GREAT GRAMMY'S MACARONI & CHEESE
This has been requested frequently enough that I will finally submit it. This is known as Great Grammy's mac & cheese thanks to my children. It's my grandmother's recipe. I spent a day watching very carefully & making notes. ;) I don't always bake it. Sometimes I just pour the cheese sauce over the macaroni & start eating! The dish I bake this in is a Corningware Cornflower 3 quart dish - it is square with high sides vs. rectangular like a smaller 9x13x2.

Steps:
- Preheat oven to 350°F Grease casserole dish. Cook macaroni in boiling, well salted water until al dente. Drain.
- Melt butter in top of double boiler. Add salt, ground mustard & flour, whick until smooth. Whisk in milk until smooth. Heat until thickened. *I will take the top of the double boiler & put it on direct heat BUT keep it low & do not stop stirring or it will burn & be ruined!*.
- Add cheese & whisk until melted.
- Put 1/2 cooked macaroni in casserole. Pour about 1/3 cheese sauce over macaroni. Stir well. Lay slices of American cheese over this. (4 slices fit my dish perfectly.) Add rest of macaroni & sauce. Stir carefully. Sprinkle top with Parmesan cheese to cover & some pepper to taste.
- Bake 1 hour until top is browned & bubbly.
UNBELIEVABLY DELICIOUS MACARONI PIE
This is a dish from my childhood that has taken me years to recreate. I think I've finally done it. I can't go to family dinners without it! In Jamaica, we use Scotch Bonnet peppers but you can use as much or as little hot peppers as you like. Feel free to vary the combination of seasonings until you find the combination that makes your taste buds dance. You can also cut the pie into little squares and serve them on toothpicks as an appetizer. And the best thing? It freezes very well and tastes even better as leftovers!

Steps:
- Cook the macaroni in salted water until it is well done but not soggy.
- Drain well.
- Meanwhile, place the onion, garlic, escallion, green pepper and hot pepper in a blender with a little of the milk and puree.
- Set aside.
- Take out 1 cup of the grated cheese and mix with the breadcrumbs.
- Set aside.
- Grease a 10"x6" casserole dish with a little bit of the butter.
- Heat oven to 350 degrees F.
- Mix the hot macaroni with the butter until all the butter is melted.
- Add the remaining cheese and all of the seasoning mixture and mix until the melted cheese begins to form a sauce.
- Once everything is well incorporated, add the egg and mix well.
- Pour mixture into the prepared baking dish and top with breadcrumb/cheese mixture.
- Pour remaining evaporated milk slowly over the top of the mixture, taking care not to let the dish overflow.
- Let stand for about 15 mins so that the milk is absorbed.
- Bake for about 30 mins or until the top is brown and crusty and the milk has been absorbed.
- Let stand for another 15 minutes before serving.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- Beat eggs and milk together. Pour half of the cooked macaroni into 9x13 inch baking dish. Cover macaroni with half of the cheese. Pour remaining macaroni into baking dish leaving a little room at the top. Cover with remaining cheese. Pour egg mixture over macaroni. Sprinkle with salt.
- Bake in a preheated over for an hour or until a knife inserted comes out clean.

- Boil the macaroni until soft. Do not overboil. Allow macaroni to cool.
- In a mixing bowl, mix the mayonnaise, mustard, ketchup, cheese, chopped onions, salt, black pepper, hot sauce, chopped sweet pepper, and onion powder.
- Beat the eggs and milk in a separate bowl.
- Mix the macaroni with the mayonnaise mixture.
- Place in a baking dish.
- Pour the egg and milk mixture over the macaroni, evenly. Garnish the macaroni with cheese and breadcrumbs. Sprinkle oregano over the breadcrums.
- Bake in oven for 30-40 minutes or until it it set.

GRAMMY'S MACARONI PIE
Steps:
- Preheat the oven to 350°F. Boil noodles, drain and rinse in cold water. Cut cheese into cubes.
- Use a 9x13 baking dish. Once noodles are drained, pour into the dish, add the cubed cheese, egg, butter, and fill the dish with milk until the pasta is almost covered. Mix well. Finish filling with milk until the noodles are covered. Sprinkle with salt and pepper if desired.
- Place into oven and cook approx. 1 hour.
