INSPIRATIONAL GOAT'S CHEESE ON GARLIC CIABATTA TOAST



Inspirational Goat's Cheese on Garlic Ciabatta Toast image

Toasted goat's cheese on toast that has been spread with garlic paste.......and then served on mixed salad leaves - brilliant! I am hooked on Nigel Slater's new programme, "Simple Suppers", where he prepares and cooks food just the way I like it...........fresh, seasonal, unpretentious, flexible and hearty. This is one of Nigel's "Inspirational" recipes that was shown on his first programme. In the absence of ciabatta bread, I would be inclined to use any rustic bread........with lots of body! (Recipe from NIgel Slater's Simple Suppers and the Digin site.)

2 heads garlic
olive oil, for drizzling
2 -3 sprigs fresh thyme
salt & freshly ground black pepper
1 goat cheese, round
1 ciabatta or 1 baguette
lettuce leaf, to serve
prosciutto, to serve (optional)

Steps:

  • Preheat the oven to 180C/350F/Gas 4.
  • Arrange the whole heads of garlic snugly in an oven dish. Drizzle with olive oil and season with thyme, salt and freshly ground black pepper. Roast in the oven for about an hour, or until the garlic is softened.
  • Squeeze the soft garlic out of its skins into a small dish or bowl. Add enough olive oil to make a thick paste and season, to taste, with salt and freshly ground black pepper.
  • Slice some goats' cheese thinly. Cut the ciabatta in half and place under the grill to toast then spread the slices with the garlic paste. Place the goats' cheese on top and pop under the grill again until the cheese has melted.
  • Serve with on a bed of fresh, crisp lettuce leaves. I often add a couple of slices of prosciutto, too.

36 slices (1/2-inch thick) baguette bread
3 tablespoons olive oil
8 ounces soft fresh goat cheese
4 ounces cream cheese
2 teaspoons finely chopped fresh Italian parsley leaves
2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely grated lemon peel
Salt and coarsely ground multi-colored or black peppercorns
1/2 cup pitted Sicilian green olives or kalamata olives, finely chopped
2 tablespoons thinly sliced chives

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy large baking sheets. Brush olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 15 minutes.
  • Blend the goat cheese and cream cheese in a food processor until smooth and creamy. Add the parsley, thyme, and lemon peel. Using the on/off button, pulse just to blend. Season with salt and pepper, to taste. Spread the cheese mixture over the crostini. Sprinkle with the olives, chives, and more pepper. Arrange the toasts on a platter and serve.
  • Do-Ahead Tip: The crostini and cheese mixture can each be prepared 2 days ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese mixture. Let the cheese mixture stand at room temperature for 1 hour to soften slightly before spreading over the crostini.

HERBED GOAT CHEESE TOAST

1 cup ricotta cheese
1/2 cup chopped fresh herbs (combination of tarragon, basil, thyme, etc.)
Salt and freshly ground pepper
2 eggs, slightly beaten
2 baguettes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, mash the goat cheese, ricotta, and herbs together. Season, to taste, with salt and pepper. Fold in the beaten egg.
  • Cut the baguette into thin slices on the bias. Arrange baguette slices on a baking sheet and toast lightly. Remove from heat and change oven setting to broil.
  • Spread cheese mixture on baguette slices, return to baking sheet, and broil lightly. Serve warm.

Broiled Goat Cheese Toasts With Marinated Greens image

This is a simple appetizer that's a hit every time I serve it, due in large part to the vast appeal of warm cheesy things.

For the marinated greens:
2 bunches (about 1 ½ pounds) leafy greens: Swiss chard, kale, mature spinach, beet greens, or a combination of any of the above, washed
2 tablespoons olive oil, divided
1 clove garlic, minced
Pinch red pepper flakes, or to taste
Salt
Fresh lemon juice
For the toasts:
12 slices of baguette about ¾ inch thick, or other bread cut into 10 bite-size pieces
Olive oil
½ cup soft goat cheese
1 cup Marinated Greens, at room temperature
Zest of 1 lemon
Flaky salt
Freshly ground black pepper

Steps:

  • Marinated greens:
  • Trim off and discard the tough stems from the greens. Heat 1 tablespoon of the olive oil in a wide skillet or saucepan over medium-low heat. Add the garlic and red pepper flakes and stir for about 1 minute, until fragrant. Pile in the greens, in batches if necessary, and add a splash of water (you can also cover with a lid to compress them). Add a big pinch of salt and gently cook, stirring with tongs, until wilted and tender. Cooking times will vary depending on type of green, so watch and taste as you go. If cooking a combination of different greens, cook each type separately. Add a splash of water to the pan if it dries out.
  • Transfer to a colander to drain and cool until safe to handle. Gently squeeze out excess liquid using your hands or a spatula or wooden spoon, pressing against the side of the colander. Coarsely chop the greens, then transfer them to a medium bowl and toss with the remaining 1 tablespoon olive oil and a few drops of lemon juice. Taste and add more lemon juice, red pepper flakes, or salt as needed. Store in an airtight container in the refrigerator; allow to come to room temperature before serving.
  • Toasts:
  • Preheat the broiler to high.
  • Arrange the toasts on a baking sheet and brush both sides with olive oil. Transfer to the broiler and broil for 2 to 4 minutes, until lightly golden on the top. Flip the toasts. Smear each slice with about 2 teaspoons goat cheese, drizzle with a bit of olive oil, and return to the broiler. Broil, watching carefully, for just a minute or two, to heat through and lightly brown. Transfer to a serving platter and divide the greens on top. Zest the lemon over everything, sprinkle with a bit of flaky salt and black pepper, add a drizzle of olive oil, and serve while the toasts are still warm.

fresh goat cheese, 3 oz (90 g), at room temperature
walnuts, 1/4 cup (1 oz/30 g) coarsely chopped
roasted walnut oil, 1 tsp
sea salt and freshly cracked black pepper
honey, for drizzling
fresh thyme leaves, 1/2 tsp

Steps:

  • Preheat the oven or toaster oven to 375°F (190°C). Arrange the toasts on a small rimmed baking sheet. Spread the toast slices evenly with the goat 1 cheese, and sprinkle with the walnuts, dividing them evenly. Drizzle 1/4 tsp of the walnut oil over each toast. Bake until the walnuts are toasted and the cheese is warm, about 5 minutes.
  • Transfer the toasts to plates and season with salt and pepper. Drizzle each toast with honey, then sprinkle with the thyme leaves and serve.

Steps:

  • Heat the oil in a pan on a low heat, then add the onions. Continue to cook on a low heat for 5 minutes or so, until the onions are starting to soften. Add the vinegar and sugar and cook (still on a low heat) for another 5-10 minutes, stirring occasionally.
  • Meanwhile, toast your bread in a toaster or under the grill, then drizzle with olive oil.
  • When the onions are done, spread evenly on the toast then crumble the cheese over each slice and serve with side salad.

4 slices country bread
10 lettuce leaves
6 tablespoons olive oil
1 teaspoon Dijon mustard
1 tablespoon vinegar

4 walnut halves

Steps:

  • Wash and dry the lettuce ; on chopping board, crumple a few leaves together in your hand and cut thin strips with a knife on a chopping board. Share them among the individual dishes.
  • Put one goat cheese on each bread slice and pre-heat oven on grill position.
  • Make your vinaigrette : In a bowl mix salt, pepper, and mustard ; solwly add the vinegar and then the oil, always mixing.
  • When ready to serve, put the toast and cheese under oven grill for about 5 to 10 minutes ; the cheese should begin to get warm and slightly melt ; in the meantime, pour a bit of vinaigrette on the lettuce strips of each dish.
  • When cheese is ready, put the toast on lettuce and serve right away.
  • Decorate with a walnut half or parsley.
  • I used a roll of Goat cheese and cut thick slices.
