PORTOBELLO MUSHROOM PIZZA CUPS

Portobello Mushroom Pizza Cups image

Making stuffed portobellos for guys watching a hockey game was quite an endeavor. I made two dozen for six guys, and as the game got more exciting, they screamed for more. Scraping the gills from the underside of the mushroom is easy if you use a small teaspoon, gently, so as not to crack the cap. The amount of cheese, pepperoni and spices is entirely up to whatever satisfies your team. -Lorraine Caland, Shuniah, Ontario

Provided by Greg R,

Categories     World Cuisine Recipes     European     Italian

Time 1h20m

Yield 4

Number Of Ingredients 13

4 mild Italian sausage links
1 (12 ounce) package penne pasta
4 tomatoes, diced
½ pound baby portobello (cremini) mushrooms, chopped
½ cup chopped red onion
3 cloves garlic, chopped
1 ½ cups red wine
1 tablespoon crushed dried rosemary
1 tablespoon crushed dried oregano
1 tablespoon crushed dried thyme
1 tablespoon kosher salt
1 tablespoon ground black pepper
½ cup shredded mozzarella cheese

  • Fill a pot with water and bring to a boil; cook the sausages in the boiling water until no longer pink in the center, about 40 minutes. Cut the sausages into bite-sized pieces.
  • Fill a large pot with lightly-salted water and bring to a boil. Stir the penne into the water and return to a boil. Cook, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well.
  • Combine the tomatoes, mushrooms, onion, garlic, wine, rosemary, oregano, thyme, salt, and pepper in a large skillet over medium heat; cook and stir until the liquid is reduced to about half its original volume, about 10 minutes. Add the sausage and the drained pasta to the mixture and continue cooking until the liquid is reduced to about one-quarter its original volume, 10 to 15 minutes more. Sprinkle the mozzarella cheese over the dish to serve.

  • Add the butter to a large pot and turn the heat to low. Once the butter has melted completely, use a spoon to remove the milk solids (white foam) from the surface and discard. Then turn the heat to medium-high and add the onions. Stirring often, sauté until they're a deep golden color and very soft. This should take about 25 minutes. About halfway through the cooking time, reduce the heat to medium-low. Season to taste with salt and pepper. (Here's How to Season to Taste.) Remove the onions from the pot and add them to a small bowl. What was 3 cups will now be about 1/2 cup. Set aside.
  • Squeeze the sausage out of its casing into the same pot, break it apart and sauté until it's cooked through. Set aside.
  • Use a damp paper towel or kitchen towel to wipe the mushroom caps clean. Remove the stems from the mushrooms by wiggling them gently. Then use a small spoon to scrape the gills off the underside of the mushrooms.
