GRANDMA'S SAUSAGE AND RICE STUFFING

Steps:
- Preheat the oven to 350˚ F. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausage and cook, breaking up the meat, until browned; remove with a slotted spoon to a large bowl. Add the remaining 1 tablespoon olive oil, then add the onion, beef and veal, season with a big pinch of salt and cook, stirring, until browned, about 10 minutes; add to the bowl with the sausage.
- Meanwhile, cook the rice according to the package directions until al dente. Combine the rice, meat mixture, mozzarella, Parmesan and chicken broth in a large bowl.
- Place the mixture in a 9-by-13-inch baking dish. Bake until the cheese is melted, about 20 minutes.
DIRTY RICE WITH SMOKED SAUSAGE

- Make the rice, in a medium saucepan combine the rice and chicken stock. Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.
- Meanwhile heat oil in a heavy-bottomed saute pan over medium-high heat. Brown the sausage. Once browned, add the garlic, onion, celery, and green bell pepper. Cook until softened, about 5 minutes. Season with salt and pepper. Add 1 cup chicken stock and cayenne. Cook until the stock has reduced a little. Add the cooked rice and parsley and stir thoroughly. Taste and season with salt and pepper, if necessary.

Steps:
- Use a food processor to finely chop the onion and celery (or you can do it by hand).
- Brown sausage, celery and onions in a large skillet, drain off fat.
- Place in large casserole dish.
- Mix dry soup mix with the 9 cups of boiling water and cook for 5 minutes.
- Mix all ingredients together and bake covered at 325F for 1½-2 hours.

SPICY SAUSAGE RICE
I found this little gem on the Love Food Hate Waste website, tried it at home and realized how great it is! The taste is amazing, and you can alter how spicy it is by what type of salsa you add. This recipe is also great for families, if you want to use up some of your leftover sausages! Thanks, Love Food Hate Waste! NOTE: For the stock, I use whatever flavor stock that my sausages are, beef/chicken etc. If you aren't into too much of a spicy kick, try mild salsa. Remember, that stock is the stock powder + water, not just the powder.

- In a frypan (skillet), add the oil and place over medium heat.
- Add the onion and pepper, and sauté for 5 minutes (or until tender).
- Stir in the uncooked rice and the stock.
- Simmer over low heat for 20 minutes, covered or until rice is tender and has absorbed all (or most) of the liquid.
- Stir in the chopped sausages and salsa, simmer over medium heat for 5 minutes or until sausages are hot.
- Add the chopped parsley and serve.

- Add the Water To Pot, And Salt.
