This is a delicious breadcrumb topping for haddock, scallops or cod. I have lightened it up by using light butter. The lemon and white wine provide a great flavor.

2 haddock fillets (or scallops) or 2 cod fish fillets (or scallops)
1/2 cup plain breadcrumbs
1 small lemon, juice of
1 tablespoon light butter, melted
Pam cooking spray
salt
pepper
garlic powder
1/2-3/4 cup white wine

Steps:

  • Preheat oven to 425.
  • Wash and dry fish fillets, then season with salt.
  • Meanwhile, mix breadcrumbs, melted butter, juice of a lemon, salt, pepper, and garlic powder.
  • You will need to spray some cooking spray on the breadcrumbs to make sure they are moist enough. The breadcrumbs should be forming into moist crumbs.
  • Place fish in shallow baking pan.
  • Pour the white wine around the fish, making sure it does not actually cover the fish.
  • Place the breadcrumb mixture evenly over the fish.
  • Put the fish(for haddock or cod) in the oven for about 10-12 minutes, until almost done.
  • You then may want to broil the fish for a minute or two just to crisp up the topping.

1 lb sourdough bread, 1 medium load, roughly torn
8 tablespoons unsalted butter, 1 stick, melted, divided
1 cup shredded cheddar cheese
3 teaspoons kosher salt, divided, plus more to taste
4 cups dry white wine, plus 1 tablespoon, divided
1 lb shrimp, 16/20 count, peeled and deveined
1 lb large scallops
1 lb jumbo lump crabmeat
2 cups half & half
3 tablespoons all-purpose flour
1 teaspoon worcestershire sauce
1 teaspoon paprika
1 tablespoon lemon juice
2 tablespoons ketchup
28 oz artichoke heart, 2 cans, drained and chopped
fresh chive, chopped, for garnish
lemon wedge, for serving

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Spread the bread in a single layer on a rimmed baking sheet and bake for 10 minutes, until lightly toasted. Let cool to room temperature. Leave the oven on.
  • Add the toasted bread to a food processor and pulse until finely ground. You should have about 4 cups (460 G) of bread crumbs.
  • In a large bowl, combine the bread crumbs, 4 tablespoons of melted butter, the cheddar cheese, and 1 teaspoon of salt and toss to combine. Set aside.
  • In a medium pot, combine 4 cups (960 ml) of white wine and a generous pinch of salt and bring to a boil over medium-high heat. Add the shrimp and cook until bright pink, about 1 minute. Use a spider or slotted spoon to transfer the shrimp to a colander to drain.
  • Return the wine to a boil. Add the scallops and cook until just opaque, about 2 minutes. Transfer the scallops to a colander to drain.
  • Chop the shrimp and scallops into bite-size pieces. Transfer to large bowl, along with the crab and 1 teaspoon of salt. Toss to combine.
  • In a liquid measuring cup or medium bowl, whisk together the half-and-half, 3 tablespoons of melted butter, the flour, Worcestershire sauce, paprika, lemon juice, ketchup, remaining tablespoon of white wine, and remaining teaspoon of salt.
  • Brush the remaining tablespoon of melted butter in a 9 x 13-inch (22 x 33 cm) baking dish.
  • Scatter the artichokes in an even layer over the bottom of the baking dish. Scoop the seafood mixture over the artichokes. Pour the sauce over the seafood. Top with the bread crumb mixture.
  • Bake the casserole for 20-25 minutes, or until bubbling and golden brown.
  • Top with chives and serve with lemon wedges.

12 jumbo shrimp, peeled and deveined

Steps:

  • Preheat the oven to 375F, line a roasting pan with parchment.

1/2 pound sea scallops
4 tablespoons butter, divided
2 tablespoons all-purpose flour

1/2 cup grated Parmesan cheese, divided
1/2 cup shredded part-skim mozzarella cheese, divided
1/2 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350°. Arrange fish and scallops in a greased 11x7-in. baking dish., In a small saucepan, melt 2 tablespoons butter. Stir in flour and pepper until smooth; gradually add broth and milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in 1/4 cup of each cheese; set aside. , In a small skillet, saute mushrooms in remaining butter until tender; stir into cheese sauce. Spoon over seafood. This is a seafood casserole recipe that we often make at Christmas or New Year's. We live in on the east coast of Canada so we have good access to seafood. You can change the quantities or types of seafood used. I usually don't use the crab meat, but increase the amount of lobster and shrimp I use. You can use haddock or salmon in it also. I usually use whatever I have on hand. The important thing is to use approximately the same volume of fish as stated in the recipe. I usually serve it over the flaky pastry shells, but you can also serve it in crepes or just by itself on the plate.

2 cups water
1 cup chopped celery
3/4 cup finely chopped onion
1/2 lb shrimp
1/2 lb scallops
1 1/2 cups cooked lobster meat
1 1/2 cups cooked crabmeat
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup light cream
1 1/2 cups shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup shredded cheddar cheese
1/2 cup fresh breadcrumb (or cracker crumbs)
2 tablespoons melted butter

Steps:

  • In a saucepan, bring the water to a boil, cook celery, and onions until tender (about 6 minutes).
  • Using slotted spoon transfer vegetables to a large bowl.
  • In same saucepan and water, poach scallops over low heat until firm and opaque (aobut 3 minutes).
  • Add shrimp and cook about 4 minutes.
  • Drain seafood, reserving 3/4 cup of cooking liquid. This liquid amount is based on the original serving size. Increase liquid accordingly.
  • Place all seafood into large bowl.
  • In large saucepan, melt butter over medium heat.
  • Add flour and cook, stir for 2 minutes.
  • Gradually whisk in 3/4 cup of cooking liquid and cream, cook until thick. This liquid amount is based on the original serving size. Increase liquid accordingly.
  • Stir in cheese until melted.
  • Add seafood, season with salt and pepper.
  • Transfer into 3.5 L casserole dish.
  • Make topping by melting 2 tablespoons butter and stirring in the 1cup shredded cheddar cheese and 1/2 cups of bread crumbs. Keep in mind this topping is for original recipe.
  • Spread topping over casserole.
  • You can refrigerate the casserole at this point for up to 8 hours, or
  • Bake uncovered in 325oF oven 35-45 minutes or until bubbly around edges. Let stand 5 minutes.

3 cups dried white pea beans or 3 cups dried navy beans, cleaned
1 large onion
1/2 lb salt pork
1/2 cup sugar, a little under
2 tablespoons brown sugar
2 tablespoons molasses
2 teaspoons dry mustard
1/2 teaspoon pepper
1 teaspoon salt, if salt pork has mostly meat in it or 1 tablespoon salt, if salt pork has mostly fat in it

Steps:

  • Clean beans of pebbles and rocks.
  • Put cleaned beans in pot. Set aside.
  • Mix sugars, molasses, and mustard. Add salt and pepper. Mix into beans.
  • Add enough water to cover beans.
  • Place salt pork down into beans. You can opt to cut it up, or leave it whole, like my gram used to do.
  • You can also put the onions in whole, or opt to chop them up. She used to keep them whole, so us kids could fight over them lol.
  • Bake in bean pot, at 200 degrees, all night or 8 hours If not done, finish in the morning.
  • When beans are ready to be eaten, turn oven up to 450 until beans start to boil, then turn back to 200, until ready to serve.
  • Note: If beans look like they are drying out, just add water as you are cooking.

I just guessed on the can sizes for the minced clams and frozen shrimp soup because I had to put in a size for the recipe to be accepted. The can for the minced canned clams is about the size of a 5 ounce can of tuna and the soup is about the size of frozen juice concentrate.

1/4 lb margarine, melted
1 cup Ritz cracker, crushed
1 cup bay scallop
1 lb haddock or 1 lb other fish
1 (5 ounce) can minced clams, undrained
1 (8 ounce) can frozen shrimp soup, thawed
1 small onion, finely minced

Steps:

  • Par boil the scallops for 3-5 minutes in water, drain and set aside.
  • Par boil the haddock in water about 5 minutes, drain reserving 2/3 cup of cooking liquid. Flake haddock into large pieces and set aside.
  • Mix melted margarine with crushed Ritz Crackers and set aside.
  • Combine cooked scallops, haddock, clams and onion.
  • Using one half of the crumb mixture, combine with the fish. Season lightly with salt and pepper if you wish.
  • Combine thawed soup and haddock juice, mix with fish and taste for seasoning.
  • Put in a 2 quart casserole. Casserole can be put in the refrigerator at this time and baked later.
  • Before baking, cover top with remaining crumb mixture.
  • Bake at 350 degrees for 40 minutes.
