This is a wonderful alternative to fried fish, coating the fish with butter and baking at high heat is the secret to the success of this recipe --- use meaty fillets of fish for this if possible --- FOR LOW-FAT OPTION; whisk together 2 egg whites with 2 tablespoon cold water, dip the fish into the mixture, allow excess to drip off, use in place of melted butter.

2 -4 tablespoons grated parmesan cheese
1 -2 tablespoon paprika
2 teaspoons dried basil
1/2 teaspoon garlic powder (or more) (optional)
3/4 teaspoon salt (or to taste, I use seasoned salt for this!)
1/2 teaspoon fresh ground black pepper (or to taste) or 1/2 teaspoon lemon pepper (or to taste)
1 -2 lb fish fillet, of your choice
1/4 cup butter, melted (or use a healthy butter alternative)

Steps:

  • Set oven to 500° F (bottom oven rack).
  • Grease a shallow baking dish (enough to hold all fish without overcrowding).
  • In a shallow bowl, combine first 7 ingredients.
  • Brush fish fillets with melted butter, then dip into crumb mixture.
  • Place in a greased baking pan.
  • Bake uncovered at 500°F for 10 minutes, or until fish flakes easily with a fork.

We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

Our redfish is baked with lemon and seasonings. Redfish was made very popular by Chef Paul Prudhomme and his blackening method of cooking it.

1 1/2 pounds redfish fillets (about 1/2-inch thickness, thawed if frozen)
1/4 cup butter (melted, plus more for the baking dish)
2 tablespoons lemon juice (about 1 small to medium lemon)
2 teaspoons onion ( finely chopped )
1 teaspoon sweet paprika
1 teaspoon kosher salt
1/8 teaspoon black pepper (freshly ground)
Optional: lemon wedges
Optional: remoulade sauce

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F/180 C/Gas Mark 4. Lightly butter a shallow baking dish that is large enough to hold the fish fillets in a single layer.
  • Pat the fish fillets with paper towels to dry.
  • Arrange the redfish fillets in the prepared baking dish skin-side down (if there is skin on the fillets).
  • In a cup or small bowl, combine the 1/4 cup of melted butter with the lemon juice, onion, paprika, salt, and pepper.
  • Pour the butter and seasoning mixture over the redfish fillets.
  • Bake in the preheated oven for about 20 minutes, or until it reaches an internal temperature of at least 145 F/63 C. The fish should flake easily with a fork when done.
  • Serve the redfish with lemon wedges and rémoulade sauce, if desired.

1 1/2 pounds fish fillets (haddock, cod, catfish, pollock, or similar mild white fish)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
1 cup panko breadcrumbs (unseasoned)
2 tablespoons finely chopped parsley
1/4 cup all-purpose flour
2 large eggs (or 1/2 cup egg substitute )
1 teaspoon Cajun seasoning (or Creole)
2 tablespoons mayonnaise
1 lemon (quartered, for serving)
Optional: tartar sauce or rémoulade sauce (for serving)

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • Line a rimmed baking sheet with aluminum foil or parchment paper and then spray it with nonstick cooking spray.
  • Cut the fish fillets into 6-ounce portions.
  • Sprinkle both sides of the fish pieces with salt and freshly ground black pepper.
  • In a wide bowl, combine the panko breadcrumbs and parsley.
  • Put the flour in another wide, shallow bowl.
  • In a third bowl, whisk the eggs or egg substitute with the Cajun seasoning and mayonnaise.
  • Dip the fish fillets in the plain flour, coating each piece thoroughly.
  • Dip the flour-coated fillets in the egg mixture and then coat them with the panko crumb mixture, pressing lightly to help the crumbs adhere to the fish. Repeat with the remaining fish.
  • Arrange the crumb-coated fish on the prepared baking sheet.
  • Bake for about 16 to 20 minutes, or until the fish flakes easily with a fork. The time in the oven depends on thickness, so adjust for very thin or very thick fish fillets. Serve the baked fish fillets with the lemon wedges and tartar sauce or rémoulade sauce.

1/4 cup milk
1 teaspoon salt
1/2 cup fine dry breadcrumbs
1/2 teaspoon paprika
1/4 cup grated Parmesan cheese
2 pounds fish fillets (tilapia, haddock, or cod; fresh or thawed if previously frozen)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. Blend together the milk and salt in a shallow bowl.
  • Combine the breadcrumbs, paprika, and Parmesan cheese in another bowl.
  • Dip the fish fillets into the milk mixture, then press them down into the crumb mixture until they're well coated on all sides. Reserve the coated fish. If using thawed frozen fillets, pat dry very well with paper towels before dipping in the milk mixture and coating with the cheese crumbs
  • Grease an 11.5 x 7.5 x 2-inch baking dish with the 1/2 tablespoon softened butter, being sure to reach all sides and the bottom of the dish.
  • Arrange the fish in the prepared baking dish. Ideally, the fillets shouldn't overlap in the dish. Drizzle the melted butter over the fillets.
  • Bake for 25 to 30 minutes, depending on the thickness of the fillets. Check for doneness; the fish should flake easily with a fork when ready. Serve the fish right away with your favorite sides. Enjoy!

1 pound frozen fish fillets (partially thawed)
1/4 cup chopped onion
1 clove garlic (minced)
2 tablespoons butter
1/2 teaspoon dried tarragon (crushed)
1/4 teaspoon dried thyme (crushed)
1/4 cup corn flakes (crushed)
1 tablespoon melted butter
1 teaspoon chopped fresh parsley
Kosher salt and freshly ground black pepper

Steps:

  • Heat the oven to 450 F. Grease a shallow baking dish big enough to place the fish in a single layer.
  • Place the fish fillets in the prepared baking dish.
  • In a skillet or saute pan over medium-low heat, cook the onion and garlic in 2 tablespoons of butter until tender. Stir in the thyme and tarragon and cook for 1 minute longer.
  • Spread the herb and butter mixture over the fish fillets.
  • In a small bowl, combine the crushed corn flakes with the melted butter and parsley.
  • Top with the seasoned cornflake crumbs and sprinkle with kosher salt and freshly ground black pepper.
  • Bake in the preheated oven for 12 to 15 minutes, or until fish flakes easily with a fork. Very thin fillets might take less time to check the center of the fish with a fork-flakes should separate freely.

1 tablespoon all-purpose flour
1 teaspoon brown sugar
1/2 teaspoon dried marjoram leaves

1/4 teaspoon dried thyme leaves
1/8 teaspoon ground black pepper
1 pint home-canned or one 15-ounce can tomatoes
1 pound cod fillets

Steps:

  • Preheat oven to 400 degrees. Generously grease a shallow 1-quart baking dish. Melt shortening in heavy medium skillet over medium heat. Add onion and pepper; saute until golden. Stir in flour, brown sugar, marjoram, salt, thyme, and pepper until smooth. Very gradually stir in tomatoes. Bring to a boil, stirring constantly until sauce has thickened. Arrange fish in baking dish; top with sauce. Place on rimmed baking sheet and bake 12 to 15 minutes or until fish flakes easily.
