped with taco sauce.
  • Note: for a lower fat version, use low fat cheese & heat tortillas on the stove top instead of frying....the dark rings give them more flavor than steaming. For smaller dishes cut tortillas in half to fit one single later across the bottom.

Ancho- Guajillo/New Mexico Enchilada Sauce
12 dried ancho chiles (whole bag) stemmed, seeded, torn into pieces
7 dried guajillo chiles, whole bag (I used New Mexico) stemmed, seeded, torn into pieces
6 cups of water
5 garlic cloves, peeled
1/2 tsp dried mexican oregano
2 teaspoons salt
1 tsp. cumin
1 tsp. sugar
Filling:
1 lb. hamburger
1 lb of sausage (suggest going with 1/2 lb, if so then do 1.5 lb of burger)
1/2 jalepeno
1 diced onion
3-4 garlic minced
optional 1/2 tsp cumin
salt/ pepper

Steps:

  • Heat chile pieces in hot large skillet for about 1 minutes, till fragrant/ blister. Add 6 cups of hot water. Soak chiles until tender at a a simmer, be sure they are submerged for 15 minutes. Let cool for 15 more minutes. Drain chiles. Working in batches if necessary, carefully puree chiles, garlic and 2.5 C of clean water in blender until very smooth. Towards the end add the seasonings. Adjust seasonings as needed. Strain by pressing through sieve. Simmer sauce for 15 minutes or so add water or chicken broth as needed and check seasonings. Can make this a day ahead and refrigerate. Filling Saute hamburger, sausage, diced onion, jalepeno add garlic towards the end. Season salt/ pepper. Assembly: Preheat oven 350. Take about 1/3-1/2 of sauce pour into a bowl. Place flour tortilla in sauce and lightly rub with sauce. Lightly fry in a teflon pan with a small amount of canola oil. Add oil little by little as needed. Place meat mixture in middle, add some cheddar cheese and roll up. Put in pan with seam down. Place filled pan in 350 degree oven for 15-30 minutes.

This is a combination of all the different Enchiladas that I have tasted over the years, I just put together all the best parts and created the perfect (how we like them) Enchiladas.

3 tablespoons olive oil
2 tablespoons plain flour
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon ground cumin
2 cloves garlic, crushed
700 ml passata (a tomato puree)
250 ml chicken stock
800 g beef mince
1 tablespoon oil
1 onion, chopped
1 red pepper, chopped in small dice
1 green pepper, chopped in small dice
8 flour tortillas
400 g cheddar cheese, grated

Steps:

  • First make the sauce.
  • Heat oil in a saucepan.
  • Add flour, chilli powder, oregano and cumin and cook over a medium heat, stirring constantly, until golden brown.
  • Add garlic and passata and mix to combine.
  • Stir the stock into the tomato and chilli mixture and bring to the boil, reduce heat and simmer for 10 minutes, or until sauce reaches the required consistency.
  • Turn off heat.
  • (The sauce can be stored in an airtight container in the fridge for up to 2 weeks.) Make the enchiladas.
  • Brown the mince in a dry frying pan (or wok) and then put the mince in a colander to drain off any excess fat.
  • In the same pan heat the oil and fry the onion and peppers until soft.
  • Return the cooked mince to the pan and add approximately⅓ of the sauce and stir to combine the mixture.
  • You can add more chilli powder to the meat at this point if you want to spice it up more.
  • Add salt and pepper to taste.
  • Assemble the enchiladas.
  • Divide the meat and sauce mixture equally between the 8 flour tortillas, fold in the sides and secure with a cocktail stick to stop them from unfolding.
  • Place in a lightly greased baking tin.
  • You can usually only fit four in a tin; use 2 tins or freeze some of the enchiladas.
  • Pour the remaining sauce across the middle of the enchiladas and then remove the cocktail sticks.
  • Put the grated cheese over the part of the enchiladas covered by the sauce.
  • Cover loosely with tin foil and bake in the oven at Gas Mark 5 for 30 minutes.
  • Serve with salad, saffron rice and french stick.
  • To freeze individually place each enchilada on a piece of tin foil, add sauce, remove cocktail stick then wrap in the foil and place in the freezer.
  • To cook unwrap the enchilada while still frozen and place in a baking tin, let the enchilada defrost and then add grated cheese, cover with foil and cook at Gas Mark 5 for 30 minutes.

2 (12 ounce) cans enchilada sauce
30 corn tortillas
12 eggs

  • combine tomato juice, enchilada sauce and peanut butter in large pan on medium heat stirring until peanut butter dissolves.
  • turn heat to low and let simmer for 10 minutes.
  • grate 4 cups cheese or more as needed while sauce simmers.
  • season sauce to taste.
  • fry all 12 eggs keeping yolks runny and warm.
  • dunk corn tortillas individually and stack three to a plate and top with an egg and cheese.
