GINGER AND LEMON CHICKEN MARINADE
With just five simple ingredients, the ginger and lemon chicken marinade infuses chicken with citrussy lemon flavor and a bit of a bite from the ginger. Assemble ahead and freeze your chicken right in the marinade for maximum flavor!

- Combine olive oil lemon juice, ginger, salt and red pepper flakes in a plastic or reusable silicone freezer bag. Add chicken breasts and turn to coat in marinade.
- Marinate the chicken in the fridge for 2-24 hours.
- Heat oven to 425°F. Bake chicken in a shallow baking dish for 10 minutes, flip over, then bake for another 12-17 minutes, or until internal temperature reaches 165°F.
- Allow chicken to rest at room temperature for 5-10 minutes before slicing.

LEMON MARINADE (CHICKEN)
Another good recipe from local news chef, Chef Walter. A nice change from the usual lemon pepper marinade on store shelves. This recipe is enough for 2 pounds of boneless skinless chicken breasts. Prep time is marinade time. Note: feel free to cut back or eliminate the salt in this marinade. Low-sodium soy sauce also works well for this. (Thanks for the tip, Nif!)

- Mix everything together well. Pour into a shallow dish or large zip top bag.
- Add chicken. If using a dish, cover. Zip the bag if using a bag. Stash in the refrigerator for at least 2 - 3 hours, turning occasionally.
- Drain off the marinade and grill, or bake at 325 F for about an hour in a greased baking dish.

- In a large baking dish, combine the onion, garlic, chile, salt, ginger, and black pepper. Stir in the lemon juice, 1 c water, and 1 tbsp oil. Coat the chicken pieces in marinade and refrigerate at least 4 hours. Turn pieces every half hour or so.
- Remove chicken from marinade, and reserve the marinade. Pat the pieces dry. In a skillet, heat the remaining 4 tbsp oil over medium-high heat. Brown the chicken, a few pieces a t a time, turning frequently to brown evenly. Pour off all but 2 tbsp oil from the skillet and remove it from heat.
- Using the back of a spoon, press the marinade through a fine sieve set over a bowl. Reheat the oil in the skillet over medium heat. Add the solids fron the sieve and stir constantly until the onion is transparent.
- Return chicken to skillet and add 1/2 c strained marinade and the remaining 1/4 c water. Bring mixture to a boil. Partly cover pand and reduce heat. Simmer 25 minutes, or until chicken is tender.

GINGER AND LEMON MARINADE
This is really easy with my microplane--I just grate the ginger and garlic into a measuring cup, add the rest of the ingredients and nuke it in the microwave til it's all melted. This is good with any kind of fish, chicken or pork tenderloin, too.

Steps:
- Place chicken between two sheets of plastic wrap and pound with mallet or rolling pin to 1/4 inch thickness; combine the next 3 ingredients on a plate; press both sides of chicken breasts into flour mixture until well coated.
- Heat olive oil in a large frypan on medium high; add chicken, cook for 2 to 4 minutes per side until no longer pink inside; transfer to plate, cover and keep warm.
- Reduce heat to medium, add next 7 ingredients to same frypan; heat and stir scraping any brown bits from bottom until simmering.
- Stir second amount of broth into cornstarch in a small bowl; add to lemon juice mixture; heat and stir until simmering and thickened; reduce heat to medium low, return chicken to frypan; turn to coat both sides, cook for 1 to 2 minutes until heated through.
- Garnish with parsley and serve.
AMAZING LEMON GINGER CHICKEN
This chicken is marinated in Ginger Ale and other spices and ingredients for 3 hours before cooking. The ginger ale makes it SUPER tender and sweet. Great served with rice and vegetables. Or potatoes.

- In a large zipper seal bag, mix all of the dry ingredients.
- Add the Oil and Ginger into the bag.
- Shake Well, making sure all ingredients are mixed together well.
- Add chicken breast into bag, seal top and shake well. Covering each chicken breast in mixture.
- Release all air out of the bag. Reseal and place in the fridge for 3 hours.
- Put oil in a large frying pan, on medium-low heat.
- Take chicken out of fridge pour mixture into a cup. Leaving only chicken and spices in bag.
- Add chicken to frying pan, brown on both sides. About 10 minutes each side.
- Turn heat down to low. Add the ginger ale mixture from the cup into frying pan. Put a lid on the pan and let simmer for 10 minutes.
- Serve.
