Toss Yukon gold potatoes with Dijon mustard, vinegar, thick-cut bacon, chives and seasoning for this classic German Potato Salad recipe from Food Network.

2 pounds Yukon gold potatoes
1/2 pound thick-cut bacon
3/4 cup finely chopped onion
1/3 cup white vinegar
1/4 cup sugar
1 tablespoon Dijon mustard
1 teaspoon salt
2 tablespoons minced chives, for garnish

Steps:

  • Place the potatoes in a medium-size pot and cover them with enough water to extend 2 inches above the surface of the potatoes. Salt the water and bring to boil over medium-high heat. Continue cooking until potatoes are tender when pierced with a fork, about 15 to 20 minutes. Drain and slice into 1/4-inch rounds.
  • Cook the bacon in a large skillet over medium-high heat. Once crisp, place on a paper towel-lined plate and crumble into small pieces. Pour off the rendered fat, reserving 1/4 cup in the pan. Turn the heat to medium and add the onion. Cook until translucent and just beginning to brown, about 4 to 5 minutes.
  • Whisk in the vinegar, sugar, mustard, and salt and stir until thick and bubbly. Add the sliced, cooked potatoes and toss to coat. Top with the crumbled bacon and garnish with the chives. Serve warm.

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
¼ cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Steps:

  • Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
  • Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
  • Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

½ teaspoon white sugar
salt and ground black pepper to taste
1 onion, finely chopped
2 tablespoons pickled gherkins, chopped
¼ cup creamy salad dressing (such as Miracle Whip®)
4 hard-boiled eggs, cut into wedges, divided
2 tablespoons chopped fresh parsley, or as desired

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain and rinse with cold water to cool. Remove and discard potato skins. Slice potatoes.
  • Whisk vinegar, sugar, salt, and pepper together in a large bowl; add potatoes, onion, and chopped gherkin. Stir salad dressing into the mixture. Fold 3/4 the egg wedges into the mixture. Garnish with the remaining egg wedges and parsley. Cover bowl with plastic wrap and refrigerate 1 hour before serving.

5 lbs potatoes (baking potatoes are NOT recommended, as they are too flaky)
1/2 cup diced smoked bacon
1/2 cup vegetable oil
3 tablespoons white vinegar
1 teaspoon sugar
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
3/4 cup sliced green onion
1/4 cup chopped chives

Steps:

  • Place unpeeled potatoes in cold salt water and bring to a boil.
  • Boil gently until potatoes are tender, but still firm.
  • Do not overcook.
  • Pour off the boiling water and allow potatoes to cool until easy to handle.
  • (The drained, unpeeled Potatoes can also be placed in a refrigerator overnight).
  • Peel cooled potatoes, slice, then place in a large bowl.
  • Slowly sauté the bacon in a skillet until the bacon pieces are crisp and golden brown.
  • Do not burn the bacon and do not drain the fat in the skillet.
  • Remove the skillet from the heat and add the oil, vinegar, sugar, salt and pepper.
  • Pour this mixture over the sliced potatoes in the bowl.
  • Add the green onions and the chives.
  • Gently toss the potatoes so all ingredients are evenly blended.
  • Taste and adjust seasonings, if necessary.

1 cup finely chopped onion
2/3 cup chicken stock
1/3 cup olive oil
1 tablespoon white wine vinegar
2 teaspoons hot mustard
2 teaspoons salt
1 teaspoon fresh ground black pepper
1 tablespoon fresh lemon juice

Steps:

  • Drop the potatoes into enough boiling water to cover. Boil until they show just the slightest resistance when pieces with the point of a sharp knife. Dont overcook.
  • Drain in a coloander, then peel and cut into 1/4 inch slices. Set aside in a bowl covered in foil.
  • In a 2 - 3 quart saucepan, combine all the ingredients except lemon juice. Bring to a boil stirring occasionally. Reduce the heat to low and simmer for 5 minutes. Remove from heat and stir in lemon juice.
  • Pour the sauce over the potato slices, turning to coat evenly. Let cool to room temperature then taste for seasoning and serve.

2 teaspoons caraway seeds
salt
2 small onions
3/4 cup chicken broth
2 tablespoons white wine vinegar
1 -2 pinch sugar
fresh ground pepper, to taste

3 tablespoons parsley, chopped
1/2 lb bacon

Steps:

  • Add scrubbed potatoes, water, salt, and caraway seeds to a large pot. Cook potatoes for about 30 minutes or until potatoes are cooked through.
  • Rinse cooked potatoes with cold water. Set aside and let them cool.
  • Peel potatoes and cut into thin slices. Add potato slices to a salad bowl.
  • Peel and chop onions. Fold into the potato slices.
  • In a separate bowl mix the chicken broth, vinegar, sugar, and oil. Add salt and pepper to taste.
  • Pour over the potatoes and gently fold into potato mixture. Allow to sit and marinate for 2 hours.
  • Fold parsley into potato salad.
  • Cut bacon into small pieces and fry in a frying pan until crispy.
  • Pour bacon and optionally the grease over the potato salad.
  • Serve salad immediately.

8 medium russet potatoes, scrubbed but not peeled
1/2 cup white onion, finely chopped
1 apple, chopped
2 stalks celery & leaves, very thinly sliced
4 dill pickles, chopped
1 tablespoon sweet pickle relish, heaping
2 teaspoons sugar
1 tablespoon cider vinegar
1 tablespoon pickle juice
1 tablespoon extra virgin olive oil
2 teaspoons yellow mustard (such as French's)
1 cup mayonnaise (such as Hellman's or Best Foods)
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons parsley, finely chopped, divided use
5 hardboiled egg, divided use

Steps:

  • In a large covered pot, bring potatoes to a boil in enough salted water to cover by at least 1 inch. Lower heat to a simmer, and cook about 25-30 minutes or until potatoes are tender when pierced with a fork, but still firm. (Cooking time will vary according to the size and freshness of the potatoes).
  • Drain potatoes in colander, and briefly run cold water over the potatoes. Transfer drained potatoes back into the empty covered pot and set on a very low flame for just a minute or two, being careful not to scorch them. This will help to dry the potatoes and to ensure that they are not wet or soggy. Return potatoes to colander, and let them cool to the touch.
  • Peel and then slice the potatoes into one inch pieces.
  • In a large bowl, stir together the onions, apples, celery, dill pickles, sweet relish, and one tablespoon of the chopped parsley.
  • In a separate bowl, whisk together the sugar, vinegar, pickle juice, olive oil, mustard, mayonnaise, and the salt and pepper. Pour over the onion mixture, stirring well to coat evenly.
  • Add the potatoes and 3 chopped hardboiled eggs. Fold and stir gently to combine. Transfer to a wide and shallow serving dish.
  • Garnish with 2 quartered hardboiled eggs, tomato slices, and the torn lettuce. Sprinkle with remaining parsley and the paprika.

This is my moms recipe for the mayo based version that you will find all over northern Germany, while southern Germany prefers the vinegar based/hot version. Make sure to let the salad rest for at least 2 hours so that all the flavors can blend and soak into the potatoes.

5 -6 baby dill pickles, chopped
1 medium onion, chopped
1 medium granny smith apple, chopped
16 ounces mayonnaise (I often use the fat free kind)
6 tablespoons pickle juice
1 tablespoon sugar
1/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Make sure onion, pickles and apple are chopped the same size.
  • Boil the whole potatoes with their skins on until tender about 20-30 minutes.
  • Remove from pot and let rest until cool enough to handle but still warm, then peel and dice into preferred size.
  • In a bowl combine all the ingredients except potatoes.
  • Put potatoes into a big bowl, pour"sauce" over them and stir together carefully (potatoes break apart easily while still warm).
  • Cover bowl and let rest in fridge for at least 2 hours (overnight is even better).
  • Taste test and add more pickle juice, salt, pepper, sugar or mayo if/as needed.

1/2 cup hot chicken stock or 1/2 cup hot beef stock
5 -6 tablespoons rapeseed oil
2 tablespoons german vinegar
1 teaspoon German mustard
1/2 teaspoon sugar
1/2 teaspoon sea salt
1/3 cucumber
1 large dill pickle
5 ounces cooked bacon, chopped (optional)
2 spring onions, chopped
1 small onion, chopped finely

10 -12 cherry tomatoes, halved

Steps:

  • Cut the potatoes into large cubes and boil in salted water until tender. Drain and pour the hot stock over them. Leave until cool, by which time they should have absorbed the stock.
  • Whisk the oil with the vinegar, mustard, sugar, salt and pepper.
  • Halve the cucumber lengthways, scoop out the seeds with a teaspoon and dice the flesh into cubes. Chop the pickle to the same size.
  • Mix the cooked bacon, cucumber, pickle, onions, chives and dressing into the cooled potatoes. Gently mix in the tomatoes and set aside in the fridge for an hour or two. Check the seasoning and serve.

3/4 cup beef broth
1 teaspoon caraway seed
2 tablespoons chopped fresh parsley leaves

¾ cup boiling water
¼ cup balsamic vinegar

  • Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain, and let them cool slightly. If you wish to peel them, do it while they are still hot. It will be much easier. Allow to cool completely, then slice thinly.

10 medium potatoes, peeled and halved (about 3 pounds)
1 (14 1/2 ounce) can beef broth
1/4 cup all-purpose flour
3 tablespoons sugar
1/2 teaspoon celery seed

1/4 cup cider vinegar
1 medium onion, chopped (about 1/2 cup)
3 tablespoons fresh parsley, chopped

Steps:

  • Cut potatoes into bite sized pieces.
  • In Dutch oven place potatoes. Cover with water. Over high heat, heat to a boil. Cook 20 minutes or until tender. Drain. Cut into cubes.
