GOLDEN SPLIT PEA PATTIES
Golden split pea patties are vegan and gluten-free. With a base of split peas, potatoes, carrots & pantry staples, this couldn't be simpler.

- Peel and chop the potatoes. Place them in a medium saucepan and cover them with cold water. Place the saucepan over medium-high heat and bring to a boil. Lower the heat to a simmer and cook the potatoes for 12 minutes, or until quite mushy and soft. Drain the potatoes and return them to the pot to dry out for a minute or so.
- Place the potatoes in a large bowl and set aside.
- Fill the same medium saucepan with 3 ¼ cups of water. Bring the water to a boil over medium-high heat. Add the split peas and stir. Lower the heat to a simmer. Cook until the split peas have absorbed most of the liquid and are quite soft/mushy, about 35 minutes.
- Take the split peas off the heat and mash them with a fork. Transfer the mashed split peas to the bowl with the potatoes.
- Add the grated carrots to the bowl, along with the onion, garlic, cumin, coriander, turmeric, fenugreek (if using), chickpea flour, lemon juice, and tamari. Season everything liberally with salt and pepper. Taste the mixture and adjust seasoning if necessary.
- Mix and mash all of the ingredients together with your hands. This part is messy! It should feel very pasty when you're done with it, with only a few tiny pieces of whole potato in the mix.
- Form the mixture into 10 split pea patties and place them on a baking sheet. Cover the baking sheet with plastic wrap and slide into the refrigerator for at least 2 hours.
- Once you're ready to cook the patties, heat a decent slick of oil in a large skillet over medium-high heat. Set your oven to 300 degrees F, and place a large baking sheet inside.
- Cook the patties in batches, browning the sides thoroughly. Each side should take about 2 full minutes. As you finish cooking the patties, transfer them to the baking sheet in the oven while you cook those that remain. Once you're done cooking all of the patties, it's advantageous to leave the patties in the oven for a good 10 minutes so that they can firm up even more so.
- Serve the split pea patties hot with lettuce wraps, rolls, a salad, or any other accompaniment you like.
GOLDEN SPLIT PEA SOUP WITH HAM

- Stir-fry onions in drippings 5 to 8 minutes in a large saucepan over moderate heat until pale golden. Add ham and stir-fry 5 minutes. Add remaining ingredients, cover, and simmer 1 hour, stirring occasionally. Serve steaming hot with buttery chunks of garlic bread.
VEGETARIAN YELLOW SPLIT PEA BURGERS

- Prepare two sheet pans. Line two sheet pans with parchment paper and set aside.
- Cook the split peas. In a medium-sized pot, mix the dry split peas with 3 cups water, bring to a boil, and then simmer, uncovered, for about 30 minutes, or until all of the water has been absorbed. (You will need 2 cups cooked split peas, and likely have a bit extra.) Pour them onto one of the parchment-lined sheet pans. Let them sit for at least 10 minutes to cool and dry out. *(You can do this portion up to a day ahead of time, keeping them refrigerated until you're ready to use them. If you do this, let them air dry the same way for about 10 minutes.)
- Blend the "wet" ingredients. Use your hands to "wring out" the grated zucchini to remove as much liquid as possible. Add it to a food processor fitted with the blade attachment. Then add the cooked, cooled/dried split peas, onion, olives, sun-dried tomatoes, and garlic. Blend until everything is incorporated and it's relatively smooth. Then add the egg and process just until it's blended in.
- Combine the pea mixture with the dry ingredients. Add the almond meal, corn flour, paprika, salt and cayenne to a large mixing bowl. Add the pea mixture and mix until smooth.
- Shape the burgers. Dust a clean dry surface with the remaining 1 tablespoon of corn flour. Divide the batter into six equal portions (about a very generous ⅓ cup each), and shape it into approximately 1 inch thick burgers. Place them on the corn flour-dusted surface as you make them. Then flip them over to coat the other side. This should be a very light coating and you can gently even it out with your hands. Place them on the second parchment-lined baking sheet as you go.
- Cook the burgers. Coat the bottom of a large non-stick skillet with olive oil and place it over high-medium heat. Carefully add the shaped burgers to the pan. You should hear a sizzling sound - if you don't, wait! (You won't get a nice "crust" on the burger if it's not hot enough.) Sauté until the bottoms are nicely browned, about 3 minutes. Drizzle a bit more olive oil over them if the skillet looks dry, carefully flip them over, and reduce the heat to low-medium. Sauté to brown the other side and cook them through, about 3 to 4 minutes.
- Serve!

SPLIT PEA BURGERS

- Heat 1 tablespoon olive oil in a large (4 to 6-quart) saucepan over medium heat. Add the onion and bell pepper along with a generous pinch of salt. Sweat for 5 minutes or until the onions are soft. Add the garlic and mushrooms and continue to cook for another 4 minutes.
- Add the broth, peas, rice, coriander and cumin. Increase the heat to high and bring to a boil. Decrease heat to low, cover and cook at a simmer for 1 hour or until the rice and peas are tender.
- Remove from the heat and gently pour the mixture into the bowl of a food processor and process until just combined.* Do not puree. Pour this mixture into a bowl and stir in the 3/4 cup of bread crumbs. Season, to taste, with salt and freshly ground pepper. Refrigerate for 30 minutes.
- Shape the mixture into patties and dredge on each side in the remaining 1/4 cup of bread crumbs. Heat 1 tablespoon of olive oil in a medium saute pan over medium heat. Add 2 burgers at a time and saute until brown on each side, approximately 3 to 4 minutes per side. To grill, cook on high for 3 to 4 minutes per side as well. Serve immediately.
GOLDEN SPLIT PEA SOUP
This is from my Low-Fat Moosewood cookbook. Your house will smell like an Indian restaurant! The soup is a beautiful dark gold color. Don't use green or brown lentils, it just won't be the same. This makes a lot, but you can freeze it. Even my one year old loves this! Serve topped with plain yogurt and chopped cilantro. Pass pita bread.

- In a soup pot, sauté the onions in the oil for about 8 minutes, until golden, stirring frequently.
- Add the cumin, turmeric, coriander and ginger and cook for another minute.
- Add the split peas, water, sweet potatoes, apples, cinnamon, and chili powder, cover and bring to a boil.
- Lower the heat and simmer for 40 minutes, or until the split peas are tender.
- In a bowl, combine the tomatoes, lime juice and soy sauce.
- When the split peas are tender, add the tomato mixture.
- Puree the soup in a blender (in batches) or with a stick blender, adding more water if needed.
MOOSEWOOD GOLDEN SPLIT PEA AND SWEET POTATO SOUP
I wanted to save this before I tried it. It is a bit different from the other Moosewood Golden Split Pea Sweet Potato Soup already posted on Zaar. This came from a January 1992 Bon Appetit article on the Moosewood Restaurant.

- Heat oil in large saucepan over medium high heat. Add onion and jalapeno and saute until tender, about 3 minutes.
- Stir in ginger and next 4 ingredients and cook 1 minute.
- Mix in 7 cups water, sweet potatoes and split peas.
- Bring to a boil, reduce heat to medium low, cover and simmer about 1.5 hours until potatoes and peas are very tender.
- Whisk soup vigorously for a smoother texture and thin with additional water if needed.
- Season with salt and pepper.
- Top each serving with a tablespoon of yogurt, a lime slice and some cilantro to serve.

- Make the fava: Sauté the onion in ½ cup olive oil in a wide pot over medium heat. Add the yellow split peas and toss to coat in the oil. Add the bay leaves, salt and pepper and enough water to cover by 1 inch. Simmer, adding small quantities of water as needed, until the yellow split peas disintegrate and are like chunky mashed potatoes. The total quantity of water absorbed by the split peas can be anywhere between 8 to 12 cups.
- Remove and puree using an immersion blender, adding salt, lemon juice and olive oil in alternating streams until the mixture is very smooth.
- Make the favokeftedes: Heat the oil in a large, heavy skillet over medium heat and cook the onion until golden. Remove from heat and transfer the onions to a large mixing bowl. Add the cooked fava, ½ cup flour, fennel, salt, pepper and cinnamon. Mix well until smooth and firm, and add more flour as needed.
- Take a heaping tablespoon at a time of the mixture and shape into small patties about 4 cm (1 ½ inches) in diameter. Dust with additional flour if desired. Heat about 2 cm (a little less than an inch) of olive oil in a heavy skillet and add the patties a few at a time and pan-fry. Flip the patties and cook the other side. Remove when golden and crisp on the outside. Drain on paper towels. Continue until all of the split-pea mixture has been used.
