This beautiful golden coconut apple oatmeal is rich in nutrients, has anti-inflammatory properties and tastes amazing topped with fruits like mango and banana and a sprinkling of healthy nuts like walnuts or almonds.

Number Of Ingredients 14

1/2 cup rolled oats (50 g)
3/4 cup water
pinch of salt, optional
1 tbsp ground flax seed (7 g)
1 small apple, diced (100 g)
2 tbsp unsweetened shredded coconut (12 g)
1 tsp ground turmeric
1/2 tsp each ground ginger, cinnamon and cardamom
pinch of black pepper
walnuts, almonds or cashews
chopped banana and/or mango
almond butter
cacao nibs
a drizzle of coconut milk or almond milk

Steps:

  • Bring the water to a boil in a small sauce pan then add the rest of the ingredients and reduce to a light simmer. Add a bit more water or some coconut or almond milk if it seems to thick.
  • Cook for 5 minutes, stirring often then remove from heat and let sit for a few minutes before transferring to a bowl and adding any desired toppings.

1/2 cup diced golden delicious apple
1/3 cup apple juice
1/3 cup water
1/8 teaspoon salt (optional)
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/3 cup old fashioned oats, uncooked
brown sugar (optional)
milk (optional)

Steps:

  • Combine apples, juice, water, and spices, bring to boil.
  • Stir in rolled oats and cook till oats are cooked (about 7 mins).
  • Serve with brown sugar and milk on the side.

  • In a medium saucepan, combine the apples, sugar, lemon zest and lemon juice. Cook over medium heat, stirring, until the sugar is dissolved. Pour into the prepared dish.
  • Combine the oats, flour and sugar in a food processor and process to break down the oats. Add in the coconut, cinnamon and salt and pulse to combine. Add 6 tablespoons of the butter to the food processor and pulse until the mixture becomes crumbly, with the biggest pieces about the size of a pea.
  • Sprinkle the crumble mixture over the top of the apple mixture. Dot the top of the crumble with the remaining 1 tablespoon of butter. Bake until the topping is golden brown, the apples are tender and the mixture is thickened and bubbly, about 35 minutes.
