- Preheat oven to 350 degrees F.
- In a bowl combine mayonnaise, yogurt, cheddar cheese, blue cheese dressing, eggs, salt, pepper, and flavor pack from noodles. In a separate bowl combine broccoli, mushrooms, and broken noodles then toss together wet mixture and vegetables to evenly coat. Place in an 8 by 8-inch baking dish that has been sprayed with non- stick cooking spray and cook for 45 minutes covered. Then remove cover and bake for additional 15 minutes to brown. Cool for 15 minutes before serving.
CREAMY CHICKEN AND BROCCOLI PASTA BAKE
Cheesy, creamy and so delicious! This Chicken and Broccoli Pasta Bake is super easy to make with lots homemade sauce, tender chicken and perfectly cooked broccoli. Baked until hot and bubbly with melty mozzarella cheese on top!

- Preheat the oven to 375 degrees F.
- Bring a large pot of salted water to a boil, then add the pasta. Careful not to overcook the pasta, as it will continue to cook in the oven. Once the pasta is about 2 minutes from al dente, add the broccoli and cook another 2 minutes. Drain and transfer to baking dish. I used a 8x10 inch dish.
- Meanwhile, heat a large skillet over medium-high heat. Add 3 tablespoons butter, onion, and chicken. Cook until the chicken is lightly browned, about 5-7 minutes. The chicken will finish cooking in the oven.
- Add the remaining tablespoon of butter and garlic to the skillet with the chicken and onion; cook for one minute. Mix in the flour and cook another minute. While mixing, slowly pour in the chicken broth then milk. Simmer for 3-4 minutes, until thickened to gravy consistency.
- Remove the skillet from the heat and mix in the salt, pepper, nutmeg, parmesan, cheddar and 1/2 cup mozzarella cheese. Pour over the pasta and broccoli in the baking dish and mix together. Sprinkle with the remaining 1 cup of mozzarella cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake an additional 10 minutes, or until the cheese is lightly golden brown and the sauce is bubbling around the edges.
CHICKEN AND BROCCOLI NOODLE CASSEROLE
Chicken and Broccoli Noodle Casserole is sure to be a family crowd pleasure for weeknight dinner, even those with picky palates.

Steps:
- Cook noodles in salted water until al dente, or slightly under-cooked by 2 minutes. Set aside.
- Meanwhile heat oil in a large skillet. Add garlic and cook on medium heat until golden, about 1 minute.
- Add the broccoli and a little salt, sauté and cover the broccoli for about 3 minutes on medium heat until the broccoli begins to soften. Set aside.
- Preheat the oven to 375°F. Lightly spray a 9 x 12 casserole dish with cooking spray.
- In a large pot, heat butter over medium-low heat, when melted add the shallot and cook until soft, 2-3 minutes.
- Add the flour and a pinch of salt and stir well, cooking an additional 2-3 minutes on medium-low heat. Slowly whisk in the chicken broth until well combined over medium heat; whisk well for 30 seconds, then add the milk and bring to a boil. Simmer on medium heat, mixing occasionally until it thickens (about 6-7 minutes).
- Remove from heat and add reduced fat sharp cheddar and 1 tablespoon of the parmesan cheese; mix well until the cheese melts.
- Add the shredded chicken, noodles and broccoli to the sauce and mix well until evenly coated.
- Pour into a casserole dish and top with Parmesan cheese and breadcrumbs.
- Spray a little more cooking spray on top and bake for about 20 - 25 minutes. Place the casserole under the broiler a few minutes to get the crumbs crisp and golden (careful not to burn). Divide in 6 equal portions.

Steps:
- Heat oven to 350°.
- Cook noodles and broccoli to package directions.
- Make sauce by melting butter; add flour, salt, mustard and pepper and stir well.
- Stir in milk til thick, then add cheese and stir til melted.
- Place cooked noodles in bottom of greased casserole, then top with broccoli, then chicken.
- Cover with sauce and bake for 15 minutes.
- Can top with buttered crumbs, if desired.
