Steps:
- in double boiler melt choc chips. stir in sweetened milk til nice and smoothe. then stir in coconut milk til smooth
- add the coconut 1 cup at a time. i added 3 cups and it did great. blend well. should b real thick.
- with wooden spoon drop onto wax paper. i put mine in the fridge to set
- take out and plate. hope u like these.

- Bring sugar, milk, butter, and cocoa to a boil in a large saucepan. Let boil until all sugar crystals on the sides of the pan are dissolved, about 2 minutes.
- Remove from heat and stir in peanut butter and vanilla extract. Stir in oats and coconut until evenly distributed. Quickly spoon tablespoonfuls of dough onto sheets of waxed paper and allow cookies to set up, about 20 minutes.

This is my favorite kind of summertime recipe. Cool, easy and no bake. It's also easy to adapt to a sugar free diet by substituting a sugar free cake and pudding and using skim milk instead of whole. The cook time listed is actually the time it takes to chill.

- Crumble angle food cake in large dish.
- Mix instant pudding& milk according to the instructions on the package.
- Add coconut.
- Pour over cake and mix thoroughly.
- Top with cool whip, chill.

- In a food processor with the S blade attachment, add all the ingredients: unsweetened coconut, maple syrup, unsweetened coconut milk, and melted coconut. The order doesn't matter.
