GOOD LUCK SOUP IN A JAR
How pretty is this? Give as a gift, share comfort food or give to someone going on a camping trip!!!! Starting the New Year with Herbs and Grains! This brings much luck and never to go hungry and always wanting to share with those in need or want. I make 12 pint jars and give for Christmas gifts. Oh So So so perrrfect for the cold weather to come......................

Steps:
- In a 1 1/2 pint jar, layer the bouillon, to the Bay leaves. Tap jar so ingredients settles. Wrap the pasta in a baggie, and place in the jar. Seal tightly.
- Attach a label to the jar with the following instructions:.
- TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef and drain excess fat add garlic to brown slightly. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 minutes, or until the pasta, peas, lentils and barley are tender.
- Season with salt and pepper if needed.

RAINBOW BEAN SOUP MIX IN A QUART JAR
This makes a great gift. I have made many welcome/gift baskets for my neighbors. When I give the gift, I add a can of crushed tomatoes and a package of soup crackers.

Steps:
- Use a quart jar that has a wide mouth, but if you can't find one any quart jar will work.
- Place each type of bean in jar in the order listed above.
- Top with seasoning bag, gently flattened so it can be seen from all sides.
- Place lid, decorate jar and attach recipe.
- Put an expiration date: one year from time of assembly.
- DIRECTIONS TO MAKE RAINBOW BEAN SOUP:.
- Remove seasoning packet from the jar and set to the side. Rinse beans and place beans in large microwave-safe dish. Cover with water 1" to 2" over top of beans. Cover dish loosely with plastic wrap. Microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse beans very well; place in a large pot. Add 8 cups water, one 15 ounce can crushed tomatoes and seasonings from packet. Cover, bring to boil. Lower heat, cover pan and simmer 1 1/2 hours or until beans are tender. Stir occasionally.

BEAN SOUP MIX IN A JAR
This soup mix is full of beans! Be warned it looks prettier in the jar than in the bowl - but it's a tasty, hearty soup that will fill you up.

- In pint size (500 ml) jar, layer beans and peas in order listed above or as you prefer.
- In small bowl, mix remainder of ingredients. Place in a small plastic bag or wrap well in plastic wrap to keep separate from beans and peas.
- Place spice pack on top of beans and peas. Seal jar.
- Decorate, label and include Cooking Directions.
- Cooking Instructions
- Also Needed:14 oz can diced tomatoes
- Remove spice pack.
- Rinse remainder of ingredients well, then drain.
- Place bean mix in pot and add 6 cups water and bring to boil. Boil for 10 minutes to remove any toxins from beans.
- Remove from heat and let stand for 1 hour. Drain, rinse, drain.
- Return to pot, add 7 cups water, 1 can (14 oz/398 ml) diced tomatoes, spice mix and bay leaf.
- Bring to boil. Reduce heat and simmer for 1 to 11/2 hours.
- Adjust seasoning to taste, remove bay leaf and garnish with fresh parsley.
- Makes 9 cups.

- Sort beans and rinse with cold water. Place the split peas, lentils and beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., Drain and rinse, discarding liquid. Add water and seasonings; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender., Stir in tomatoes; increase heat to medium. Cook, uncovered, for 15-30 minutes. Discard bay leaves.

- Use 2 (1 pint) clamp top jars. In each jar, layer 1/4 cup of each type bean.
- Seal lid and attach cooking instructions.
- INSTRUCTIONS:.
- Rinse beans, place in large bowl, add one to 2 tsp of salt and cover with water.
- Let stand overnight.
- Drain beans, place in a large kettle, add 2 quarts of water, one cup chopped ham and one chopped onion.
- Simmer for 1 1/2 to 2 hours; add one chopped green pepper and 3 tbls lemon juice or one tsp lemon pepper.
- Makes 4 servings.

- Look for red lentils or yellow split peas for a real rainbow of colors in this mix, if you can't find use regular brown lentils or pick a colorful dried bean of your choice for this layer.
- Mix seasonings and place in a thin zipper sandwich bag.
- Use a Pint Jar that has a wide mouth.
- Place each type of bean in jar in order listed above.
- Top with season bag, gently flatten bag so it can be seen from all sides.
- Put lid on jar.
- Decorate jar.
- Attach recipe to jar.
- Put a expiration date on year from now.
- RAINBOW BEAN SOUP.
- Remove seasoning packet.
- Set aside.
- Rinse beans place beans in large microwave safe dish.
- Cover with water 1" to 2" over top of beans.
- Cover dish loosely with plastic wrap.
- Microwave on high for 15 minutes, rotating after 7 minutes.
- Drain and rinse beans very well.
- Place beans in very large pan.
- Add 4 cups water and 1/2 can crushed tomatoes and seasonings from packet.
- Cover, bring to boil.
- Lower heat, cover pan and simmer 1 1/2 hours or until beans are tender.
- STIR OCCASIONALLY.

- In a large stock pot or Dutch oven, brown sausage along with onion and garlic. When the sausage browned add all of the other ingredients and mix well. Bring up to a boil. Reduce heat to simmer and cook for 45 minutes to an hour.
- If you want to do this in your slow cooker. Brown the sausage with the onion and garlic first in a skillet. When browned place the meat with the other ingredients in a 5 - 6 quart slow cooker and cook on low 6-8 hours or on high for 3-4 hours.
- Serve with your favorite cornbread. Letting this soup sit a day or 2 will meld the flavors even more.

Steps:
- Wash beans.
- Place bouillon, chicken and beans in large pot with water.
- Boil; reduce to slow boil for 45 minutes.
- Sauté onion in oil and add tomatoes and thyme.
- Mix well.
- Pour tomatoes into bean pot.
- Continue to cook at a low boil; add sausage and chili powder.
- Let simmer for 1 hour and 45 minutes.
- After that time has passed, turn stove off and stir in the sherry.
- Let stand for 15 minutes before serving.
