1 tub (8 oz.) PHILADELPHIA Honey Pecan Cream Cheese Spread
64 vanilla wafers, coarsely crushed (about 2-2/3 cups)
8 small apples (2 lb.), peeled, chopped
1/4 cup sugar
4 tsp. ground cinnamon

Steps:

  • Heat oven to 400°F.
  • Mix cream cheese spread and wafer crumbs with fork until mixture resembles coarse crumbs. (Do not overmix.)
  • Toss apples with sugar and cinnamon; spoon into 1-1/2-qt. casserole. Sprinkle with crumb mixture.
  • Bake 15 to 20 min. or until topping is lightly browned and apples are tender. Serve warm. Refrigerate leftovers.

1-1/4 cups sugar, divided
1 tsp. ground cinnamon
1-3/4 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 cup butter, softened
6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 eggs
1/2 tsp. vanilla
2 Granny Smith apples, peeled, sliced

Steps:

  • Heat oven to 350°F.
  • Combine nuts, 1/4 cup sugar and cinnamon; set aside. Mix flour, baking soda and baking powder.
  • Beat butter, cream cheese and remaining sugar in large bowl with mixer until light and fluffy. Add eggs, 1 at a time, mixing well after each addition. Blend in vanilla. Gradually beat in flour mixture.
  • Pour batter into 13x9-inch parchment-lined pan sprayed with cooking spray; sprinkle with half the nut mixture. Toss apples with remaining nut mixture; spoon evenly over cake batter.
  • Bake 30 to 40 min. or just until cake begins to pull away from sides of pan.

I found this easy, delicious dessert in Kraft Food & Family magazine when searching for something to take to a Thanksgiving-themed potluck dinner. Everyone raved about it, and there was a lot of happiness that I had been out of pumpkin at the time, forcing me to look for something else! You can change the amount of fruit you add depending on the size of the fruit and the size of your crust- the original called for 2 apples, but I could only get 1 in my crust.

3/4 cup vanilla wafer, crushed (about 24)
1/4 cup firmly packed brown sugar
1/4 cup butter, melted
1 ready-to-use pie crust (1/2 of 15 oz package)
4 ounces cream cheese, softened
1 -2 large baking apple, peeled, sliced
1 large pear, peeled, sliced
1/3 cup sugar
1/4 cup flour
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375°F
  • Prepare a crumb mixture by combining vanilla wafer crumbs, brown sugar, and butter, and mixing well.
  • Place pie crust on cookie sheet.
  • Spread cream cheese across bottom of the crust-- watch out because the dough could tear a bit, so take your time.
  • Cover cream cheese with half of the crumb mixture.
  • Combine fruit, sugar, flour, and cinnamon in a large bowl and toss to mix well.
  • Spread fruit mixture into the pie and cover with the remaining crumb mixture.
  • Bake for 35 minutes, when fruit is tender and crust is lightly browned.
  • If necessary, you can cover loosely with foil to prevent crust from getting too well done after 25 minutes.

2 Tbsp. MINUTE Tapioca
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 cup flour
1/4 cup packed brown sugar
1/4 cup cold butter or margarine, cut into pieces
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)

Steps:

  • Heat oven to 400°F.
  • Toss apples with granulated sugar, tapioca and spices in large bowl. Let stand 15 min. Mix flour and brown sugar in medium bowl. Cut in butter until mixture resembles coarse crumbs; set aside.

4 cups sliced peeled Granny Smith apples
1 tablespoon water
1 teaspoon lemon juice
1 cup white sugar
¾ cup all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

½ cup cold unsalted butter, cut into small pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pile sliced apples in an 8x10-inch casserole dish. Mix water and lemon juice together and sprinkle over apples.
