GLUTEN-FREE PANCAKE AND WAFFLE MIX RECIPE BY TASTY
Here's what you need: gluten-free oats, milk, large egg, vanilla extract, baking powder, salt, maple syrup, assorted fruit, powdered sugar

Steps:
- Place the oats in the bowl of a food processor or blender and pulse until finely ground. Set aside.
- In a large bowl, combine the milk, egg, vanilla, ground oats, baking powder, and a pinch of salt and whisk until well incorporated and smooth.
- For pancakes, pour ½ cup of batter in a nonstick skillet over medium heat. Fry until the sides begin to set, then flip the pancake and fry the other side for about 2 minutes. Remove from heat.
- For waffles, pour 1 heaping cup of batter into a greased waffle iron set to high heat. Close the waffle press and cook until set, about 4 minutes. Carefully remove from waffle iron.
- Top the pancakes or waffles with maple syrup and fruit as desired.

Steps:
- Combine the dry ingredients.
- Mix together the 1 1/2 cups milk and eggs; stir in the butter.
- Stir the wet ingredients into the dry ingredients.
- Add additional milk until you get a batter a little thicker than pancake batter.
- Spread a ladleful or so of batter onto the waffle iron and bake until the waffle is done, usually 3 to 5 minutes, depending on your iron.
- (Mine whistles.) Serve immediately.
- Freeze leftovers in a plastic baggie with a sheet of wax paper in between each waffle.
- NOTE: My absolute favorite flour for waffles is"All-Purpose Celiac Flour" by Kinnikinnick (They are based in Canada. www. kinnikinnick. com) If ordering online isn't an option for you, try this flour blend: 2 cups White Rice Flour, 1 cup Potato Starch, 1/2 cup Tapioca Starch, 1-3/4 tsp Guar Gum.
- Use 2 cups for waffles.
- (I haven't tried this substitution, but based on the ingredient list on the package and with help from Bette Hagman's books, it sounds like a good bet.).
BEST EVER PANCAKE/WAFFLE BATTER
This recipe is from my aunt and it is truly the best pancake/waffle batter that I've had. If using salted butter, cut the salt. For other variations, add grated apple with cinnamon, a mashed banana, blueberries, pecans or walnuts, chocolate chips, pumpkin, or whatever your imagination comes up with. May use flavored yogurt in place of plain yogurt.

- In a medium bowl, combine all the liquid ingredients, using only 1 1/4 cups of milk at first. Gradually whisk in the packet of gfJules™ Pancake Mix OR the dry ingredients listed, until well integrated and only a few lumps remain. Add more milk as needed to thin the batter to the point that it is easily spooned onto the skillet, but is not watery at all. You should be able to put a dollop of batter onto the pan and spread the batter out with the back of a spoon to form a circle without the batter being too thick or too runny.
- To make pancakes: If not using a non-stick pan, pour enough oil into a large skillet or griddle to have a thin covering over the entire surface; with a non-stick pan, no oil is necessary. Heat skillet or griddle to medium.
- Spoon batter onto skillet and spread the batter with the back of a large spoon so that it's not thick -- it will puff up when baking. Leave space between each pancake so that you can use a spatula to flip each one easily. If desired, drop berries, chocolate chips, etc. onto the uncooked side of the pancakes. (Or make into fun shapes like hearts, flowers or your kids’ names)
- If you’d like colorful pancake batter, divide batter between bowls and add food coloring to each one. For best results, use a Pancake Pen, or try using cleaned honey, jam or ketchup squeeze bottles.
