It's Easter week, so here's a recipe for a fantastic salad you can serve during the holiday (and all of your spring occasions!). We'll show you how to make the salad right here.

Number Of Ingredients 9

1/3 c. sour cream
1 tbsp. mayonnaise
Salt and pepper
1 tbsp. white vinegar
4 c. frozen green peas, almost totally thawed
8 slices bacon, cooked until crisp and chopped
1/2 small red onion, halved and sliced very thin
6 oz. cheddar or American cheese, cut into small cubes
3 tbsp. minced fresh parsley

Steps:

  • Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste.
  • Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.)
  • Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

1 cup macaroni
3 eggs
¼ cup Ranch-style salad dressing
1 teaspoon white sugar
2 teaspoons white wine vinegar
salt to taste
¼ teaspoon ground black pepper
2 cups frozen green peas, thawed
3 green onions, chopped
2 medium sweet pickles, chopped
2 stalks celery, chopped
1 cup shredded Cheddar cheese

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
  • Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Whisk together the salad dressing, sugar, vinegar, salt and pepper.
  • In a large bowl, combine the pasta, eggs, peas, green onion, pickles, celery and cheese. Pour dressing over salad; mix well and chill before serving.

4 ounces sharp cheddar cheese (cubed)
1/2 small red onion (diced)
1/4 pound bacon (cooked and finely chopped)
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon granulated sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove peas from freezer and place in a colander and allow to slightly thaw while preparing the dressing.
  • In a large bowl, whisk together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and black pepper.
  • Add the peas, bacon, cheddar cheese, and red onion and fold/stir to combine.
  • Chill the salad for at least one hour before serving. The salad can be made up to 3 days in advance.

1 small red bell pepper, finely chopped
1 jalapeno, finely chopped

1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.

1/4 cup chardonnay vinegar
2 tablespoons Dijon mustard
2 tablespoons extra-virgin olive oil
2 tablespoons hazelnut oil
1/4 teaspoon finely ground black pepper
1 shallot, finely minced
Kosher salt

1 cup shucked English peas
1/2 pound snap peas
3 tablespoons extra-virgin olive oil
8 slices Jamon Serrano
2 cups pea shoots
1 cup snow peas, julienned lengthwise
1/4 cup grated Manchego
1/4 cup toasted hazelnuts, crushed

Steps:

  • Make the dressing: Whisk together the vinegar, mustard, olive oil, hazelnut oil, pepper, shallot and salt to taste in a small bowl. Adjust the seasonings. Set aside.
  • Make the salad: Bring a large pot of water to a boil. Season with salt until the water tastes slightly of salted broth. Prepare an ice bath.
  • Blanch the English peas and snap peas separately, for about 10 seconds each. Shock in the ice water and drain on paper towels. Cut the snap peas into thirds.
  • In a medium skillet, heat the olive oil over low heat. Tear the Jamon Serrano slices into bite-sized pieces and add to the oil in the skillet. Cook until crispy on both sides, 2 to 3 minutes total. Remove to a paper towel-lined plate to drain.
  • Assemble the salad: Toss the English peas, snap peas, pea shoots and snow peas with the vinaigrette to taste. Plate the salad and top with the Manchego, toasted hazelnuts and crispy jamon.

1 (8 ounce) can sliced water chestnuts, drained
1 cup celery, thinly sliced
1/2 cup sliced green onion
1/4 cup mayonnaise
1/4 cup sour cream

Steps:

  • In a mixing bowl, add the first 4 ingredients; stir to combine.
  • In a smaller bowl, add the mayonnaise and sour cream; stir to blend.
  • Spoon the mayo mixture over the pea mixture; gently stir to coat.
  • Season to taste with salt and pepper.
  • This tastes better to me chilled so I let it refrigerate 4-6 hours before serving.

  • In a separate bowl, combine the sour cream, mayo, pinch of sea salt, black pepper, dill weed, lemon juice, chives & hot sauce well. Add the sour cream mixture to the peas & onions, as well as adding the shredded cheese - mix until equally combined. Cover salad & refrigerate for a minimum of 1 hour. Upon serving the salad, sprinkle a handful more of the cheese along with the remaining chopped green onion & serve. Recipe can be made a day prior to serving - serve well chilled.
