JALAPENO AND PESTO CHICKEN PASTA SALAD
This is a delicious, cold chicken and pasta salad. Very healthy as well. It takes less than 10 minutes to put together and is bursting with flavor from only a few ingredients. I prefer using two jalapenos (SEEDED) but if you want only a very little spice to it, just use one. I wouldn't skimp on any of the ingredients, they all make this salad what it is. Perfect for any BBQ or gathering or just a super quick dinner on a night where you don't feel like cooking or heating up the house.

- Boil pasta for 8-9 minutes until tender, rinse with cold water, drain, and place in a large bowl.
- Add spinach and arugula, shredded chicken, tomatoes, and parmesan cheese pasta bowl.
- Whisk together Italian salad dressing and pesto sauce until smooth, then pour over pasta. Toss to combine. Top with cracked black pepper and grated parmesan cheese as desired.
- Serve immediately or cover and chill up to 8 hours and toss just before serving.

- Bring a large pot of salted water to boil. Cook the pasta until al dente, according to package directions. Before draining, reserve about a cup of cooking water. Drain and return to pot. Set aside.
- While pasta is cooking, make the pesto: combine all pesto ingredients in a food processor. Run the machine until mixture is well blended, stopping and scraping down the bowl as necessary.
- Pour enough pesto into the pasta to lightly coat it once tossed (you might not quite need all of it). Add a small splash of pasta cooking water and toss well. Transfer the pasta to a large serving bowl and add the drained black beans, diced tomatoes, and corn. Stir until combined. Taste and add salt and pepper as needed. This salad is best after it’s had a chance to marinate for about 30 minutes, but you can serve it right away if need be.
