Hasselback Chicken Recipe by Tasty image

Here's what you need: fresh spinach, ricotta cheese, chicken breasts, cheddar cheese, paprika, salt, pepper

Provided by Tasty

Categories     Dinner

Yield 2 servings

Number Of Ingredients 7

¼ cup fresh spinach
¼ cup ricotta cheese
2 chicken breasts
¼ cup cheddar cheese
1 teaspoon paprika
salt, to taste
pepper, to taste

Steps:

  • Cook the spinach on a medium heat in a splash of oil for 3-5 minutes until it is slightly wilted.
  • Stir in the ricotta and cook for a further 30-60 seconds. Allow to cool.
  • Cut slits into the chicken breasts about 1cm (½ inch) apart but don't cut all the way through - about 75% of the way down is what you should aim for.
  • Stuff all of the spinach and ricotta mixture into the slits.
  • Season the chicken with salt and pepper.
  • Grate the cheddar and sprinkle it generously on top.
  • Shake the ground paprika over the chicken to add some colour and flavour.
  • Bake in the centre of a pre-heated oven for 20-25 minutes 400°F (200°C) until the cheese has melted and the juices are clear.
  • Enjoy!

CHICKEN AND SPINACH QUICHE WITH SMOKED GOUDA

Chicken and Spinach Quiche with Smoked Gouda image

This hearty egg dish has a tender homemade crust and is packed with shredded chicken, spinach and Gouda.

Provided by Food Network Kitchen

Time 3h

Yield 6-8

Number Of Ingredients 13

1 3/4 cups all-purpose flour, plus more, for dusting
2 tablespoons sugar
1/2 teaspoon fine salt
1 1/2 sticks (12 tablespoons) unsalted butter, diced and kept very cold
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more, if needed
1/2 cup thinly sliced shallots
1 cup shredded smoked Gouda
1/2 cup shredded cooked chicken
1/2 cup roughly chopped thawed frozen spinach, squeezed dry
1 1/4 cups half-and-half
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Put the flour, sugar and salt in a food processor fitted with a metal blade and pulse to combine. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, while pulsing quickly a few times, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork the dough or the crust will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten it into a thin round. Refrigerate for 1 hour.
  • Lightly dust a work surface with flour, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • For the filling: Sprinkle the shallot evenly into the crust. Put the Gouda, chicken and spinach in a medium bowl and toss to combine. Sprinkle it in an even layer over the shallots.
  • Whisk together the half-and-half, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl.
  • Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

GOUDA SPINACH HASSELBACK CHICKEN

Gouda Spinach Hasselback Chicken image

This super simple Hasselback Chicken is made flavorful with Gouda cheese and fresh baby spinach. The spinach helps keep the chicken moist while the Gouda and the herbs infuse flavor. I love to serve this dish with Green Beans with Toasted Almonds and Garlic and Roasted Rosemary Potatoes.

Categories     Chicken

Time 35m

Number Of Ingredients 9

2 large chicken breasts
gouda cheese semi thick slices (about 4 ounces)
baby spinach (about 2 cups)
2 Tbsp butter melted
1/4 tsp dried basil
1/4 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp onion powder
salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cut vertical slices in chicken breasts about 1/3 of an inch apart. Do not go all the way through. Place piece of Gouda and baby spinach in each slice.
  • 3. Combine melted butter, basil, oregano, garlic powder and onion powder. Brush over chicken breast. Sprinkle with salt and pepper.
  • 4. Place in baking dish with a piece of foil cradled in the bottom to keep the juices around the chicken. Bake for 25 minutes or until internal temperature reaches 165 degrees. Turn on the broiler for the last minute of cooking just to brown the cheese a touch.
  • 5. NOTES Split the chicken breasts in half to make 4 servings. Large chicken breasts these days are over 12 ounces.

CREAMY SPINACH WITH SMOKED GOUDA GRATIN

Creamy Spinach With Smoked Gouda Gratin image

To make sure this gratin is rich & luscious, be sure to squeeze all the excess liquid from the spinach before adding the bechamel sauce. Bechamel is a classic French white sauce made by stirring milk into a cooked mixture of flour and butter. Adding Smoked Gouda makes it thick, creamy, cheesy and irresistible! HASSELBACK CHICKEN -- CAJUN WITH PEPPER JACK & SPINACH

Hasselback Chicken -- Cajun With Pepper Jack & Spinach image

The chicken is cooked to perfection and has a wonderful spicy kick from the Cajun seasoning and creamy pepper jack cheese filling. It's very easy to prepare, too!

Provided by Cooking Creation

Categories     Chicken Breast

Time 40m

Yield 3-4 serving(s)

Number Of Ingredients 7

1 1/2 lbs chicken breast halves, boneless and skinless (about 2 halves)
4 ounces monterey jack pepper cheese, sliced into thin 1/4 inch slices
1 tablespoon breadcrumbs
1/2 tablespoon cajun seasoning
1/2 cup spinach, cooked (frozen and thawed or sauteed fresh)
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 350 degrees. Using a sharp knife, make slits in the chicken breasts that are about 3/4 inches wide, making sure not to cut all the way down through the bottom of the chicken breast. You will have about 7 or 8 slits per chicken breast, depending on how large your chicken breasts are. Season the chicken with salt and pepper.
  • Place the spinach evenly in the slits of the chicken.
  • Combine the breadcrumb and Cajun seasoning in a small bowl. Sprinkle the mixture evenly over the chicken. Place the pepper jack slices in the slits of the chicken.
  • Place each chicken on its own lightly greased sheet of tin foil and make a "bowl", surrounding each chicken breast. This keeps the juices contained.
  • Bake in the preheated oven for 30 minutes, or until the chicken is cooked through. Remove each chicken breast from its tin foil "bowl" and place on a serving dish.
  • Enjoy!
