FRIED CORN
This is another of my grandmother's recipes. Back when she made this, times were tough, and so she just used bacon drippings that she saved from the morning's breakfast. But now, if you'd like, you can add 4 slices of bacon or so instead of the drippings. I posted the recipe exactly as she made it.

Steps:
- Over a large cast-iron skillet (or a nice, heavy skillet), cut and scrape the corn off the cobs so that you get the milky corn liquid. Add the onions to the skillet. Turn the heat to high.
- Add the bacon drippings and 1/4 cup of the butter to the skillet. Add salt and pepper, to taste. Cook for 3 minutes, browning the corn before stirring. Reduce the heat to medium.
- Stir in the milk and continue cooking until the milk is absorbed. Add the remaining 1/4 cup of butter. Cook until the butter is melted and mixed throughout.

- 1. SHUCK AND DE-SILK THE CORN AND RINSE WELL. CUT CORN FROM THE COBB SCRAPING TO GET IT ALL STARTING AT THE LARGEST END AND FIRMLY APPLY PRESSURE FROM TOP TO BOTTOM, THIS WILL RELEASE THE MILK FROM THE CORN.
- 2. IN A LARGE BOWL ADD PEPPERS, ONIONS, PAPRIKA, SUGAR, SALT AND PEPPER COMBINE WITH CORN MIXING WELL.
- 3. IN A LARGE SKILLET MELT MARGARINE AT LOW HEAT, ADD CORN MIXTURE AND STIR.AFTER ABOUT A FEW MINUTES ADD THE ROUX MIXTURE, REMEMBER FRIED CORN IS A RECIPE THAT YOU CAN'T LEAVE ALONE IT REQUIRES LOTS OF STIRRING THAT IS VERY IMPORTANT OR IT WILL BURN.SIMMER ON MEDIUM LOW HEAT FOR ABOUT 1 HOUR. SKILLET CAN BE COVERED WHILE SIMMERING.
MY GRANDMA LOGAN'S & JAMES'S FRIED CORN
This is my Grandma Logan's Fried Corn recipe as I remember it. My brother-in-law James use to make the best fried corn, also. I dedicate this recipe to both of them. Steps:
- 1. slice corn off the cobb. scrape milk from cobb...if you have a lil' silk left on the cobb, it's quite OK!!!
- 2. fry fat back meat until crispy. remove meat
- 3. add corn, meat of a couple pieces of fat back, salt and pepper to pan. simmer for 8-10 minutes. remove and add butter. allow butter to melt
- 4. bowl up, spoon up and enjoy!
GRANDMA ADDIE'S FRIED CORN
I felt special growing up in a huge Italian family of cooks from Philadelphia on my mom's side and just as happy to know my dad's mom from Alva, Oklahoma. The city family taught me all there was to know about baking and pasta making and Mediterranean cooking and the country side was all about fried chicken, biscuits and gravy and country ham with red-eye gravy and Grandma Addie's fried corn. When I make this corn people want the recipe and I am almost embarrassed to tell them how easy it is.

Steps:
- Fry bacon in a heavy skillet until crisp.
- Remove bacon and set aside, retaining 2 tablespoons bacon drippings in skillet.
- Cook onions in drippings for about 5 minutes.
- Add corn and bell peppers to onion.
- Cook for 3 to 4 minutes or until just soft.
- Add parsley, milk, salt and pepper to veggies, mix well.
- Sprinkle bacon pieces on top of vegetables.
