SOURDOUGH BOULE

Number Of Ingredients 4

5 cups all-purpose flour, plus more for dusting
1 1/2 cups plus 3 tablespoons water (80 degrees F)
1/2 cup active sourdough starter
2 teaspoons kosher salt

Steps:

  • Mix the flour and 1 1/2 cups of the water in a large bowl until a shaggy dough forms. Cover the bowl with a lid or plate and let stand until the flour absorbs the water, 30 to 45 minutes.
  • Add the sourdough starter, salt and remaining 3 tablespoons water to the dough. Squeeze and twist with your hands until a sticky dough forms (it will be soupy at first, but continue mixing). Knead the dough in the bowl by scooping under the dough, stretching it up and twisting it while you rotate the bowl a quarter turn; slap down the dough and repeat. Continue kneading until the dough smooths out and pulls away from the bowl, 5 to 7 minutes. Scrape down the sides of the bowl and cover with a lid. Let rest in a warm place, 30 minutes.
  • Uncover the dough. Gently reach under the dough with a wet hand, stretch it up as far as it will go without tearing, then fold the dough over itself. Rotate the bowl a quarter turn and repeat three times; this is a set of turns. Do another set of turns, then re-cover the bowl and return to a warm place to rest, 30 minutes.
  • Do two sets of turns every 30 minutes until the dough has increased in size by one-third and has large bubbles in spots, 2 1/2 to 3 1/2 more hours, covering the bowl after each time. After the last set of turns, cover the bowl and let the dough rest another 30 minutes.
  • Turn out the dough onto a generously floured work surface. Slide a bench scraper or large spatula underneath and fold the dough in half. Cup floured hands around the dough and gently roll it in a circular motion into a taut ball. Let rest, uncovered, 20 minutes (the dough will flatten a little).
  • Line a medium bowl with a clean lint-free towel and dust generously with flour. Lightly dust the top of the dough with flour, then slide a bench scraper or large spatula underneath and flip it over. Working gently to not deflate the dough, pull each of the four "sides" of the dough up and into the center, folding the last side to cover the whole top of the dough. Roll the dough over so the seams are on the bottom. Slide a bench scraper or large spatula underneath and gently invert the dough into the towel-lined bowl with the seam up. Cover loosely with the overhanging towel. Let rest in the refrigerator, at least 8 hours and up to 18 hours.
  • About 30 minutes before baking, place a 10- to 11-inch Dutch oven with a lid in the middle of the oven and place a baking stone or large cast-iron skillet on the bottom rack to absorb the heat; preheat to 450˚ F. Carefully remove the Dutch oven from the oven and uncover. Remove the dough from the refrigerator, uncover and lay a large round of parchment on top. Invert the dough onto the parchment. Carefully lower the dough (on the parchment) into the hot Dutch oven. Using kitchen shears or a sharp knife, make a few 1/4- to 1/2-inch-deep cuts in the top so that the dough can expand.
  • Transfer the pot to the oven; cover with the lid. Bake until the bread has risen and the crust is pale, about 20 minutes. Uncover and bake until the crust is browned and crisp and a thermometer inserted into the center registers 210˚ F, 25 to 35 minutes. Let cool 10 minutes in the pot, then transfer to a rack to cool completely, about 2 hours.

Grilled and Stuffed Portobello Mushrooms with Gorgonzola image

2 tablespoons olive oil, plus 1/4 cup
12 ounces turkey sausage, casings removed
2 cloves garlic, minced
1/2 cup mascarpone cheese, at room temperature
2 tablespoons fresh thyme
2 tablespoons fresh oregano
3/4 cup plain breadcrumbs
1 cup (4 ounces) Gorgonzola, crumbled
1/2 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
6 large portobello mushrooms, stems removed

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the turkey sausage and cook, stirring frequently, until cooked through, about 5 minutes. Add the garlic and cook for 1 minute. Remove the pan from the heat. Stir in the mascarpone cheese. Add the thyme, oregano, bread crumbs, 1/2 of the Gorgonzola, 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir until all ingredients are combined.
  • Brush the mushrooms on both sides with the remaining oil and season with salt and pepper. Grill the mushrooms, stem side down, for 3 minutes. Turn the mushrooms over and grill for 2 minutes until tender. Fill each mushroom with the sausage mixture and top with the remaining Gorgonzola. Return the mushrooms to the grill and cook until the stuffing is warmed through and the cheese starts to melt, about 5 to 7 minutes.
  • Cook's Note: The assembled mushrooms can also be placed on a baking sheet and cooked under a preheated broiler until warmed through.

UPSIDE DOWN MUSHROOM GORGONZOLA TARTLETS



Upside Down Mushroom Gorgonzola Tartlets image

Nonstick cooking spray, for the mini muffin pan
6 ounces cremini mushrooms, sliced
1/4 cup crumbled Gorgonzola
3 tablespoons all-purpose flour
2 tablespoons panko breadcrumbs
1 tablespoon fresh tarragon, chopped
1 tablespoon fresh basil, chopped
1 teaspoon lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper
2 large eggs
1 sheet frozen puff pastry dough, thawed

Steps:

  • Preheat the oven to 375 degrees F. Spray a mini muffin pan generously with nonstick cooking spray.
  • Set aside 12 pretty mushrooms slices. Put the rest of the mushrooms slices in a food processor and pulse until ground into small pieces, about 10 seconds. Add the Gorgonzola, flour, breadcrumbs, tarragon, basil, lemon zest, salt, pepper and eggs. Pulse until a thick paste is formed, about 30 seconds more.
  • Gently roll out the puff pastry to a 10-inch square. Use a 2 1/2-inch round cutter to cut 12 rounds of dough. Poke the rounds with a fork.
  • Lay 1 reserved mushroom slice in the bottom of each muffin cup. Spoon 1 tablespoon of the cheese mixture over the mushroom in each cup and top with a puff pastry round.
  • Bake until the puff pastry is golden brown, 25 to 28 minutes. Cool for 2 minutes in the pan before inverting the tartlets. Serve immediately.

MUSHROOM-GORGONZOLA CREAM SAUCE

  • Cook 1 pound sliced assorted mushrooms in 2 tablespoons olive oil in a pot over medium-high heat, stirring, until browned and tender, about 7 minutes. Season with salt and pepper. Add 3 minced garlic cloves and cook, stirring, until softened, 30 seconds. Add 1 cup heavy cream; bring to a simmer and cook until thickened, 2 to 3 minutes. Toss with 12 ounces cooked fettucine, adding up to 1/4 cup pasta-cooking water to loosen the sauce. Off the heat, stir in 2 ounces crumbled gorgonzola until creamy; season with salt and pepper.

1/4 cup olive oil
1 small onion, finely chopped
4 cloves garlic, finely chopped
16 large button mushrooms, stems removed and finely chopped
2 cups fresh bread crumbs
1/4 finely chopped fresh parsley
Dash of hot pepper sauce
4 ounces Gorgonzola cheese, crumbled

Steps:

  • Use side burners or preheat grill. Heat oil in a medium saucepan over medium high heat. Add onions and garlic and cook until soft. Add mushroom stems and cook until golden brown. Remove from heat and add bread crumbs, parsley, hot pepper sauce and cheese. Mix until well combined (if mixture looks too dry, add more olive oil.) Season the mixture with salt and pepper to taste. Fill the mushroom caps with the mixture and brush the entire mushroom with more olive oil. Grill over medium heat until tender.

3 cups/375 g all-purpose flour, plus more as needed
1 1/4 teaspoons salt
1/4 teaspoon instant yeast
Cornmeal, wheat bran or extra flour, as needed

Steps:

  • Mix the flour, salt and yeast in a bowl. Stir in 1 1/2 cups/375 ml water to blend. What you'll have is a wet, shaggy, sticky dough, but not so wet as to be batter. Cover the bowl with a tea towel and let it rest in a warm place for at least 12 hours, and up to 24 hours. It's ready for the next step when the surface is dotted with bubbles.
  • Flour a work surface and dump the dough out onto it. Sprinkle over a little more flour and fold it once or twice. Cover with the tea towel and let rest 15 minutes.
  • Using only enough flour to keep the dough from sticking to your fingers, shape the dough into a ball. Coat a cotton towel with cornmeal, wheat bran or flour and lay the dough on it, seam-side down. Dust with more cornmeal, wheat bran or flour. (You need quite a lot because you want to be sure the dough doesn't stick to the towel). Cover and let rise for about 2 hours. When ready, the dough will be more than double in size.
  • Half an hour before the dough is ready, preheat the oven to 450 degrees F/230 degrees C. Put a 2-liter cast-iron pot or Dutch oven (cocotte) inside to heat.
  • When the dough is ready, remove the pot from the oven and turn the dough into it, seam-side up. (It will look messy, but this is OK.) Shake the pot to settle the bread evenly. Cover with the lid and bake for 30 minutes. Remove the lid and bake until the loaf is nicely browned, another 15 to 30 minutes. Cool on a rack.

2 boneless skinless chicken breasts, sliced
1/4 cup shallot, finely chopped

1/2 cup white wine

1 teaspoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon salt
1 cup table cream
3/4 cup gorgonzola

Steps:

  • In a large pot, cook fettuccine in 4 cups boiling water for about 8 minutes stirring occasionally.
  • Meanwhile, in a large saute pan heat the oil and brown chicken for 4 - 5 minutes.
  • Remove from heat and set aside.
  • Add mushrooms and shallots to pan.
  • Cook about 6 - 7 minutes over medium heat stirring frequently till mushrooms are a bit golden.
  • Add wine, thyme, basil, Worcestershire sauce, salt and pepper.
  • Cook until reduced by half.
  • Return chicken to pan.
  • Add cream and gently stir in cheese.
  • Stir gently till smooth and creamy and chicken is hot.
  • Pour sauce over cooked fettuccine and serve immediately.

1 tsp rapeseed oil
1 large onion , halved and sliced
3 garlic cloves , finely chopped
200g chunk butternut squash , peeled, deseeded and diced
140g small button mushroom
125g brown basmati rice
700ml reduced-salt vegetable stock
10 pieces dried mushroom , chopped
2 tsp chopped fresh sage
small pack parsley , chopped, stalks and leaves separated
40g gorgonzola , crumbled

Steps:

  • Heat the oil in a large non-stick pan, add the onion and garlic, and fry for 5 mins. Tip in the squash and button mushrooms, and cook for a few mins more. Stir in the rice, then pour in the stock. Stir well, then add the dried mushroom, sage and parsley stalks. Cover and simmer over a low heat for 35-40 mins until the rice is tender - check towards the end of cooking and add a little water if the rice has absorbed all the stock. If there is a lot of liquid, uncover and cook for an additional 5-10 mins.
  • Take off the heat, fold in the parsley leaves and cheese with some black pepper, then allow to stand for 5 mins before serving.

16 large button mushrooms, with stems removed
2 cups fresh breadcrumbs

Steps:

  • Cook onion and garlic in olive oil in saucepan until soft.
  • Chop mushroom stems& add to saucepan, cooking until golden.

4 tablespoons unsalted butter
2 tablespoons olive oil
1/2 Spanish onion
8 ounces white mushrooms, sliced 1/4-inch thick
8 ounces portabella mushrooms, stemmed and sliced 1/4-inch thick
4 sprigs fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
2 tablespoons dry white wine
4 ounces gorgonzola, crumbled
1 cup heavy cream
1 medium sourdough bread boule, hollowed out
1 baguette, sliced, for serving

Steps:

  • Put the butter and olive oil into a large skillet and set over medium heat. Slice the onion into thin slivers and add them to the melted butter. Reduce the heat to low and cook the onions for 15 minutes until translucent.
  • Add the mushrooms, rosemary, salt and pepper, and raise the heat to medium and cook, stirring occasionally, until the mushrooms give up their liquid. Let the mixture simmer until the mushroom liquid has reduced by 3/4.
  • Add the white wine and reduce again until the pan is almost dry.
  • (****The recipe can be made to this point the day before if you like. Reheat the mushroom mixture to continue with the recipe.)
  • Add the crumbled gorgonzola and heavy cream. Bring to a simmer and reduce by half.
  • Season, to taste, with salt and pepper, and spoon into the hollowed out boule.
  • Slice baguettes, drizzle with olive oil and toast in oven.
  • Garnish with a few rosemary sprigs and serve immediately with sliced baguettes for dipping.
