GLUTEN FREE FRENCH FRIED ONIONS
You're in for a treat with these Crispy Fried Onions!

Steps:
- Slice the onion in half and then make "ribbons" about 1/8 inch thick. Separate all the onions and add them to a bowl.
- Pour milk over the onions and use a spoon to push down the onions so they're mostly covered by the milk. Let sit for 10-15 minutes.
- Meanwhile, mix the dry ingredients in a lidded container. Set aside.
- Drain the onions, shaking the excess milk off. Place onions in the flour mixture. Put the lid on and shake until the onions are coated.
- Preheat air fryer at 400 degrees F for 5 minutes.
- Using clean hands, remove the onion from the flour mixture and set aside. In another bowl, add the olive oil. Add the onions to the olive oil and stir or shake to coat.
- Lightly brush the inside of the air fryer with olive oil and add the onions. Cook for 8 minutes, and then shake the basket to distribute the onions.
- Cook for another 5 minutes. Pro tip: spritz with olive oil on top to keep the onions extra crispy!
- Continue to cook in 3-minute increments until it has reached your desired level of crispiness (took 20 minutes total for me).
- Preheat oven to 425 degrees.
- Follow steps 1-4 and 6 above.
- For oven-baking, you'll need to use 1/4 cup olive oil.
- Bake on rimmed baking sheet for 10 minutes. Stir, and bake an additional 10-15 minutes.

- Heat oven to 350°F. Place onions and milk in medium bowl; let stand. In deep fryer or 4-quart Dutch oven, heat oil (2 inches) to 375°F.
- In resealable plastic food storage bag, mix Bisquick, salt and pepper until well mixed. Drain onions. Place onions in bag; shake to coat. Remove onions from bag shaking off excess. Gently place half of onions in oil; fry 2 to 4 minutes or until golden brown. Drain on paper towels. Repeat with remaining onions. Let onions stand while preparing bean mixture.
- In ungreased 3-quart casserole, mix soup, soy sauce, pepper, cooked green beans and 1 1/2 cups of the onions. Bake 25 to 30 minutes or until hot and bubbly, adding remaining onions during last 5 minutes of baking.

GLUTEN-FREE ONION TOPPING
This is a tasty, gluten-free onion topping for casseroles or even to top a hamburger. They are 'oven-fried' and are similar to the popular fried-onions-in-a-can that are often used in the traditional green-bean casserole.

- Preheat oven to 425 degrees F (220 degrees C). Oil a baking sheet with 1 tablespoon olive oil.
- Mix flour, cornmeal, and salt together in a bowl. Toss onion in flour mixture until coated. Spread onion mixture onto prepared baking sheet. Drizzle remaining oil over onion.
- Bake in the preheated oven, tossing onions occasionally, until crisped and golden, about 30 minutes.

- Soak in milk for 8 minutes.
- Drain.
- Heat oil to 375 degrees over medium heat for 10 minutes.
- Toss onions with flour and salt and separate on parchment paper.
- Let sit while oil heats.
- Fry by spoonful until golden brown.
- Drain.
- When cool, transfer to a super-airtight container.

If you are gluten free, you can't eat those french fried onions out of a can, the ones that make green bean casserole so indulgent and delicious. This simple recipe, adapted from Alton Brown's recipe (which contains gluten), will make you forget all about that can full of junky processed gluten.

- Preheat oven to 475. Slice onions in half and then into 1/8 inch slices and toss in a bowl with the flours and salt. Generously grease a baking sheet with about half the oil and evenly spread the onions in the pan. Drizzle the rest of the oil evenly on top of the onions. Place in middle rack and bake until golden brown, about 30 minutes. Toss the onions 2 to 3 times during cooking. Keep a good eye on them towards the end, they can go from a little brown to burnt very fast, and you want to pull them out at the right time!
- Use just like the canned onions- Add half to your green bean casserole and put the other half on top, or according to your casserole recipe.
