Ingredients

1 cup shortening
2 cups sugar
2 large eggs, separated, room temperature
1 cup buttermilk
5 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
Pinch salt
Juice and grated zest of 2 medium navel oranges
ICING:
2 cups confectioners' sugar
1/4 cup orange juice
1 tablespoon butter
1 tablespoon grated orange zest

Steps:

Preheat oven to 325°. In a bowl, cream shortening and sugar. Beat in egg yolks and buttermilk. Sift together flour, baking powder, soda and salt; add to creamed mixture alternately with orange juice and zest. Add egg whites and beat until smooth. , Drop by rounded teaspoonfuls onto greased cookie sheets. Bake until set, about 10 minutes. Remove to wire racks to cool completely., For icing, combine all ingredients and beat until smooth. Frost cooled cookies.

Ingredients

1/2 cup shortening
1 cup sugar
2 large eggs
1/2 cup orange juice
1 tablespoon grated orange zest
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
ICING:
2 cups confectioners' sugar
1/4 cup orange juice
2 tablespoons butter, melted
Orange paste food coloring, optional

Steps:

In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and zest. Combine the flour, baking powder and salt; gradually add to the creamed mixture. , Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges begin to brown. Remove to wire racks to cool. In a small bowl, combine icing ingredients until smooth; drizzle over cooled cookies.
