Serve with warm maple syrup, sour cream or my favorite, applesauce. You can make them big, like a pancake or small for appetizers. One of my "comfort foods." Enjoy! xoxo

Number Of Ingredients 7

1 (17 oz) can of whole kernel corn
1 Tbsp (measuring) tablespoon baking powder
2 Tbsp heaping (regular) tablespoons of sugar (or sugar substitute)
2 Tbsp heaping (regular) tablespoons of flour
1 egg
1/2 tsp salt
3 c oil / 1 stick butter - more or less as needed

Steps:

  • 1. Drain corn well and combined with all ingredients. Mix well and let stand for approximately 15 minutes.
  • 2. Heat frying pan (griddle or caste iron griddle/pan) on medium heat. Add oil and one pat of butter to coat the bottom of pan/griddle. When oil/butter is hot and starting to sizzle, add corn fritter batter and fry on both sides to a golden brown.
  • 3. (Depending on the size you want the corn fritter to be, depends on the measuring vessel to use.) Drain on paper towels.

eight ears corn, husks and silk removed
three large eggs, separated
2 tablespoons flour
3/4 teaspoons salt
1/4 teaspoons pepper
pinch cream of tartar
1 teaspoon sugar
6 tablespoons vegetable oil
2 tablespoons minced fresh chives

Steps:

  • 1. adjust an oven rack to the middle position and heat the oven to 200°. Set a wire rack over a rimmed baking sheet and set aside.
  • 2. Grate each ear of corn over the large holes of a box grater into a bowl. Using the back of the butter knife, scrape any remaining milk from the cob into the bowl.
  • 3. Whisk the egg yolks, flour, salt and pepper into the corn mixture.
  • 4. In a medium bowl, beat the egg whites and cream of tartar with electric mixer on medium low speed until foamy. Increase the speed to medium-high, gradually add the sugar, and whip until the whites form stiff peaks, 1 to 3 minutes. Gently fold the whipped egg whites into the batter until mixed.
  • 5. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat until shimmering. Drop six heaping tablespoons of batter into the oil, then flatten each into a 2 1/2 inch diameter circle with the back of spoon. Cook until puffed and golden brown on both sides, about two minutes, flipping halfway through. Transfer the fritters to a paper towel lined plate, then transfer to the prepared wire rack and keep warm in the oven. Repeat with remaining oil and the remaining batter in five batches. Sprinkle with chives and serve. Serves 6 to 8

This one has been in our family for as long as I can remember. A long time ago my grandma used to use fresh corn, but as the family got BIG and there were a lot of mouths to feed (more to make too) she went to can corn just to make it faster. I cut the recipe in half.

2 (15 ounce) cans whole kernel corn
4 eggs, slightly beaten
4 tablespoons milk
3 tablespoons butter, melted
salt and pepper (optional)
flour

Steps:

  • Combine corn, eggs, milk, butter, salt and pepper to taste, if using.
  • Add flour gradually, just enough to hold mixture together.
  • Amount of flour depends on size of eggs (and weather according to my grandma!).
  • Heat 1/2 inch of oil in frying pan.
  • Form patties whatever size you'd like, I do small ones so my kids can hold them.
  • Fry in hot oil until golden brown.
  • Serve as side dish OR if you left out the salt and pepper serve with syrup on the side.
  • You can also dust with powdered sugar.

6 slices bacon
8 large cobs fresh corn, preferably white, shucked and cleaned
Kosher salt and freshly cracked black pepper

Steps:

  • In a large skillet, (seasoned cast iron does well here) cook the bacon over medium-high heat until crisp. Turn off the heat and transfer the bacon to a paper towel lined plate. Reserve the drippings in the pan.
  • On a cutting board, cut the stalk ends of the corn cobs to make a flat surface; stand them up and shave the corn from the cobs with a sharp chef's knife. Return the skillet to medium-low heat, and add the corn kernels. With the back of the knife, firmly scrape the cobs over a shallow plate to extract as much liquid (milk) as possible and add it to the skillet.
  • Season corn lightly with salt and pepper and cook until broken down and creamy, about 30 to 45 minutes, stirring often; add water if the pan gets too dry.
  • Serve warm or at room temperature.

1/4 c milk
1/2 Tbsp butter
1 c canned corn

Steps:

  • 1. Mix dry ingredients together
  • 2. Gradually add milk and 1 egg well beaten
  • 3. Beat well
  • 4. Add melted butter and corn, mix
  • 5. Refriderate till ready to us
  • 6. Pour batter onto non-stick pan, cook the same as pancakes

3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon white sugar
1 egg, lightly beaten
½ cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Steps:

  • Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
  • In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
  • Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

1 cup all-purpose flour
1 1/2 teaspoons baking powder
2 eggs
1/3 cup milk
1 1/2-2 cups leftover corn or 1 (15 ounce) can corn, drained
1 tablespoon butter, melted
oil (for frying)
salt and pepper

Steps:

  • Combine flour and powder in a large bowl.
  • In a medium bowl, beat eggs and milk.
  • Stir in corn and butter.
  • Stir gradually into dry ingredients until just blended.
  • In a deep fryer, electric frying pan or chicken fryer, heat oil until 375 degrees.
  • Drop batter into heaping teaspoonfuls into hot oil and fry for 2- 3 minutes.
  • You can also do this using less oil in a skillet, just flatten them a bit with the back of the spoon and then turn them like pancakes.
  • Drain on paper towels.
  • Some people put confectioner's sugar or syrup on these, we eat them plain.
