GORGONZOLA CHEESE BALL
Intense flavours abound in this delicious cheese spread - the pungent gorgonzola combined with the delicate anisette of the Sambuca and the crunchy nuttiness of the pine nuts - this begs to be spread on a crisp, juicy wedge of pear or apple! This needs to be refrigerated for atleast 2 hours before serving.

Steps:
- Combine everything but nuts in food processor and process 1 minute.
- Spoon into a small bowl, cover and refrigerate for atleast 2 hours.
- Shape cold cheese mixture into a ball, roll in toasted nuts, refrigerate until serving time.
- Serve with assorted crackers and pear and apple wedges.

From the Oct. 1995 Midwest Living Magazine. Welliver's Buffet famous cheese ball. Cooking time is chill time in refrigerator. Welliver's is a well-known restaurant in east central Indiana. Their buffet is something to behold, so I was very excited when I saw some of their recipes in the Midwest Living magazine several years ago.

- In a bowl, combine all ingredients, except the nuts and crackers. Beat till well combined.
- Cover and chill for 3 to 4 hours.
- Shape mixture into a ball or log. Roll in pecans to coat. Store, covered, in the refrigerator.

- In bowl combine cream cheese, gorgonzola, celery, parsley, onion, chives, and seasonings. Mix until well blended. Taste and adjust seasonings. Chill 1-2 hours.
- Form cheese mixture into 3/4 inch balls and gently roll in nuts to cover completely. Place in single layer. Cover and refrigerate for at least one hour or up to two days.
- To serve arrange balls attractively on a serving plate. Insert single pretzel stick into each ball. Garnish with watercress.

- Process first 4 ingredients in a food processor until smooth, stopping to scrape down sides. Chill 30 minutes.
- Shape cheese mixture into a ball, and make an indentation in the top to resemble an apple. Chill ball 30 minutes.
- Coat ball heavily with paprika; cover and chill 1 hour.
- Insert cinnamon stick and bay leaf into indentation to resemble apple stem and leaf. Serve with assorted crackers.

- Preheat the oven to 375°F. Grease a 9-inch oven-safe round baking dish (such as a cake pan, skillet or casserole dish) with nonstick cooking spray.
