CHEESY POTATOES AU GRATIN
Recipe from New Orleans Cooking by Emeril Lagasse. Simple and tasty side dish. Did add a couple of extra spices as the recipe seemed to be bland with just salt & pepper. The additions of garlic & onion powder seemed to make a difference in the layers.

Steps:
- Preheat oven to 400 degrees.
- Lightly grease a medium gratin dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes.
- Lightly season with salt, pepper, garlic powder, and onion powder and top with a sprinkling of cheese (about 2 tablespoons).
- Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top.
- Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream.
- Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes.
- Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
- Remove from the oven and let rest 10 minutes before cutting into portions.

Steps:
- Mix all ingredients together EXCEPT the potatoes, grated cheese, corn flakes and 1/4 cup melted butter.
- Spray a 9 x 13 pan with non-stick spray. Layer the potatoes, sauce mixture, and grated cheese in the pan. Repeat the layers until the ingredients are used up.
- Top with crushed corn flakes and pour 1/4 cup melted butter over the top. Bake at 375 degrees F. for 1 hour.

- Foods are divided into 6 main groups. It’s basic, but it’s also fundamental. Food in the Gracie Diet is divided into: 1) protein and vegetables; 2) sweet fruits; 3) starches; 4) acidic fruits; 5) milk; 6) milk cream.
- How you mix the foods in each group is one of the keys to success. Grandmaster Carlos’s goal was to keep the body in equilibrium. And what better way to do that than by how you consume your food?
- Cooked meals or fruit-based meals — take your pick. One of the paradigm shifts of the Gracie Diet is that fruits are not a desert or a side dish to the main meal.
- When to eat is as important as what to eat. Contrary to other popular nutrition methods, the Gracie Diet advocates longer intervals between meals. GM Carlos used to say that 5 hours is the ideal time between meals.
- Know your fruits. The Gracie Diet divides fruits into two categories — sweet and acidic, — but it’s not that easy to know which fruit belongs to each group.
- Water is not just H2O. When preparing some fruit juice, you’ll notice that adding water to the mix makes it watery and tasteless, and thus in need of sugar (and that’s a big “no”).
- No tomatoes? Tomatoes are not really banned, but the thing is they are in the acidic fruit group, so they need to be consumed alone. As you are hardly going to make a whole meal out of tomatoes, it’s better to avoid them.
