GRAHAM CRACKERS

Graham Crackers image

Provided by Alton Brown

Time 55m

Yield 25 to 30 minutes

Number Of Ingredients 11

8 3/8 ounces graham flour
1 7/8 ounces all-purpose flour
3 ounces dark brown sugar
3/4 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/8 teaspoon ground cinnamon
3 ounces unsalted butter, cut into 1/4-inch cubes and chilled
2 1/4 ounces molasses
1 1/2 ounces whole milk
1/2 teaspoon vanilla extract

Steps:

  • Place both flours, sugar, baking powder, baking soda, salt and cinnamon into the bowl of a food processor and pulse several times to combine. Add the butter and pulse until the mixture resembles cornmeal. Add the molasses, milk and vanilla extract and process until the dough forms a ball, approximately 1 minute. Press the ball into a 1/2-inch thick disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Unwrap the chilled dough and place it onto a large piece of parchment paper and top with a second sheet of parchment paper. Roll the dough out until it is 1/8-inch thick. Slide the rolled dough and parchment paper onto a half sheet pan. Remove the top sheet of parchment paper and cut the dough, using a rolling pizza cutter into 2-inch square pieces, by making vertical and then horizontal cuts all the way across the dough. Trim off any excess. Using a fork, poke holes all over the top of the dough. Leave the crackers on the pan and bake on the middle rack of the oven for 25 minutes or until the edges just start to darken. Remove from the oven, set the sheet pan with the crackers on a cooling rack and allow to cool completely. Once completely cool, break into individual crackers and store in an airtight container for up to 2 weeks.

GRAHAM CRACKER CRUST

Graham Cracker Crust image

Everyone loves pie, but not everyone loves the sometimes-finicky task of making a traditional rolled-out pie crust. For them, there is this press-in crust made with just graham cracker crumbs, sugar, salt and butter. It works best with fillings that don't require the structure and heft of traditional pie dough, like this Key lime pie or this ube pie.

Provided by The New York Times

Categories     pastries, dessert

Time 15m

Yield One 9-inch crust

Number Of Ingredients 4

5 ounces/140 grams graham crackers (one 9-cracker sleeve), pulsed into fine crumbs in a food processor (about 1 cup)
3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1/4 cup/55 grams unsalted butter (1/2 stick), melted

Steps:

  • In a medium bowl, combine graham cracker crumbs, sugar and salt. Stir in the melted butter. (Mixture will look like wet sand.) Press into the bottom and up the sides of a standard (not deep-dish) 9-inch pie pan. Fill and bake according to your recipe. (If your recipe calls for a prebaked crust, bake for 6 to 9 minutes at 375 degrees until just lightly browned. Let cool completely on wire rack before filling.)

Learn how to make a thick, buttery homemade graham cracker crust with only 3 ingredients.

Provided by Sally

Categories     Pie

Time 15m

Number Of Ingredients 3

1 and 1/2 cups (180g) graham cracker crumbs (about 12 full sheet graham crackers)
1/4 cup (50g) granulated sugar
6 Tablespoons (85g) unsalted butter, melted

Steps:

  • If you're starting out with full graham crackers, use a food processor or blender to grind them into fine crumbs. You can also place them in a zip-top bag and crush them into fine crumbs with a little arm muscle and a rolling pin.
  • Stir the graham cracker crumbs and granulated sugar together in a medium bowl, and then stir in the melted butter. The mixture will be thick, coarse, and sandy. Try to smash/break up any large chunks.
  • Pour the mixture into an ungreased 8-inch, 9-inch, or 10-inch pie dish, cake pan, springform pan, or square pan. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Do not pack down with heavy force because that makes the crust too hard. Simply pat down until the mixture is no longer crumby/crumbly. Tip: You can use a small flat-bottomed measuring cup to help press down the bottom crust and smooth out the surface, but do not pack down too hard. If making a pie, run a spoon around the bottom "corner" where the edge and bottom meet to help make a rounded crust-this helps prevent the crust from falling apart when you cut slices.
  • For a baked dessert, pre-bake this crust per your filling recipe's directions. I usually pre-bake for 10 minutes at 350°F (177°C). For a no-bake dessert, cool the crust completely before using, unless your filling's recipe instructs otherwise.

  • Use a food processor to process the graham crackers into fine crumbs. You’ll need two cups, which is about 17 whole graham crackers. You can also place the crackers in a zippered bag and roll with a rolling pin, but make sure the crumbs are very fine. This will help hold the crust together best.
  • Place the crumbs in a medium bowl and add the brown sugar and butter. Mix until well combined.
  • Press the mixture into the bottom of a pie plate. This pie crust will fill an 8 or 9” deep dish pie plate or an 8x8 or 9x9 square pan. The thickness of the crust will change based on the exact size of the pie plate. This would also work for 2 thinner 8" pie plates if you like a thinner graham cracker crust.
  • Use a measuring cup or small glass to firmly press the graham crackers on the bottom and up the sides of the plate. Pressing firmly is important! This will help the crust hold together while serving.

7 THINGS YOU PROBABLY DIDN'T KNOW ABOUT GRAHAM CRACKERS ...

From foodrepublic.com
Estimated Reading Time 6 mins
  • Graham was, in fact, a real person: You may have noticed the name Graham is always capitalized when referring to the cracker. That’s because, unlike other snack foods, this one is actually named after a real person: the evangelical minister who created the recipe in 1829.
  • The original Graham crackers were kind of gross: Far from the slightly sweet and satisfying Graham cracker you buy today, authentic article was actually rather bland, dry and unappealing.
  • Commercially made Graham crackers date back to the 1900s: Before Honey Maid dominated the Graham cracker market, this snack was made by bakeries all over the United States.
  • Grahams may help you fight sexual urges: While Sylvester Graham preached temperance and eating healthy, he also was firm believer in abstaining from sex and masturbation.
  • Graham crackers have been used in s’mores for 87 years: Ever since s’mores were supposedly created by the Girl Scouts in 1927, the tasty treat has involved the famous Graham cracker, as well as a toasted marshmallow and hunk of chocolate.
  • You can use Graham crackers in savory dishes: Many people relegate the Graham cracker to key lime pie crust, crumbled as an ice cream topper, s’mores and s’more-like dishes.
  • You can make them at home: Leave the box of commercial crackers on the shelf and try your hand at making them in your own kitchen. It’s not as hard as you think.
