GRANDMA ASHWORTH'S WATERMELON PICKLE

Steps:
- Dissolve salt in a large bowl with enough water to cover the trimmed watermelon rind cubes (all green and red parts removed). Soak the watermelon rind overnight in the salty water. Drain, rinse, and place the rind cubes into a large saucepan over medium heat. Bring to a boil, reduce heat to a simmer, and cook until tender, about 10 minutes. Drain the rind in a colander set in the sink.
- Mix the sugar, vinegar, and 2 cups of water in a large bowl, stirring until the sugar has dissolved. Place the lemon, cinnamon, and cloves into a a piece of cheesecloth, and tie the corners together to make a spice bag. Place the spice bag into the pot, and stir in the watermelon rind pieces. Bring to a boil, reduce heat to a simmer, and cook until the watermelon rind becomes translucent, about 35 minutes. Remove the spice bag.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the watermelon pickle into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes, or the time recommended for your area.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all).

WATERMELON PICKLES
This recipe was given to me by a Grand Southern Lady who wrote on the recipe card-they's about the same-I like this best. I like them too.

Steps:
- Slice the outer green and inner pink part of the rind.
- Place in a large glass bowl and cover with a brine made from the 3/4 cup salt and 3 quarts water.
- Cover with ice and let stand 6-7 hours.
- Drain, rinse and drain again.
- In a large pot add the rind and just cover with cold water.
- Cook until JUST tender-around 10 minutes.
- Dont overcook.
- Drain.
- Tie spices in a spice bag.
- Combine sugar, vinegar, 3 cups water and spice bag and boil 5 minutes.
- Remove spice bag-reserve.
- Pour syrup over rinds and add lemon slices.
- Let stand overnight at room temp.
- Heat rind and lemon in syrup and boil.
- Cook until rind is translucent-around 10 minutes.
- Pack hot into clean hot jars.
- Add 1 piece of cinnamon from the spice bag to each jar.
- Cover with boiling syrup leaving 1/2 inch head space.
- Process in a boiling water bath at altitudes up to 1000 feet.

GRANDMA HALL'S SWEET CUCUMBER PICKLES
Passed down to my grandmother from Aunt Alpha. These Pickles are the bomb. I can remember as a young child going to my grandmother's house and i just couldn't wait to get my hands on the jar of sweet pickles. They are like Lays Potato Chips! You can't eat just one. - 1st day-.
- Slice cucumbers peeland de-seed and soak in 2 gallons of water with 1 cup lime.
- 2nd day-.
- Rinse cucumbers good and mix the sugar and other spices and rinsed cucumbers in vinegar mixture and soak for 12 hours. Cover rinsed cucumbers with ice while mixing vinegar mixture. Be sure to drain cucumbers well, before adding to liquid.
- 3rd day-.
- Drain vinegar off cucumbers and heat to boiling, then add cucumbers and cook 20 minutes. Pack in jars and seal while hot. Can use green food coloring if desired.
