310 g all-purpose flour
170 g sugar
1 tablespoon baking powder
1/8 teaspoon salt
50 g ground almonds
100 ml Grand Marnier
100 ml milk
100 ml oil
1 teaspoon almond extract
2 eggs
200 g cranberries (fresh or frozen)
150 g white chocolate, chopped
40 g slivered almonds
30 g demerara sugar

Steps:

  • Preheat oven to 200C (180C for fan assisted).
  • Line a muffin tin with 12 liners.
  • Sift flour, sugar, baking powder and salt into a large bowl. Stir in the ground almonds.
  • Combine wet ingredients in a medium-sized bowl, and mix thoroughly with a fork.
  • Add the wet ingredients to the dry, and fold together with a large metal spoon until just moistened. Very gently fold in the cranberries and the white chocolate.
  • Spoon into prepared muffin cups, and sprinkle evenly with almonds and demerara sugar.
  • Bake for 20-25 minutes until the tops spring back gently when pressed.
  • Cool on a wire rack.

1/4 cup Grand Marnier
3/4 cup canola oil
2 cups chopped fresh cranberries
2 1/2 cups all-purpose flour
1 cup whole wheat flour
1 1/2 cups sugar
2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 tablespoons chopped orange zest
4 egg whites

Steps:

  • Preheat oven to 400°.
  • Combine the orange juice, Grand Marnier, and the oil and set aside.
  • In a large bowl, combine the flours, sugar, baking powder, salt and orange zest.
  • In another large bowl, beat the egg whites until frothy.
  • Combine the juice mixture with the beaten egg whites.
  • Add the egg mixture and the cranberries to the flour mixture, stirring just until moist.
  • Fill muffin pans lined with paper liners, about 3/4 full.
  • Bake for 25 minutes or until golden brown and puffed.

Readers wouldn't stop requesting the recipe. Feel free to use any orange flavored liquor you have or hand. You can't make a mistake with this side dish.

2 cups sugar
1 (1 lb) bag fresh cranberries
2 cups water
4 tablespoons Grand Marnier (to taste)
1 tablespoon grated orange rind
1 tablespoon fresh lemon juice
2 tablespoons sugar

Steps:

  • Combine 2 cups sugar and water in a large saucepan. Bring to a boil and boil 5 minutes.
  • Add washed cranberries. Boil 10 minutes or until almost jelled. Remove from heat.
  • Fold in Grand Marnier, orange zest and lemon juice. Sprinkle with 2 tablespoons sugar. Fold sugar into mixture.
  • Chill or freeze until ready to use.

2 cups dried cranberries
1/2 cup Grand Marnier (orange liqueur)
1/2 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange yogurt
GLAZE:
2 tablespoons Grand Marnier (orange liqueur)
1-1/4 to 1-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., In a microwave-safe bowl, toss cranberries with Grand Marnier; microwave, covered, on high just until heated through. Cool slightly., In a large bowl, beat butter, cream cheese and sugar until blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, salt and baking soda; add to butter mixture alternately with yogurt, beating well after each addition. Drain cranberries; fold cranberries into batter., Transfer batter to prepared pan. Bake 55-65 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool completely., In a small bowl, mix Grand Marnier and enough confectioners' sugar to reach a drizzling consistency. Spoon over cake.

Here in the Pacific NW we have lots of fresh cranberries around the holidays and this is a must-have at our holiday meals. As a tip, I always put some foil on the bottom of the oven under this dish when I cook it, because it always seems to boil over and make a mess. This way, cleanup is easy.

1 1/4 cups sugar
2 tablespoons frozen orange juice concentrate, thawed
2 tablespoons Grand Marnier

Steps:

  • Preheat oven to 325ºF. Place cranberries in 8x8x2-inch glass baking dish. Sprinkle sugar, then orange juice concentrate over. Cover tightly with foil. Bake until juices form and cranberries are very soft, about 1 hour.
  • Uncover; mix in liqueur. Cover and refrigerate until very cold, about 4 hours. (Can be prepared 3 days ahead. Keep chilled.

  • Bring to a boil over high heat; reduce heat and cook at gentle boil until cranberries begin to pop.

  • When ready to serve, stir in pecans.
