GORGONZOLA MASHED POTATOES

A little gorgonzola cheese can take mashed potatoes from boring to amazing.

Number Of Ingredients 6

4 large russet potatoes, peeled, slices a half inch thick
4 cloves garlic, sliced
1/4 cup butter
1/2 cup cream
1/3 cup crumbled gorgonzola cheese
sea salt and cracked pepper, to taste

Steps:

  • In a large pot combine 2 quarts water, sliced garlic, and potatoes. Boil on medium-high heat for 25 minutes or until potatoes are tender. Strain off water and add butter and cream. Mash with a potato masher until milk and butter are incorporated and mixture has a slightly chunky texture. Add salt, pepper, and Gorgonzola, stirring with a wooden spoon until incorporated.

1/2 pound small red potatoes, halved
1-1/2 teaspoons olive oil
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons crumbled Gorgonzola cheese

Steps:

  • Preheat oven to 425°. In a large bowl, combine first five ingredients. Place in a greased 15x10x1-in. baking pan. , Bake, uncovered, 20-25 minutes or until potatoes are tender, stirring once. Sprinkle with cheese.

1 1/2 lbs small red potatoes, cut in half
3 tablespoons butter or 3 tablespoons margarine, softened
1/3 cup buttermilk
1 (4 ounce) package crumbled gorgonzola
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place potatoes in 3-quart saucepan; add enough water (salted if desired) to cover. Cover and heat to boiling; reduce heat. Simmer about 20 minutes or until potatoes are tender; drain. Shake potatoes in saucepan over low heat to dry.
  • Add butter, buttermilk, cheese, salt and pepper to potatoes. Lightly mash with fork or back of spoon keeping some larger pieces of potatoes.

3 lbs yukon gold potatoes, peeled and quartered
1 3/4 teaspoons salt, divided
2 tablespoons butter or 2 tablespoons margarine
1 tablespoon olive oil
2 medium onions, diced
4 cloves garlic, minced
2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary
1/2 cup butter or 1/2 cup margarine
3/4 cup half-and-half
3/4 cup crumbled gorgonzola or 3/4 cup blue cheese
3/4 teaspoon pepper
fresh rosemary, to garnish

Steps:

  • Bring potato, 1 teaspoon salt, and water to cover to a boil in a Dutch oven; cook 20 to 25 minutes or until tender.
  • Drain and keep warm.
  • Melt 2 tablespoons butter with oil in a skillet over medium heat; add onion, and cook, stirring often, 12 to 17 minutes or until tender.
  • Add garlic, and cook 3 minutes.
  • Stir in rosemary; remove from heat.
  • Mash potato with a potato masher; stir in 1/2 cup butter, half-and-half, and cheese until blended.
  • Stir in onion mixture, remaining 3/4 teaspoon salt, and pepper.
  • Spoon enough mixture into a decorative, ovenproof dish or 13- x 9-inch baking dish to fill bottom; pipe or dollop remaining mixture over top.
  • Broil, 3 inches from heat, 5 minutes or until top is lightly browned.
  • Garnish, if desired.

Creamy Mashed Potatoes with Turkey Bacon and Gorgonzola image

4 lbs. (about 12) yellow gold potatoes, peeled
1 cup (2 sticks) unsalted butter, room temperature
1-1/2 tsp. kosher salt, or to taste
1 cup whole milk
1 Tbsp. chopped fresh chives
1/4 cup crumbled gorgonzola cheese
1 (3 oz. package) Godshall Turkey Bacon, chopped finely

Steps:

  • Set a large pot of water to boil over medium-high heat. Place whole, peeled potatoes into the pot. Cover potatoes, with the lid cracked just enough to let steam escape. Cook until potatoes are soft and tender, about 25 to 30 minutes. Poke with a fork to check doneness.
  • Drain well and transfer back to the pot. Using a handheld masher, mash potatoes gently to break into large chunks. Using a stand mixer fitted with the whisk attachment, or a handheld electric mixer, whip potatoes on medium speed. Add butter and salt. Gradually drizzle in whole milk to reach your desired texture.
  • Stir in fresh chives, gorgonzola, and chopped turkey bacon until well mixed.
  • Serve warm right away, or cover potatoes and place into a warm oven until ready to serve. You can also transfer mashed potatoes to a slow cooker set to Low.
