175g Self-Raising Flour
2 tbsp cocoa powder
1.5 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 medium sized eggs - beaten
1/4pt sunflower oil
1/4pt Milk
75g unsalted butter
175g icing sugar (more if needed)
2.5 tbsp cocoa powder
milk or warm water

Steps:

  • Pre-heat the oven to 180°F/ Gas mark 4. Grease and line two 18cm sandwich tins.
  • Sieve the flour, cocoa and bicarbonate of soda into a bowl.
  • Add the sugar and mix well. make a well in centre and add the syrup,eggs,oil and milk. beat well until smooth.
  • Spoon the mixture into the two tins and bake for 25-30 minutes until risen and firm to the touch. remove from oven,leave to cool before turning out onto a cooling rack.
  • Sandwich the two cakes together with butter cream icing, to make the icing place the butter in a bowl and beat until soft.
  • Gradually sift and beat in the icing sugar and then add enough milk/water until soft (if you add to much milk/water just sift some more icing sugar in) make the icing fluffy and spreadable.
  • Finally sandwich the cakes together with the icing and the cover the cake in the rest of the icing. use a fork to put some patterns on the top if needed.

200g golden caster sugar
200g unsalted butter, softened plus extra for the tins
4 large eggs
200g self-raising flour
2 tbsp cocoa powder
1 tsp baking powder
½ tsp vanilla extract
2 tbsp milk
100g milk chocolate, chopped
200g butter, softened
400g icing sugar
5 tbsp cocoa powder
2 tbsp milk
50g dark chocolate
25g milk chocolate
25g white chocolate

Steps:

  • Heat oven to 190C/170C fan/gas 5. Butter the base and sides of two 20cm round sandwich tins and line the bases with baking parchment.
  • In a large bowl, beat together 200g golden caster sugar, 200g softened unsalted butter, 4 large eggs, 200g self-raising flour, 2 tbsp cocoa powder, 1 tsp baking powder, ½ tsp vanilla extract, 2 tbsp milk and a pinch of salt until pale.
  • Divide the mixture between the prepared tins. Bake for 20 mins or until a skewer inserted into the centre of the cake comes out clean.
  • Leave to cool in the tin for 10 mins, then turn out onto a wire rack to cool completely.
  • For the buttercream, put 100g chopped milk chocolate in a heatproof bowl and melt in the microwave, stirring every 30 secs. Leave the melted chocolate to cool for 5 mins.
  • Mash 200g softened butter and 400g icing sugar together with a fork, then switch to a wooden spoon or electric beaters, if you have them.
  • Sift in 5 tbsp cocoa powder with a pinch of salt and pour in the melted chocolate and 2 tbsp milk. Mix again until smooth.
  • On a cake stand or large plate, sandwich the cakes together with half of the buttercream, then spread the rest on top. Decorate with chocolate shards, if you like.
  • To make chocolate shards: melt 50g dark chocolate and pour it onto a tray lined with baking parchment or foil.
  • Now melt 25g milk chocolate and 25g white chocolate and drizzle them over the dark chocolate before it sets.
  • Shake the tray gently to level the mixture then leave to set somewhere cool. Chop into shards.

1 package (3.4 ounces) instant vanilla pudding mix
4 large eggs
1 cup sour cream

1 cup chopped pecans
1 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the cake mix, pudding mix, eggs, sour cream, oil and water; beat on low speed for 30 seconds. Beat on medium for 2 minutes.   • Preheat oven to 350°F. Butter 2 (9- by 2-inch) round cake pans and line bottoms of each with rounds of wax or parchment paper. Butter paper and dust pans with flour, knocking out excess.
  • Sift together flour, baking powder, baking soda, and salt.
  • Beat together butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Add half of flour mixture and mix at low speed until just blended. Add sour cream, mixing until just combined, then add remaining flour mixture, mixing at low speed until batter is smooth.
  • Divide batter between pans, smoothing tops. Bake in middle of oven until cake is springy to the touch and a tester comes out clean, 30 to 40 minutes. Cool in pans on racks 10 minutes, then invert onto racks, remove paper, and cool completely.
  • Trim tops of cooled cake layers with a long serrated knife if necessary to make flat and level. Halve each layer horizontally with serrated knife to make a total of 4 layers.
  • Put 1 cake layer on a cake plate and spread with 3/4 cup frosting. Layer remaining cake layers using 3/4 cup frosting between each layer. Frost top and sides of cake with remaining frosting.

Steps:

  • For the shortbread base, beat the butter and sugar together until light and creamy, then mix in the flour. Press the dough into the base of a 20-21cm tart tin and put in the fridge for 20 mins to harden.
  • Heat oven to 180C/160C fan/ gas 4. Prick the base all over with a fork and bake in the centre of the oven for 15 mins until lightly golden.
  • Meanwhile, melt the butter and chocolate together in a saucepan over a low heat. Once melted, stir in the sugar and flour, then gradually beat in the eggs. Pour the filling over the base and cover the top in chocolate eggs. Return to the oven and bake for 12-15 mins or until the fiilling is just set at the edges but the centre is still shiny and a bit wobbly. Remove from the oven and put in the fridge to chill. Can be made a day ahead and kept in the tin overnight. To release from the tin, warm the sides with a hot dishcloth for a couple of mins. Serve with crème fraîche.

6 ounces vanilla yogurt
4 tablespoons vegetable oil
1 cup butter (that's 2 sticks softened or at room temp)
8 egg yolks
2 cups sugar
2 1/2 cups cake flour (sifted)
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 teaspoon vanilla extract (I used clear but regular dark is fine)
7 drops yellow food coloring (I used liquid but powder works fine too)

Steps:

  • Preheat the oven to 350 degrees F. Grease 2 (9-inch) cake pans with shortening(or nothing if you have a really good nonstick cake pan) and set aside.
  • Cream the butter and sugar together, add 2 tablespoons of the 4 tablespoons of vegetable oil in 1 of the 2 bowls. Then mix the egg yolks one by one, completely mix them--do not add another one until the one before is completely mixed.
  • Get another bowl and sift the cake flour, salt, and baking powder together. Stir to distribute everything good. Slowly mix it together with the stuff in the other bowl. When it starts to get dry or hard to mix with the mixer add the milk, yogurt, 2 tablespoons of vegetable oil, and vanilla. Add about seven drops of yellow food coloring or until you get the perfect golden yellow. Mix completely and very well, leave no unmixed cake flour on the sides--believe you me it does not make a good cake having droplets of or little chunks of cake flour in the cake so make sure you scrape the sides down good and mix it in well.
  • Pour into the prepared pans leaving enough space to rise. Bake for 18 to 20 minutes or until you can stick a toothpick into the cake and it comes out clean. Remove from oven and cool on a rack.
  • You can make a really good chocolate or vanilla frosting for the cake. Or you can buy the frosting.

This recipe is one of our family favorites. It came from a magazine long long ago. We changed it up just a bit and made it our own. Kids love this cake and its so easy to make. It will be a hit at your next social. Give it a try. Gotta love a bit of gooey chocolate.

1 pkg yellow cake mix no pudding in the mix
4 eggs
1/2 c vegetable oil
1 3oz box vanilla pudding mix instant
1/2 c water
1 8oz sour cream
3 chocolate bars chopped (regular size)
1 c semi sweet chocolate chips
1 c pecans chopped
1 c coconut

Steps:

  • 1. Preheat oven to 350, spray bundt pan with non stick spray.
  • 2. Mix together cake mix, eggs, oil, pudding and water on low for 30 seconds to blend then beat on high for 2 minutes. On low, blend in sour cream. Remove bowl from mixer and stir in all other ingredients. I cannot stress enough, NO PUDDING IN THE CAKE MIX. Total messy disaster if you get a mix with pudding in it. Hint: freeze the chocolate bars for a bit before chopping.
  • 3. Bake for 60-65 minutes, cool and dust with confectioners sugar.

Steps:

  • Heat oven to 160C/ fan 140C/ gas 3 and grease a 20cm round cake tin
  • Tip the butter, syrup and vanilla into a heatproof jug, add 300 ml boiling water and briefly whisk with a fork to combine
  • Sift the flour, sugar, cocoa and bicarbonate of soda into a large bowl, then in tip in the butter mixture. Stir until you have a smooth batter, then scrape into prepared tin. bake for 50 - 55 mins until the cake is well risen and springy to touch. Cool in tin for around 15 mins before turning out to cool on a wire rack.
  • To make glaze, put chocolate and syrup into a small glass bowl with 3 tbsp of water, and microwave for 30secs on high until melted and smooth. leave to cool, then pour over the cake before serving

Warm the coconut cream and butter together until softened then beat with sugar in a mixing bowl until creamed. Add pumpkin, lemon, vanilla, and milk and beat until mixed. In a separate bowl mix the dry ingredients, baking powder, salt, and flour. Fold the ingredients together just until smooth.
  • In bowl of stand mixer fitted with whisk attachment, cream butter and coconut cream with 1 cup powdered sugar. Add the vanilla, cocoa, and salt and mix until smooth. Add remaining powdered sugar a little at a time until fully incorporated. Beat on high speed for about 1 minute until light and fluffy.
  • Once the cakes are cooled, place one of them on a serving platter of your choice and spread a generous amount of frosting onto the top. Add another layer of cake, the ice that one and repeat once more for the last layer. Now spread a thin layer of frosting over the entire cake, top and sides, and place in the fridge to chill for about 30 minutes.
