BLT SANDWICH WITH THE BEST SAUCE

Steps:
- Preheat oven to 400˚F. Place bacon on a foil-lined baking sheet in a single layer. Bake 18 to 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool.
- In a small bowl, combine sauce ingredients and set aside.
- Lightly butter both sides of the toast and toast on a dry griddle or skillet over medium-high heat just until golden brown.
- Arrange 4 slices of bread on a cutting board and spread 1 Tbsp of sauce over each toast. Add lettuce then tomato, bacon, avocado. Sprinkle salt and pepper over the avocado.
- Spread 1 Tbsp sauce over the remaining toasted bread and place over the sandwich, sauce side down. Cut in half if desired and serve.

- Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate. Season the cut sides of the tomatoes with salt.
- Heat a grill pan over high heat. Brush the cut sides of the baguette with the olive oil and grill, cut-side down, until toasted, about 2 minutes. Rub the grilled sides with the garlic. Rub just the bottom halves of bread with the tomatoes until most of the juice is absorbed, then top with the tomato skins and season with salt and pepper.
- Layer the avocado slices on top of the tomatoes, then add the bacon and frisee. Close with the bread tops.

THE GOURMET BLT SANDWICH
I adapted this tasty meal from a recipe I saw in my local newspaper. The peppery rocket and salty bacon go wonderfully together, and it looks quite pretty on a plate.

Steps:
- Fry bacon until cooked, and then cut into smaller, bite sized, pieces.
- Meanwhile, bring a small pot of water to the boil.
- When water is ready, throw in tomatoes for 15 seconds.
- Scoop them out of pot and put into waiting bowl of cold water.
- Peel skins off and dice.
- Put peas and beans into pot of boiling water and cook for 1 minute.
- You want them to remain crunchy.
- Mash the avocado in a bowl.
- Add basil and lemon.
- Butter the bread and spread avocado thickly on slice.
- Then top with a bit of rocket, a few diced tomatoes, bacon, peas, beans and finally the cheese.
- Grill for 2-4 minutes until cheese is bubbling and bread is crusty.

- In a skillet over medium heat, fry bacon until crispy. Let bacon strips drain on a paper towel lined plate, then crumble.
- Grab a big giant cutting board and put the grape tomatoes, carrots, bell peppers, snap peas, avocado, and eggs (or whatever lovely assortment of veggies you prefer) on the board. Place the romaine lettuce leaves on top. Using a large chef knife, chop through all the ingredients, staying in parallel lines in one direction. Rotate your cutting board 90 degrees then chop again in parallel lines in the same direction as before. Repeat until all the ingredients are in small pieces.
- Place chopped mixture in a large bowl along with aged cheddar cubes, green onions, and crumbled bacon. Add dressing of your choice and toss to combine. Serve immediately with some crusty bread.
- ***My favorite way to cook hard boiled eggs is to put them in a pot, cover them with cold water (1 to 2 inches above the surface of the eggs), bring to a boil for 1 minute, then remove the pot from heat, cover, and allow to cook for 10-12 minutes. I find this method is easy, dependable, and doesn't result in the green alien ring that comes from overcooking. Happy chopping!

- Preheat the oven to 400°F. Place a rack on top of a foil-lined rimmed baking sheet. Bake until crispy, about 25-28 minutes for thick-cut bacon (or about 20-23 minutes for thin-cut bacon). Transfer to a paper-towel lined plate to drain. When cool enough to handle, cut each piece in half.
