This hearty soup pairs squash and cream-style corn for pleasant taste. My family says this is their favorite squash recipe, and friends also comment on its wonderful flavor. -Janice Zook, White River Junction, Vermont

12 bacon strips, diced
1 medium onion, chopped
1 celery rib, chopped
2 tablespoons all-purpose flour
1 can (14-1/2 ounces) chicken broth
6 cups mashed cooked butternut squash
2 cans (8-3/4 ounces each) cream-style corn
2 cups half-and-half cream
1 tablespoon minced fresh parsley
1-1/2 teaspoons salt
1/2 teaspoon pepper
Sour cream, optional

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. , In the drippings, saute onion and celery until tender. Stir in flour until blended. Gradually stir in broth. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. , Reduce heat to medium. Stir in the squash, corn, cream, parsley, salt, pepper and bacon. Cook and stir until heated through. Garnish with sour cream if desired.

1 large onion, chopped
1 red pepper, cored and diced
1 yellow pepper, cored and diced
4 tablespoons flour
4 cups vegetable broth (or chicken broth)
16 ounces frozen corn kernels, thawed (or about 4 ears of fresh corn kernels)
1/8-1/4 teaspoon saffron thread
1 cup half-and-half
1/4-1/2 teaspoon salt
1/4 teaspoon white pepper
1 tablespoon chopped fresh parsley
1 -2 tablespoon chopped fresh parsley, for garnish

Steps:

  • In a large saucepan, over medium-low heat, melt butter; add onion, red and yellow peppers and cook for 5 minutes, stirring often.
  • Add flour, stir constantly until well combined.
  • Add broth, corn, saffron, cream, salt, white pepper, and 1 tbsp parsley.
  • Cover and simmer for 15 minutes, stirring occasionally.
  • Serve with chopped fresh parsley on top.

1 pound yellow summer squash
2 ears corn
3 large shallots
2 large garlic cloves
1 fresh jalapeño chile
1 tablespoon olive oil
1/4 teaspoon ground cumin
2 1/2 cups water
Garnish: corn kernels, chopped fresh jalapeño chiles, fresh cilantro leaves, sour cream, and thinly sliced yellow summer squash

Steps:

  • Cut summer squash crosswise into 1/2-inch-thick slices. Shuck corn and, working over a bowl, cut kernels from cobs. Halve cobs. Chop shallots and mince garlic. Wearing rubber gloves, chop chile, with seeds if desired.
  • In a 5-quart heavy kettle combine all ingredients (including cobs) except water and cook over moderate heat, stirring, 3 minutes. Stir in water and simmer mixture until squash is very tender, about 15 minutes. Discard cobs. In a blender puree mixture in batches until smooth (use caution when blending hot liquids), transferring to another bowl. Season soup with salt and pepper. Divide soup between 2 bowls and garnish with corn, chiles, cilantro, small dollops of sour cream, and squash.

This is a brightly colored, simply prepared summer squash recipe that can be prepared in a matter of minutes, so there is no prolonged sweating over a hot stove! It tastes delicious hot, warm or at room temperature, so you can make it ahead of time without sacrificing any of its quality. This recipe can be expanded into more of a light vegetarian main dish if served over brown rice or barley (or a combination), and topped with the optional pine nuts and cheese. I cut this out of a recent newspaper article.

1 1/2-2 tablespoons extra virgin olive oil, divided
2 medium onions, thinly sliced
1/8 teaspoon salt, possibly more
1 1/2 lbs summer squash (cut into 1/2-inch thick slices or cubes, see note)
1 teaspoon garlic (minced or crushed)
fresh ground black pepper
fresh thyme, minced
pine nuts, lightly toasted (a handful) (optional)
3 -4 ounces feta cheese (optional) or 3 -4 ounces goat cheese, crumbled (optional)

Steps:

  • Place a large skillet over medium heat.
  • After about 1 minute, add 1 T of the olive oil, and swirl to coat the pan.
  • Add the onion and salt.
  • Cook, stirring often, for about 10 minutes, or until the onion becomes very tender and lightly golden.
  • Transfer to a bowl and set aside.
  • Return the pan to the heat and slick the pan with just a teaspoon or two more of olive oil.
  • Add the squash in a single layer, and cook, without stirring, until very golden on the bottom, for 1-2 minutes.
  • Toss or stir to flip the squash and continue cooking, undisturbed, for 1-2 minutes longer, or until deeply golden brown on the other side.
  • Toss in the garlic, and return the onions to the pan.
  • Mix well, and season to taste with additional salt, if needed, and with a good amount of freshly ground black pepper.
  • Serve hot, warm or at room temperature, garnished with a light sprinkling of thyme, and pine nuts and/or cheese, if desired.
  • NOTE: You can make this with any of the thin-skinned, quick cooking squash varieties such as yellow patty pan, zucchini, crooknect, etc.
  • Peeling the squash is optional.

1 (14-ounce) can reduced-sodium chicken broth, or vegetable broth
1/4 teaspoon salt
1 cup fresh corn kernels (about 1 large ear)
1 teaspoon lemon juice
1/4 cup crumbled feta cheese

Steps:

  • Heat oil in a large saucepan over medium heat. Add shallot and cook, stirring, 1 minute. Add squash and 1 teaspoon herbs and cook, stirring occasionally, until the squash starts to soften, 3 to 5 minutes. Add broth and salt; bring to a boil. Reduce heat to a simmer and cook until the squash is soft and mostly translucent, about 5 minutes more. Transfer to a blender and purée until smooth. (Use caution when puréeing hot liquids.) Return the soup to the pan and stir in corn. Bring to a simmer over medium heat and cook, stirring occasionally, until the corn is tender, 3 to 5 minutes more. Remove from heat; stir in lemon juice. Serve garnished with the remaining 2 teaspoons herbs and feta. Cover and refrigerate for up to 2 days. Tip: To remove corn from the cob, stand an uncooked ear of corn on its stem end in a shallow bowl and slice the kernels off with a sharp, thin bladed knife. When making soup, after cutting off the kernels, you can reverse the knife and use the dull side to press down the length of the ear to push out the rest of the corn and its milk.

1 1/2 cups chopped onions
2 tablespoons canola oil
1 cup peeled and diced carrot
2 1/2 cups peeled and diced sweet potatoes, divided
3 cups water, divided
3 cups vegetable stock or 3 cups vegetable broth, divided (I use homemade)
4 cups diced summer squash
2 cups fresh corn kernels or 2 cups frozen corn kernels
1/2 teaspoon turmeric
4 teaspoons fresh lemon juice
2 teaspoons salt, to taste
1 tablespoon chopped fresh sage
fresh ground pepper, to taste
grated monterey jack cheese or low-fat sour cream
chopped fresh parsley

Steps:

  • In a big soup pot, saute/stir the onions in hot oil, over medium-high heat for 2 mintues.
  • Add in the carrots and 1 3/4 cups sweet potatoes; saute/stir for 1-2 minutes.
  • Add in 1 1/2 cups water and 1 1/2 cups vegetable stock; cover and bring to a boil.
  • Reduce the heat and simmer for 10 minutes or until potatoes are soft.
  • Puree the mixture in a blender (or use an immersion blender) until mixture is smooth; set aside.
  • Bring the remaining water and vegetable stock to a boil.
  • Add in the remaining sweet potatoes; let simmer for 5 minutes.
  • Add in the yellow squash, corn, turmeric, lemon juice and salt to taste; cover and simmer for 10 minutes.
  • Add in the sage and reserved puree; stir to combine.
  • Add in pepper to taste.
  • Continue simmering until well heated.
  • To serve, ladle into individual serving bowls; sprinkle grated Monterey Jack cheese on top or spoon a dollop of sour cream on top.
  • Sprinkle with chopped fresh parsley.
