- Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened., Transfer to two greased 8x4-in. loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pans to wire racks.

FLOURLESS OATMEAL BANANA BREAD

- Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
- Place the rolled oats in a blender and blend on medium speed until a flour forms (this only takes about 20 to 30 seconds. Remember, it is fine if the flour is somewhat gritty). Transfer the oat flour to a mixing bowl.
- Add the coconut sugar, baking soda, sea salt and cinnamon and stir together until combined.
- Mash the bananas in a separate mixing bowl then whisk in the eggs and vanilla extract.
- Stir the dry ingredients into the bowl with the wet ingredients. Add in the lime juice and stir to incorporate.
- Transfer the batter to the parchment-lined loaf pan and smooth into an even layer. If desired, sprinkle some whole quick oats on top for looksies.
- Bake for 40 to 45 minutes, until banana bread has risen substantially and the top appears firm.
- Remove from the oven and allow bread to cool at least 30 minutes. Tug on the edges of the parchment paper to lift the loaf out of the pan and place it on a cutting board. Cut thick slices and enjoy!

GLUTEN FREE OATMEAL BREAD
This is a very simple yeast bread recipe from Allergy Cooking With Ease, with no other flours than oat flour (grind oats in your blender). It turned out a little like a sponge bread in texture, but had a nice flavor and did not crumble when slicing. Has a bit of a sweet flavor (I used honey). I have tried a few gluten free breads, and this one turned out great on the first try. Didn't rise as much as I liked, but I'm wondering if that's because I used regular yeast, not quick-rise.

Steps:
- Mix together the warm water, sugar or honey and yeast and let themixture stand for abotu 10 minutes or until foamy.
- Stir together the dry ingredients in a large stand mixer bowl; Add the yeast mixture and oil and beat the dough for 3 minutes at medium speed.
- Scrape the dough from the beaters and sides into the bottom of the bowl and cover the bowl with a towel.
- Let rise in a warm place for 1 to 1 1/2 hours.
- Beat the dough again for 3 minutes.
- Oil an 8x4-inch loaf pan and coat the inside with oatmeal. Put dough in the pan and allow to rise in a warm place for about 20 minutes, or unitl it barely doubles.
- Preheat oven to 350° F and bake the loaf for about 75 minutes, loosely covering with foil after the first 15 minutes to prevent excessive browning.

This banana bread is extremely close to the original. Everyone gobbles it up, despite the pecans, which I add for a little extra nutrition.

- Preheat oven to 350 degrees.
- Spray or prep 1-2 loaf pans. (My family prefers thin bread, so I make this into 2 loaves).
- In small bowl, combine oats & applesauce, set aside.
- In large bowl, mix butter & sugar together. Add eggs, bananas, vanilla, cinnamon & nutmeg.
- In small bowl, mix dry ingredients (flour, baking powder, xanthan gum).
- Add oats & applesauce to wet ingredients, combine well.
- Add dry ingredients to wet ingredients, stir just until combined.
- Fold in pecans, if using.
- Pour batter into prepared pan(s).

- Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
- Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
- While oats are cooking, heat a skillet over medium and add coconut oil and maple syrup. Add remaining banana slices and walnuts to the skillet. Cook banana slices 2 minutes on each side or until they start to get a golden crust. Heat walnuts until just toasted. Remove from heat.
- Place cooked oats into a bowl and top with caramelized bananas and walnuts. For sweeter oats, drizzle with extra maple syrup.

- Preheat the oven to 350 degrees. Spray a loaf pan with non-stick baking spray or line with parchment paper and set aside.
- In the bowl of your stand mixer, beat the brown sugar and butter until combined. Add the eggs and vanilla. Next, add the mashed bananas. Mix until well combined.
- In a medium bowl whisk together the oats, flour, baking powder, and baking soda. Alternately add the dry ingredients and the milk to the mixer. Add chocolate chips and/or walnuts, if using.
- Spoon the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted in the center of the bread comes out clean. Cool the bread in the pan on a cooling rack for 15 minutes, then remove it from the pan and allow to finish cooling on the rack before serving.
