2 pounds ground beef
1 cup chopped onion
1 cup chopped celery
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 can (14 ounces) bean sprouts, undrained
1/4 cup reduced-sodium soy sauce
1/2 teaspoon pepper
1 cup uncooked long grain rice
1 can (8 ounces) sliced water chestnuts, drained
2 cups frozen peas, thawed
1 can (5 ounces) chow mein noodles

Steps:

  • In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in the soup, bean sprouts, soy sauce and pepper. Bring to a boil. Pour into a greased 13x9-in. or 3-qt. baking dish. Stir in rice and water chestnuts., Cover and bake at 350° for 30 minutes. Uncover; stir in peas and sprinkle with noodles. Bake until heated through, 15-20 minutes longer.

3 tablespoons butter
2 carrots, chopped
2 celery stalks, chopped
1 onion, chopped
3 tablespoons all-purpose flour
1 tablespoon tomato paste
32 ounces vegetable broth
1 (14.5-ounce) can diced tomatoes
1 large white potato, cubed
1/2 (10-ounce) box frozen corn
1/2 (10-ounce) box frozen peas
5 ounces fresh green beans, cut into bite size pieces
2 tablespoons freshly chopped parsley leaves
Peanut oil, to fry
1 1/2 cups all-purpose flour
1 tablespoon seasoning salt
1 teaspoon ground black pepper
4 (1-inch thick) bone-in center cut pork chops

Steps:

  • In a large pot over medium heat, melt butter and saute carrots, celery and onion until softened, about 6 minutes. Add the flour to the vegetables and blend well. Cook the flour until it achieves a slight blonde color. Next, stir in the tomato paste and allow to slightly cook, about 1 to 2 minutes. Pour in vegetable broth while stirring and bring soup to a boil. Reduce heat and add the can of diced tomatoes and the potatoes. Simmer until potatoes are cooked through, about 20 minutes.
  • Meanwhile, preheat the peanut oil in an electric fryer or large pan fitted with deep-fry thermometer to 325 degrees F. In a large casserole dish, mix together flour, and season with salt and pepper. Dredge chops in flour mixture, patting excess off. Place chops, 2 at time, in fryer and cook until cooked through, about 6 minutes. Cool slightly and remove to a paper towel lined sheet tray.
  • Add the cooked chops to soup and simmer another 30 minutes, or until the meat falls off the bone. During the last 10 minutes of cooking, add the corn, peas, and green beans. Ladle soup into individual bowls, top with a pork chop and sprinkle with parsley.

1 pound elbow macaroni
1 tablespoon vegetable oil
2 tablespoons butter
1 large onion (chopped, about 1 1/2 cups)
Optional: 1 green bell pepper (chopped)
2 pounds ground beef
2 cloves garlic
1 teaspoon garlic powder
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
3 tablespoons tomato paste
1 teaspoon sugar
1/2 teaspoon ground black pepper
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Cook the pasta in boiling salted water following the package directions.
  • Drain in a colander and rinse under hot water. Set aside.
  • In a large, deep skillet or saucepan, heat the vegetable oil and butter over medium heat. Add the onion and bell pepper, if using. Cook, stirring until onion is softened and edges are lightly browned.
  • Add the ground beef and cook, stirring and breaking up, until the beef is cooked through and no longer pink.
  • Add the garlic and garlic powder and cook, stirring for 1 to 2 minutes longer.
  • Stir in the crushed tomatoes, diced tomatoes, tomato sauce, tomato paste, sugar, and pepper. Cook, stirring, until the sauce mixture begins to boil. Taste and add salt, as needed. Simmer for 5 to 10 minutes.
  • Add the drained macaroni to the sauce, mix well, and heat through. Serve and enjoy.

1 cup diced onion
1 cup diced celery
1 cup hot water

2 tablespoons cornstarch
2 teaspoons soy sauce
1 teaspoon white sugar

Steps:

  • Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
  • In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.

Steps:

  • Brown ground beef. In large saucepan add meat, onions, celery, soups, soy sauce and water. Heat to boiling. Remove from heat. Pour into large casserole with cover. Stir in raw rice, mixing well. Cover and bake at 375 degrees F for 1 1/2 hours. Uncover, top with chow mein noodles and bake 10 minutes longer.

Stir in prepared meat mixture. Cover the dish and bake at 350^ for 1 hour and 15 minutes, stirring occasionally, adding water if necessary. Uncover and sprinkle with the noodles. Return to oven and bake uncovered for another 10 minutes.

  • In a skillet, brown beef; drain. Dissolve bouillon in 1-1/2 cups boiling water; add to skillet. , Combine remaining water with cornstarch; stir into beef mixture. Grandma's chop suey recipe is a fabulous way to use up whatever you have on hand to make a flavorful meal. This quick stir fry is perfect for dinner any day of the week.

2 tbsp butter
1 small white onion (peeled & diced)
4 stalks celery (thinly sliced)
1 tbsp extra virgin olive oil
2 -2 1/2 cups cubed, cooked pork
1 tbsp minced garlic
salt & pepper (to taste)
1 1/2 tbsp soy sauce
1/2 tbsp ginger paste
1 cup chicken broth
1 14 oz can bean sprouts (drained)
1/2 tsp sesame oi

Steps:

  • Add the butter to large skillet set over medium high heat. Once melted, stir in the onion & celery. Cook until the onions are translucent. Transfer the veggies to a waiting bowl or plate.
  • Add the oil & pork to the hot skillet. Stir the pork, cooking just until lightly crisped. Reduce the heat to medium.
  • Return the veggies to the skillet, and stir them in to evenly combine.
  • Add all of the remaining ingredients to the skillet, stirring to evenly incorporate.
  • Cover the skillet with a lid and continue cooking the mixture until it's cooked down and taken on all the flavors, roughly 8-10 minutes, stirring occasionally & scraping the bottom of the pan as you do. Add water or broth, as needed, if too much liquid cooks out of your pan.
  • Serve the chop suey over a bed of steamed white rice, and enjoy!
