- For the cake: Preheat the oven to 350 degrees F. Grease two 9-inch bunt cake pans with butter and then dust with flour, tapping out the excess.
- Place the softened butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed just until the ingredients are blended together, a few seconds, then raise the speed to medium-low and continue to mix until smooth, about 1 additional minute. Scrape down the sides of the bowl.
- Combine the espresso powder and water in a small bowl.
- With the motor running, pour in the espresso. Then add the eggs, 1 at a time, adding the next one after the previous one has been absorbed into the mixture. Stop the motor periodically and scrape the bowl from the bottom with a rubber spatula to integrate the ingredients and return the mixer to medium-low speed.
- After all the eggs are added, continue to mix for an additional minute to ensure the eggs have been thoroughly mixed in.
- While the mixture fully incorporates, combine the cocoa powder, baking soda, salt and baking powder in a medium bowl.
- With the motor running, add half the buttermilk and all the black food coloring. Stop the motor to scrape the sides and bottom. Mix in half of the dry ingredients, stop and scrape the bowl, add the rest of your buttermilk and finish by adding the remaining dry ingredients. Continue to mix just until all ingredients are completely combined but do not over mix the mixture or it will result in a chewy dry cake.
- Scrape the batter into the prepared pans with a rubber spatula to scrape down the bowl and get as much of the batter out as possible. Bake until the cake begins to pull from the sides of the pan and is springy to the touch, 25 to 30 minutes.
- Remove the cakes from the oven and let cool for 10 minutes before flipping out onto your serving platter.
- For the ganache: Place the heavy cream into a small saucepan over high heat and allow to come to a boil.
- Put the chocolate, raspberry puree and food coloring into a large glass bowl.
- Once the cream reaches a boil, pour over the chocolate and allow the cream to melt the chocolate. Stir to combine.
- Place the berries into the center of the cake. Pour the warm ganache into center of the cake and over the edges.
BROWN BUTTERY BOWTIES

- Place the butter in a Dutch oven or large, high-sided saucepan over medium-high heat. Cook until the butter becomes golden brown and fragrant, 3 to 4 minutes. Remove from heat, cover and set aside.
- Bring a pot of generously salted water to bowl. Cook the farfalle until it is al dente, 8 to 10 minutes. Meanwhile, place the breadcrumbs in a dry pan and toast over medium heat until lightly golden, 2 to 3 minutes. Remove from the heat and transfer to a small bowl. Add the parsley, lemon zest, salt, pepper and 2 tablespoons of the brown butter and stir to combine. Set aside.
- Put the brown butter back on medium heat. Drain the farfalle and add it to the butter, tossing to coat. Sprinkle with the breadcrumbs and Parmesan and serve with more Parmesan.
CANDY APPLE DRIP CAKE

- For the mirror glaze: Place the gelatin powder in the cold water in a small bowl and set aside.
- Place the water, corn syrup and sugar in a small saucepan and set on high heat; stir and let come to a boil.
- Combine the condensed milk, white chocolate and bloomed gelatin in a large heatproof bowl. Pour the hot mixture over the chocolate mixture and let melt while stirring. Use an immersion blender to remove any lumps and air bubbles. Add food coloring to the mixture and mix completely. Blend again if needed. Allow to cool to 90 degrees F for the perfect consistency for a drip cake.
- For the cake: Remove your cake from the refrigerator and place on a turntable cake stand. Place a wooden pop stick into the top of your apple and dip into your cooled mirror glaze just like you would a candy apple. Place the dipped apple in the middle of the top of the cake.
- Place the rest of your mirror glaze into a piping bag, ziptop bag or squeeze bottle with small tip.
- While turning the cake on the turntable, apply a small amount of glaze to the edge of the cake and allow it to drip down the sides of the cake. Continue around the whole cake and add glaze to the top of the cake to meet the bottom of the apple.
- Use a small offset spatula to smooth out the top of the cake if necessary. Place sprinkles and candy around the base of the cake and a small bow around the stick for a final festive touch.
WINTER HAT CAKE

- Using a paring knife, start carving the top edge of your cake to round it off. Continue carving about an inch down the cake to create a rounded hat shape. Crumb coat in a thin layer of buttercream. Use the flexible cardstock to smooth over the curved edge to help the cake maintain its shape. Refrigerate for 20 minutes.
- While chilling, mix three-quarters of your buttercream in a bowl with a few drops of blue food coloring. Put into a pastry bag with a coupler and a small star tip. Put the remaining white buttercream into a pastry bag with a coupler and a plain tip.
- Take the cake out of the refrigerator. Use a snowflake cookie cutter to imprint outlines and make templates for the pattern onto the sides of the cake. Starting with inside your imprint lines, use the white buttercream to fill in the shape with dots of buttercream.
- Once all your snowflakes are filled in, use your blue buttercream tip to create a herringbone pattern around the whole hat from top to bottom. Add a braided teardrop shape to accent.
- Pipe a star tip shell border to represent the brim of the hat.
- Roll your white fondant into a ball and place it on the top of your hat. Using the small grass tip, pipe long "fur" onto the fondant to completely cover it.
BLACK RUSSIAN BUNDT CAKE
I'd poke larger (then fork size) holes in this cake since it is a bundt, so more glaze soaks into the cake.

- Grease and flour 12-cup Bundt pan.
- Preheat oven to 350 degrees.
- In large bowl, combine cake mix, sugar, pudding mix, oil, eggs, vodka, Kahlua and water.
- Mix at low speed for 1 minute.
- Beat 4 minutes more at medium speed.
- Pour into pan.

- Grease and flour a 10 cup (2.5L) Bundt pan.

- For the chocolate fudge frosting: Put the butter in the bowl of a stand mixer fitted with the paddle attachment and paddle on low speed until smooth, with no lumps, approximately 3 minutes. With the motor running, add the sugar, one cup at a time, adding the next cup only after the previous
- addition is absorbed.
- Stop the machine and add the cocoa, vanilla, and salt. Paddle on low-medium speed until completely smooth, approximately 2 minutes. Add the water and continue to paddle until light and fluffy, 2 to 3 minutes.
- Put the chocolate fudge frosting in a pastry bag fitted with a #48 interchangeable basket weave tip.
- For the white American buttercream: Combine the butter and shortening in a stand mixer fitted with the paddle attachment on medium speed until smooth. Scrape down the sides of the bowl.
- Sift in the confectioners' sugar and mix on low speed to prevent the sugar from spilling out of the bowl. Increase the speed to medium and mix until the mixture aerates and becomes smooth. Scrape down the sides of the bowl and turn down the speed to low.
- With the motor running on low speed, add the salt and slowly pour in the vanilla and oil in a thin stream. Increase the speed to medium and combine until the mixture is light, fluffy and smooth.
- For the green American buttercream: Put 3 cups White American Buttercream in a large bowl.
- Add a small amount of the green food coloring gel and combine with a rubber spatula until the cream is uniformly colored. Add more gel as you mix until the frosting is the desired shade of green.
- Put the green buttercream in a pastry bag fitted with a #233 interchangeable grass tip.
- To assemble: On a turntable, prepare a double-layer cake of your choosing on a doily-lined cardboard circle, filling it with the filling of your choice.
- Put 3 cups of the White American Buttercream in a pastry bag fitted with a #6 star tip. Dirty ice the cake with the buttercream by covering the cake with a thin layer to create a crumb coat.
- Take the chocolate fudge bag in hand, and working from bottom to top, using the straight side of the tip (the basket weave tip has a plain/straight side and a ruffled/serrated side), pipe vertical lines around the side of the cake, 1/8-inch apart, turning the turntable after each line.
- Next, starting at the bottom, and turning the turntable as you work, pipe horizontal bands over every other vertical line. Pipe another set of bands above the first set, piping them over the lines you skipped on the first level.
- Continue in this fashion, piping over alternating sets of lines, until you have created a basket weave that covers the entire side of the cake.
- Take the green buttercream bag in hand and squeeze-and-pull grass around the border, letting the grass come slightly over the edge. Cover the entire top of the cake with grass.
- Top the cake with the jelly beans, Peeps, Reese's peanut butter cups, and other candies.
